1/2 tbsp garlic parsley salt
1 cup parmesan (grated)
16 oz broccoli
1 cup bacon (crispy cut into small pieces)

Steps:

  • In a deep skillet, bring heavy cream, parmesan, and garlic salt to a simmer. Continously stir to combine and create an even smooth sauce mixture.
  • Add in broccoli and stir to cover it with the alfredo sauce. Let it cook for about 3 minutes.
  • Sprinkle it with crispy bacon pieces. Serve while the sauce it still warm. Enjoy!

2 boneless, skinless chicken breasts, diced
½ teaspoon salt
½ teaspoon pepper
2 cloves garlic, chopped
2 cups broccoli floret
2 cups milk
1 cup shredded parmesan cheese
¼ cup fresh parsley, chopped
4 strips bacon, cooked, crumbled
½ lb spaghetti, cooked

Steps:

  • Heat oil in a pot over medium-high heat.
  • Cook the chicken with the salt and pepper.
  • Add the garlic and broccoli, cooking for 1-2 minutes.
  • Add the milk, parmesan, parsley, and bacon, bringing to a boil.
  • Add the spaghetti, and toss until evenly coated and sauce sticks to the noodles.

2 ½ cups broccoli florets
3 tablespoons water
3 tablespoons ranch dressing mix, divided
2 pounds skinless, boneless chicken breasts, cut into bite-sized pieces
½ teaspoon ground black pepper
1 (48 ounce) container chicken broth
1 (16 ounce) package small shell pasta
1 tablespoon unsalted butter
1 tablespoon extra virgin olive oil
2 ¾ cups milk
1 (1.6 oz) package dry Alfredo sauce mix (such as Knorr®)
½ cup sour cream
salt and ground black pepper to taste
1 cup grated Parmesan cheese
4 slices cooked and crumbled bacon

Steps:

  • Place broccoli and water in a microwave-safe bowl. Cover and microwave on high until steamed and tender, 3 to 4 minutes. Remove and drain excess liquid; set aside.
  • While broccoli is steaming, place 1 tablespoon ranch dressing mix in a large resealable plastic bag. Add chicken and pepper, seal the bag, and massage to coat chicken with seasonings.
  • Pour chicken broth into a large pot and bring a boil over medium-high heat. Add shells and return to a boil. Reduce heat to medium-low and cook, stirring occasionally until pasta is nearly done, about 10 minutes. Drain pasta, reserving 1/2 cup of cooking broth.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.
  • Heat butter and olive oil in a large nonstick skillet over medium-high heat. Add chicken to the hot skillet, working in batches if necessary, and cook until browned on all sides, about 7 minutes. Remove chicken to a plate.
  • Add milk, Alfredo sauce mix, and remaining 2 tablespoons ranch dressing mix to the hot skillet; bring to a boil. Turn off the heat, add chicken and any accumulated juices, pasta, broccoli, sour cream, reserved 1/2 cup pasta cooking broth, salt, and pepper. Transfer mixture to the prepared casserole dish and sprinkle with Parmesan cheese and bacon.
  • Bake in the preheated oven until cheese is melted and sauce is bubbly, about 20 minutes. Serve warm.

I love making food from things that come in cans, jars, or freezer packets, because... well, I'm lazy. This recipe is great because it calls for all of the above, requiring absolutely nothing fresh. (Note: It's an altered version of a recipe from a book called Betty Crocker's 4 Ingredient Dinners.)

12 ounces egg noodles
2 (10 ounce) packages frozen chopped broccoli
2 cups readymade alfredo sauce
2 (6 ounce) cans boneless skinless pink salmon
seasoning, to taste

Steps:

  • In a large stockpot, cook noodles as directed on package.
  • While noodles are cooking, flake and drain salmon.
  • Yes, this is necessary!
  • I was new to canned salmon, and so I didn't believe the instructions, but I soon discovered that salmon truly does come in huge, icky lumps.
  • When noodles are 2 to 4 minutes away from being done, add the broccoli to the water.
  • This will probably stop the water from boiling, so those 2 to 4 minutes might end up closer to 8 to 10 minutes instead!
  • This happened to me, but, amazingly, even with 8 extra minutes of cooking time the broccoli did not become mush.
  • Drain pasta and broccoli, reserving about a cup of the cooking water.
  • Return noodles and broccoli to pot.
  • Add Alfredo and seasonings to taste (I recommend lots of black pepper and--even better--Trader Joe's Sun-Dried Tomato Seasoning Splash, which is sold, not surprisingly, at Trader Joe's-- about 8 teaspoons of it).
  • If the sauce is too thick, and it likely will be, dribble in the reserved cooking water slowly until the consistency is right.
  • And you're done.
  • Woo hoo.
  • You just opened some cans, and a jar, and a box, and a package, and now you have yummy pasta.
  • Enjoy.

2 -3 cups broccoli, chopped
4 tablespoons butter

Steps:

  • Cook pasta according to package directions and drain.
  • Meanwhile, steam broccoli until tender, but still crisp, about 5 minutes, and drain.
  • In a large saucepan, melt butter over medium heat.
  • Whisk in flour until smooth.
  • Gradually whisk in milk.
  • Bring to a boil, and cook and stir for 2 minutes or until thickened.
  • Season with salt and pepper.
  • Remove from heat and stir in the cheese and broccoli.
  • Toss with the pasta to coat.

This is a go-to dinner in my house. You can have the entire family eating within 30 minutes, and it's fun to get the kids involved in the cooking. You can switch out the pasta for another long cut like linguine, bucatini or angel hair. And you can sub cauliflower florets or baby carrots for broccoli; just be sure to adjust the steaming time.

1 pound fettuccine
4 cups broccoli florets
2 tablespoons unsalted butter
1/2 clove garlic
2 cups heavy cream
2 cups milk
Kosher salt and freshly ground black pepper
1/2 cup grated Romano
1/2 cup grated Parmesan, plus more for garnish
Chopped Italian parsley, for garnish

Steps:

  • Bring a large pot of salted water to a boil. Add fettuccine and cook according to package directions until al dente, 8 to 11 minutes. While the pasta cooks, place a steamer basket over the pot and place the broccoli in the basket. Cover and steam until tender, 3 to 4 minutes. Set aside.
  • Meanwhile, in a large saucepan or skillet, melt the butter over medium heat. Grate the half clove of garlic with a rasp grater into the butter and cook, stirring, about 1 minute. Stir in the cream, milk, and salt and pepper to taste. Bring to a simmer. Stir in the Romano and Parmesan, stirring until melted; the sauce will thicken. Turn off the heat and set aside until the pasta is done.
  • Drain the pasta, reserving about 1/2 cup of cooking liquid. Add the drained pasta to the cream sauce and stir until well coated. If the sauce seems too thick, stir in some of the reserved pasta cooking liquid to thin it until it coats the pasta well. Fold in the broccoli. Garnish with parsley and more Parmesan.
