BAKED BEANS WITH HOT DOGS RECIPE

23 oz or turkey frankfurters, cut into ½-inch discs beef frankfurters
16 oz (2 cans) baked beans
8½ oz corn muffin mix
3 oz chopped red onions
1 cup tomato sauce
1 cup grated cheddar cheese
¾ cup milk
2 tbsp thinly sliced green onions
2 tbsp melted unsalted butter
1½ tbsp Worcestershire sauce
1½ tbsp olive oil
1 tbsp molasses
½ tbsp chili powder
1 pc egg
to taste salt and ground black pepper
chopped parsley

Steps:

  • Heat up a skillet with oil over medium heat. Add the frankfurters and saute until fully caramelized roughly 8 to 10 minutes.
  • Add onions and saute until translucent.
  • Add baked beans, tomato sauce, Worcestershire sauce, and molasses.
  • Bring the stew to a simmer, season with salt and pepper, and continue simmering until it has reduced by at least half and thickened for roughly 15 minutes.
  • While waiting, prepare your topping. In a mixing bowl, add the corn muffin mix, cheese, milk, green onions, melted butter, chili powder, egg.
  • Whisk until a batter is formed and set aside.
  • Preheat also your oven to 360 degrees F.
  • Transfer into a baking casserole of your choice.
  • Pour the batter on top and spread to cover all the spaces.
  • Bake in the oven until the topping turns golden brown, roughly 15 minutes.
  • Garnish with parsley and serve immediately.

1 1/2 pounds lean ground beef
1 small onion, finely chopped
1 bell pepper, cored, seeded, and finely chopped
Two 16-ounce cans pork and beans
1/2 cup barbecue sauce
1/2 cup ketchup
2 tablespoons spicy brown mustard
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
4 tablespoons brown sugar
6 to 8 slices bacon, cut into pieces and cooked

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9- by 13- by 2-inch casserole dish with cooking spray.
  • In a large saucepan, brown the ground beef, onions and bell peppers. Add the pork and beans, barbecue sauce, ketchup, mustard, Worcestershire sauce, soy sauce and brown sugar to the mixture. Simmer for 5 minutes. Transfer the mixture to the prepared casserole dish. Sprinkle the bacon over the top of the casserole. Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and continue to bake for an additional 10 minutes. Let the casserole stand for 10 minutes before serving.

33 ounces canned pork & beans ((3) 11-ounce cans)
12 ounces hot dogs (*any variety, sliced into small slices. This was one package of Bar S brand.)
1 medium onion (sliced thinly)
2 tablespoons unsalted butter
1 teaspoon yellow mustard (prepared)
¼ teaspoon black pepper (to taste)
1 teaspoon celery salt
¼ cup light brown sugar

Steps:

  • On a cutting board, slice onions thinly; set aside. Slice hot dogs into bite-sized pieces.
  • Over medium heat, add butter to a large skillet and sauté onions and hot dogs for 3 minutes. Add in the beans, mustard, spices, and sugar; simmer for 2 minutes.
  • Transfer beans and hot dogs to a casserole dish and bake for 40 minutes stirring occasionally.

Now that I am vegetarian, I kick back to my childhood days with this simple soy hot dog and baked beans recipe. The left overs hold well and are great heated up for lunch.

3 -4 soy hot dogs (sliced roughly 1/8 inch pieces, I use LightLife Smart Dogs)
1/2 large onion (or whole small onion)
1/2-1 tablespoon Tabasco sauce
1 tablespoon olive oil
1 (15 ounce) can vegetarian baked beans
salt
pepper

Steps:

  • Heat olive oil in a large pan (preferably with a lid). Wait for the oil to become smokey and saute the hot dogs for 3-5 minutes, allowing all sides to brown and crisp up. Remove from pan.
  • Add a little more oil and diced onion to pan to saute for 5-7 minutes.
  • Add soy hot dogs, Tabasco sauce, salt and pepper to taste and cook for 1-2 more minutes.
  • Add the baked beans, bring to a slight boil, and simmer covered for 5-10 minutes.

1 cup dried soybeans
4 cups water (or to cover)
1/2 medium yellow onion, sliced into half moons
1/4 cup light brown sugar, firmly packed
1/4 cup molasses
1 teaspoon salt
1/2 teaspoon dry mustard
2 tablespoons toasted sesame oil or 2 tablespoons black sesame oil

Steps:

  • Rinse beans in colander under cold water; pick over for damaged beans and small stones. Transfer to the slow cooker. Cover with cold water by 2 inches, soak overnight, and drain.
  • Cover with the 4 cups water. Cover and cook on high until tender, about 4 hours. The beans need to be covered with liquid at all times to cook properly.
  • Drain the cooked beans and return to the slow cooker. Add the onion, brown sugar, molasses, salt, mustard, and sesame oil; stir to combine. Cover and cook on low for 5 to 6 hours, until soybeans are flavorful but still moist and the onion is soft. Stir gently so as not to mash the beans and serve hot.

1 large onion, chopped
2 tablespoons fresh minced garlic
2 (28 ounce) cans baked beans

1/2 cup canned diced tomato (do not use the juice)
1/2-3/4 cup brown sugar
