GREEN BEAN AND COCONUT STIR-FRY



Green Bean and Coconut Stir-Fry image

Toss green beans with a curried grated-coconut sauce.

Number Of Ingredients 8

1/4 cup unsweetened grated coconut
1 1/2 teaspoons curry powder
1/4 teaspoon cayenne
2 tablespoons vegetable oil
1 teaspoon cumin seeds
1 teaspoon sliced garlic
1 pound trimmed green beans, cut into 1/2-inch pieces
Kosher salt

Steps:

  • Stir together the coconut, curry powder, cayenne and 1/4 cup of water in a small bowl.
  • Heat the vegetable oil in a large skillet over medium-high heat. Fry the cumin and garlic until fragrant, 30 seconds. Add the beans and a splash of water. Cook, stirring, until crisp-tender, about 6 minutes. Season with 1/2 teaspoon salt. Add the coconut mixture and cook, stirring, for 2 minutes more.

I have just discovered Frozen Soya Beans and I think they are delicious. I made up this easy stir fry and it was very tasty. Vary your veggies to your own liing - I just cleaned out the fridge!You may substitute Teriaki or other sauce for the Ketjap Manis. Try Ketjap Benteng. Chili flakes may ve optional.

1 cup frozen soybeans
1 medium carrot, Grated
1/2 cup onion, Chopped
3 medium leeks, white part only, chopped
1 garlic clove, smashed
1/2 teaspoon chili flakes (optional)
3 tablespoons ketjap manis
1 teaspoon oil, wiped on a skillet

Steps:

  • Pour the Soya beans into boiling water & blanch for 1 minute (do not over cook).
  • Heat a lightly oiled skillet.
  • Add all the ingredients, including the blanched soya beans and stir fry for apprx 6-8 minutes.
  • Serve.

Steps:

  • Pressure cooks the finely chopped ginger and garlic,soya bean balls , chopped onion, turmeric powder and salt with minimum water
  • Once the soya bean get cooked keep the lid open and on the fire till it gets completely dry
  • Heat oil in a pan and fry the meat masala and coriander powder in low fire for 2 mins
  • Add pepper powder to the masala
  • Put this masala to the cooked and soya bean balls mix well
  • Heat oil in a deep fry pan
  • Add the soya bean balls, curry leaves and cook it in low fire for 10 mins
  • Lightly fry the coconut pieces and add it to the prepared
  • Garnish it with curry leave

Steps:

  • Heat the oil in a kadai. After the oil becomes hot, add the fenugreek seeds. Also add shallots and ginger, garlic to the oil and fry them.
  • add turmeric powder, chili powder
  • Add fish pieces and soya bean balls
  • Then add paste of coconut, green chillies, tomatoes and salt
  • Add water as needed. Let it boil at high temperature
  • When the fish gets cooked and curry boils up, add soaked cocum
  • Then lower the flame and add curry leaves to the curry.
  • Garnish with mustard seeds, red chilly, and curry leaves lightly fry
  • Fish Curry with soya balls is ready
