1/3 pound pancetta in 1 piece, partially frozen
2 tablespoons extra-virgin olive oil
1 onion, thinly sliced
Scant 1/4 teaspoon red pepper flakes
1 tablespoon chopped fresh Italian parsley leaves
1 1/2 tablespoons red wine vinegar
3/4 cup tomato puree
3/4 pound spaghetti or bucatini
Freshly grated Parmesan (recommended: Pecorino Romano)

Steps:

  • Bring a large pot of salted water to a boil over high heat.
  • Meanwhile, unroll the pancetta. Cut it into 1-inch long chunks, and then slice each chunk thinly across the grain.
  • Heat the olive oil in a large skillet over moderately low heat. Add the pancetta and cook until it renders some of its fat, about 5 minutes. Do not allow it to crisp. Add the onion and cook until soft, about 10 minutes. While the onion is cooking, add the pasta to the boiling water.
  • Add the red pepper flakes and parsley to the onion mixture and cook briefly to release their fragrance. Add the vinegar and simmer briefly until it evaporates, then add the tomato puree and 1/4 cup of the pasta water. Simmer briefly to blend.
  • When the pasta is just shy of al dente, drain it and return it to the warm pot over moderate heat. Add the sauce and cook briefly so the pasta absorbs some of the sauce, then transfer the pasta to a warmed serving bowl and shower with the pecorino. Serve immediately.

1 onion, finely chopped
7 ounces pancetta bacon, diced
2 cups passata (crushed tomatoes)
1 tablespoon water, or more as needed
½ teaspoon white sugar
2 tablespoons grated Parmesan cheese
1 pinch red pepper flakes, or to taste
salt and freshly ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • Meanwhile, heat 2 tablespoons olive oil in a large skillet over medium heat and cook onion until golden brown, about 5 minutes. Add pancetta and cook, stirring occasionally, until crisp, 2 to 3 minutes. Pour in passata, water, and sugar; cook until sauce has thickened, 10 to 15 minutes
  • Drain spaghetti and toss with sauce, remaining olive oil, Parmesan cheese, and red pepper flakes. Season with salt and pepper.

1 tablespoon butter
2 cloves garlic, minced
½ cup reserved pasta water
½ cup lightly packed freshly shredded Parmesan cheese
1 tablespoon finely chopped fresh parsley

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, 8 to 10 minutes.
  • Meanwhile, melt butter in a skillet over medium-high heat. Add garlic and cook until fragrant, about 1 minute.
  • Drain spaghetti, reserving 1/2 cup pasta water. Add pasta water and Parmesan cheese to the skillet with the garlic. Stir to combine. Add spaghetti and parsley. Toss to evenly distribute parsley amongst spaghetti and serve immediately.

1 lb spaghetti, dried
3 tablespoons olive oil
3 garlic cloves, minced
1/2 teaspoon black pepper
1/3 cup chicken stock or 1/3 cup white wine
1 (28 ounce) can crushed tomatoes
1 (14 ounce) can crushed tomatoes
1 teaspoon sugar (optional but good if using tart tomatoes)
salt
1/4 cup fresh basil, chopped and loosely packed
1 -2 tablespoon butter, cut into small pieces
1 cup grated parmesan cheese or 1 cup asiago cheese
additional fresh ground pepper (optional garnish)

Steps:

  • Bring a large pot of water to a boil. Add salt to the water and pasta. Cook to al dente.
  • Heat a medium sauce pot over medium-low heat. Add olive oil, garlic and black pepper; cook 5 minutes, garlic will be soft and light golden. Add stock or wine and stir 30 seconds. Next, add tomatoes and sugar; combine. Season the sauce with salt, to taste, then stir in basil and reduce heat to low.
  • When pasta is cooked, turn off the heat, drain the pasta then add it back to the still-hot pot. Add butter to spaghetti and toss to melt and coat. Add half the red sauce then work in about 1/4 cup cheese at a time as you toss to combine until all cheese is used.
  • To serve, using tongs or a meat fork, swirl the pasta into buttery, cheesy mounds onto each plate. Top each portion with spoonfuls of remaining sauce. Top with a few turns of fresh ground pepper.

Try this easy version of an alla norma, which uses roast aubergine instead of fried. It's then tossed with spaghetti and a rich tomato and basil sauce

2 aubergines, cut into 3cm chunks
1 heaped tsp salt
4 tbsp extra virgin olive oil
1 small onion, finely chopped
2 garlic cloves, crushed
pinch chilli flakes
2 x 400g tins chopped tomatoes
1 tsp sugar
350g spaghetti (egg-free, if needed)
small bunch basil, shredded, plus a few leaves to serve
1 heaped tbsp capers
ricotta salata or parmesan, finely grated, to serve (optional)

Steps:

  • Toss the aubergines with the salt, then tip into a colander set over a bowl for 30 mins, to extract any moisture.
  • Heat 2 tbsp of the oil in a casserole dish or saucepan. Tip in the onion and a pinch of salt, and cook over a low heat for 10 mins. Add the garlic and chilli, and cook for 1 min. Tip in the tomatoes and sugar, and bring to the simmer. Cook, uncovered, for 20 mins, stirring occasionally. Heat the oven to 220C/200C fan/gas 7.
  • Pat the aubergine dry with kitchen paper, then toss with the remaining oil. Spread out on a baking sheet and roast for 25-30 mins until softened and golden around the edges. Meanwhile, cook the pasta following pack instructions, reserving 100ml of the cooking water.
  • Stir the aubergine into the sauce with the basil and capers. Season to taste, then toss the spaghetti in the pan with the sauce and a splash of the pasta water. Divide between four bowls and top with the ricotta and extra basil, if using.

My husband grew up not far from Rome, and this is his version of the famous Roman dish "Amatriciana". It calls for guanciale (cured pork jowl), which can be difficult to find here in the states. While some recipes call for pancetta or bacon to be used in its place, we've found that salt pork is a great alternative as well (see Cook's Note).

2 tablespoons extra virgin olive oil
12 ounces guanciale (cured pork jowl), sliced and cut into 1/2-inch pieces
1 cup diced onion
3 cloves garlic, chopped
¼ teaspoon crushed red pepper flakes
½ cup white wine
1 (28 ounce) can whole Italian plum tomatoes (such as San Marzano)
1 cup water, divided
1 (6 ounce) can tomato paste
2 (16 ounce) packages spaghetti
1 cup freshly grated Pecorino Romano cheese
2 tablespoons thinly sliced fresh basil leaves

Steps:

  • Heat olive oil in a large skillet over medium heat. Add guanciale and cook, stirring frequently until slightly browned, about 7 minutes. Remove guanciale to a plate. Leave a bit of the rendered fat in the skillet and discard the rest.
  • Add onion to the skillet and cook and stir until softened, about 5 minutes. Add garlic and red pepper flakes; cook for 1 minute. Return guanciale to the skillet and cook for 1 to 2 minutes. Pour in white wine and cook until wine has reduced slightly, about 3 minutes.
  • Stir in canned tomatoes, breaking up whole tomatoes with a spoon. Pour 1/3 cup water into the tomato can, swirl around to rinse the can, and pour into the skillet with remaining 2/3 cup water and tomato paste. Bring sauce to a boil. Reduce heat to low, cover, and simmer, stirring occasionally, for 1 hour.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, 10 to 12 minutes. Ladle out about 1/2 cup of the pasta water, add to the sauce in the skillet, and mix well. Drain spaghetti and stir into the sauce until well combined.
  • Sprinkle generous amounts of Pecorino Romano cheese over each serving, and garnish with basil.

12 ounces guanciale or pancetta, thinly sliced
2 medium carrots, peeled, finely chopped
1 large onion, finely chopped
2 tablespoons butter
1 teaspoon salt, divided
1 teaspoon pepper, divided
4 garlic cloves, minced, divided
1 fresh rosemary sprig
1 fresh sage sprig
1/2 cup dry red wine
1 can (28 ounces) whole tomatoes, undrained, crushed
2 tablespoons olive oil
1/4 teaspoon crushed red pepper flakes
1 package (16 ounces) uncooked spaghetti
Optional: grated Pecorino Romano cheese and fresh basil

Steps:

  • In a large skillet, cook guanciale over medium heat until crisp, stirring occasionally, 5-8 minutes. Remove with a slotted spoon, drain on paper towels. Add carrots, onion and butter to pan drippings; cook until vegetables are tender, 5-7 minutes. Season with 1/2 teaspoons salt and 1/2 teaspoon pepper. Add half the garlic, rosemary and sage sprigs; cook until fragrant, 2 minutes., Stir in wine; cook until reduced, 2-3 minutes. Add tomatoes; bring to a boil. Reduce heat to low; simmer partially covered until sauce is thickened, stirring occasionally, 30-40 minutes., Remove and discard rosemary and sage sprigs; cool sauce slightly. In batches, add sauce to blender. Cover and process until desired consistency. Return sauce to pan. Stir in half of reserved guanciale, remaining garlic, salt and pepper. Add olive oil and red pepper flakes. Set aside; keep warm., In a large saucepan cook spaghetti according to package directions for al dente. Drain pasta, reserving 1 cup pasta water. Add drained spaghetti to pan with sauce; toss to combine. Add enough reserved pasta water for sauce to reach desired consistency. Garnish with remaining guanciale. If desired, sprinkle with cheese and fresh basil leaves.

  • Add extra virgin olive oil, garlic, and red pepper. Let cook for 5 minutes, garlic will be soft and light golden.
  • Remove garlic.
  • Add stock or wine and stir 30 seconds, add tomatoes and combine.
  • Season the sauce with salt to taste, then stir basil in and reduce heat to low.
  • When pasta is cooked, turn off the heat drain the pasta then add it back to the still hot deep pot.
  • Add butter to spaghetti and toss to melt and coat.
  • Add half the red sauce and all of the cheese, work in a handful at a time as you toss to combine.
  • To serve, use tongs to swirl the pasta into buttery cheesy mounds to pile onto each plate.
  • Top each portion with spoonfuls of remaining sauce.
