2 egg yolks
2 tsp Marmite
30g, finely grated parmesan or vegetarian alternative, plus extra to serve
175g spaghetti or linguine
1 fat clove garlic, squashed a bit with the side of a knife
extra virgin olive oil
a small handful curly parsley, finely chopped to serve

Steps:

  • Bring a large pan of salted water to the boil while you mash together the egg yolks, Marmite and grated parmesan with some freshly ground pepper. Once the water is boiling, add the pasta and cook until just tender.
  • Put the garlic and 2 tbsp olive oil in a cold frying pan, then bring to a medium heat and fry until the garlic is golden and crispy, then fish it out and discard.
  • Reserve a small cup of the pasta water then drain. Take the frying pan off the heat and tip in the pasta, followed by the Marmite mixture and a good splash of cooking water. Toss together until the pasta is glossy and evenly coated. Serve with plenty more grated parmesan and a sprinkling of parsley.

I came across this recipe in Anna Del Conte's memoirs, Risotto with Nettles. Now, there are so many recipes I could borrow from her, and many I have, but this is the one I have to show you here. She introduces it as hardly a recipe, but I wanted to include it because I haven't as yet found a child who doesn't like it. I know the combination of pasta and Marmite sounds odd to the point of unfeasibility, but wait a moment, there is a traditional day-after-the-roast pasta dish, in which spaghetti is tossed in stock, and I have eaten shortcut versions of this in Italy (recreated guiltlessly in my own kitchen) which use a crumbled stock cube, along with some butter, olive oil, chopped rosemary and a little of the pasta cooking water to make a flavoursome sauce for spaghetti. If you think about it, Marmite offers saltiness and savouriness the way a stock cube might. I'm glad this recipe is here, and I thank Anna for it. For US cup measures, use the toggle at the top of the ingredients list.

375 grams spaghetti
50 grams unsalted butter
1 teaspoon Marmite or Vegemite (or more to taste)
freshly grated Parmesan cheese (to serve) - see Additional Information below

Steps:

  • Cook the spaghetti in plenty of boiling salted water, according to the packet instructions. When the pasta is almost cooked, melt the butter in a small saucepan and add the Marmite/Vegemite and 1 tablespoon of the pasta water, mixing thoroughly to dissolve. Reserve ½ cup of pasta water; then drain the pasta and pour the Marmite/Vegemite mixture over the drained spaghetti, adding a little reserved pasta water to amalgamate if required. Serve with plenty of grated Parmesan cheese.

7oz / 200g Spaghetti, (or other long cut pasta)
3.5oz / 100g Button Mushrooms, (sliced (see notes))
1/4 cup / 20g freshly grated Parmesan, (plus more to serve)
2 heaped tbsp Unsalted Butter
1-2 tsp Marmite ((see notes))
1 clove Garlic, (minced/finely diced)
1 heaped tbsp finely diced Fresh Parsley
Salt & Black Pepper, (to taste)
Olive Oil, (for frying)

Steps:

  • Pop your spaghetti in salted boiling water and cook until al dente. Scoop out a cup of starchy pasta water JUST before draining.
  • Meanwhile fry the mushrooms in a little olive oil over medium heat until they begin to brown. Add garlic and a pinch of salt & pepper, then fry for another 1-2mins until the garlic just begins to pick up colour.
  • Melt in 2 heaped tbsp butter, then pour in 1/3 cup / 80ml of the starchy pasta water. Whisk with your wooden spoon to emulsify with the butter, then turn heat down slightly and stir in the Marmite.
  • Add spaghetti and toss to coat in the sauce. Sprinkle in parmesan and parsley and continue to gently toss until the sauce thickens around the spaghetti.
  • Check for seasoning then serve hot with more parmesan!

500g pack of spaghetti
1 tbsp olive oil
200g pancetta , diced
80g butter , softened
2 tsp Marmite
50g cheddar , grated
grated parmesan , to serve

Steps:

  • Bring a large pan of water to the boil and add the spaghetti. Meanwhile, heat the oil in a frying pan and cook the pancetta for 8-10 mins until crispy.
  • Once the pasta is cooked, drain, reserving a little pasta water. Tip the spaghetti back into the pan with the pasta water and add the pancetta with the fat from the pan, the butter, Marmite and cheeses. Use tongs to coat the spaghetti in the sauce and season with a little pepper. Taste and add a little more Marmite , if you like. Serve in bowls with extra Parmesan sprinkled over.

140 g spaghetti
1 tbsp marmite
2 tbsp butter
75 ml reserved pasta water
30 g Parmesan (grated)
3 g fresh parsley (chopped)
1 pinch sea salt and black pepper

Steps:

  • Cook the spaghetti according to the packet instructions - this will be 10-12 minutes.
  • Drain the pasta (reserving some of the water). Add the Marmite, butter, cheese and salt and pepper. Mix well until the butter has melted and all of the spaghetti is coated.
  • Serve with chopped parsley.
