400g spaghetti
1 tbsp olive oil
2 garlic cloves , crushed
pinch chilli flakes
227g can chopped tomato
x cans skinless and boneless sardines in tomato sauce
100g pitted black olives , roughly chopped
1 tbsp capers , drained
small handful parsley , chopped

Steps:

  • Cook the spaghetti in a large pan of boiling salted water according to pack instructions. Meanwhile, make the sauce. Heat the oil in a medium pan and cook the garlic for 1 min. Add the chilli flakes, tomatoes and sardines, breaking up roughly with a wooden spoon. Heat for 2-3 mins, then stir in the olives, capers and most of the parsley. Mix well to combine.
  • Drain the pasta, reserving a couple of tbsp of the water. Add the pasta to the sauce and mix well, adding the reserved water if the sauce is a little thick. Divide between 4 bowls and sprinkle with the remaining parsley.

1 (16 ounce) package spaghetti
¾ cup olive oil, divided
6 cloves garlic, minced
2 (4 ounce) cans sardines packed in olive oil, drained
1 cup seasoned bread crumbs
⅓ cup freshly grated Parmesan cheese
¼ cup chopped fresh parsley
1 teaspoon ground black pepper
1 pinch additional Parmesan cheese for serving

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the spaghetti, and cook until al dente, or 8 to 10 minutes. Drain, and rinse under cold water. Toss with 1/4 cup olive oil, cover and keep warm.
  • Place another 1/4 cup olive oil in a skillet, and heat over medium heat. Stir in the garlic, and cook just until golden, 2 to 3 minutes. Add the sardines, and cook 1 minute more. Stir in the bread crumbs and 1/3 cup Parmesan cheese. If necessary to give the mixture a crumbly texture, stir in the remaining 1/4 cup of olive oil. Stir in the parsley and pepper, and remove from the heat. If desired, serve with additional Parmesan cheese.

3 tablespoon extra-virgin olive oil
2 halved and thinly sliced onions
Kosher salt and ground pepper
1 head cauliflower, cut into florets
1/2 teaspoon red pepper flakes
1 bunch kale, torn into bite-size pieces
8 ounces whole-wheat spaghetti
1/2 tin sardines, broken into pieces
1 tablespoon lemon juice

Steps:

  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Add onions; season with salt and pepper. Cook, stirring, until golden, about 18 minutes. (Reduce heat if onions become too dark.)
  • Meanwhile, bring a large pot of salted water to a boil. Add cauliflower and red pepper flakes, and cook for 4 minutes. Using a slotted spoon, transfer cauliflower to pan with onions. Cook, stirring, until cauliflower is tender, about 4 minutes. Add kale to cauliflower. Cook, stirring, until kale is tender, about 4 minutes.
  • Meanwhile, add spaghetti to boiling water; cook according to package instructions. Drain pasta, reserving 1 cup water; add to pan with cauliflower. Add just enough pasta water to create a sauce that coats the pasta. Remove from heat; stir in sardines, lemon juice, and 2 more tablespoons oil. Season with salt and pepper. Serve immediately.

Spaghetti With Cauliflower, Almonds, Tomatoes and Chickpeas image

Pasta with cauliflower comes in many variations throughout Italy. This one is all about texture -- crunchy almonds, tender (but not mushy) cauliflower and plush chickpeas. The original version of this recipe called for quinoa spaghetti (and if you're into that, go for it!), but we've found it's just as tasty with the traditional sort as well.

24 raw almonds (about 3 tablespoons), blanched, skinned* and chopped
1 small or 1/2 large head cauliflower, broken into florets
2 tablespoons extra virgin olive oil
2 garlic cloves, minced
1-14 1/2-ounce can chopped tomatoes in juice
1/4 teaspoon sugar
Pinch of cinnamon
Salt to taste
1/2 to 1 teaspoon dried oregano (to taste)
Freshly ground pepper to taste
1/2 cup cooked chickpeas (canned or freshly cooked)
3/4 pound spaghetti
Crumbled feta or freshly grated Parmesan for serving

Steps:

  • Fill a large pasta pot with water and bring to a boil. Add salt to taste and cauliflower. Boil 5 minutes, then using a Chinese skimmer, a strainer or a slotted spoon, transfer cauliflower to a bowl of cold water (do not drain the pot; you'll use the water for the pasta). Drain the cauliflower and chop medium-fine. Set aside.
  • (You can do this step while you are waiting for the water to come to a boil for the cauliflower). Heat 1 tablespoon of the olive oil over medium heat in a large, heavy skillet or a wide saucepan and add garlic. Cook, stirring, until fragrant, about 30 seconds, and stir in tomatoes with liquid, sugar, cinnamon, salt and oregano. Turn up heat to medium-high and stir often as tomatoes come to a brisk boil. Turn heat down to medium and cook, stirring often, until tomatoes have cooked down and taste very fragrant, about 10 minutes. Add pepper to taste.
  • Add cauliflower and almonds to the tomato sauce, along with 1/4 cup cooking water from the cauliflower, and stir together. Stir in chickpeas.
  • Bring water in the pot back to a boil and add spaghetti. Cook al dente, following timing instructions on the package but checking for doneness a minute before indicated time on the package. Set aside 1/2 cup of the cooking water from the pasta, in case you want to moisten the sauce more, drain pasta and toss with the tomato and cauliflower sauce and the remaining tablespoon of olive oil. Add water from pasta only if you think the mixture seems dry. Serve, passing crumbled feta or grated Parmesan at the table for sprinkling.

2 medium leeks (white portion only), minced
2 garlic cloves, minced
1 package (12 ounces) frozen riced cauliflower
3/4 teaspoon salt
1/4 teaspoon pepper
3 cups chopped fresh baby kale
1 cup packed fresh parsley leaves, minced
1/2 cup finely chopped chives
1/3 cup walnut halves, roughly chopped
1 teaspoon grated lemon zest
2 teaspoons lemon juice

Steps:

  • In a large skillet, heat 1 tablespoon oil over medium-high heat. Add leeks; cook and stir until tender, 3-4 minutes. Add garlic; cook 30 seconds longer. Transfer to a large bowl; keep warm. Wipe skillet clean., In the same skillet, heat remaining 2 tablespoons oil over medium-high heat. Add cauliflower, salt and pepper; cook and stir until cauliflower just starts to brown, 6-8 minutes. Remove from heat; add to leek mixture. Stir in remaining ingredients; serve warm.
