Steps:
- Process garlic, paprika, and salt in a food processor until smooth. Add mayonnaise, sriracha sauce, and ketchup; process until sauce is well-combined. Transfer sauce to a bowl, cover the bowl with plastic wrap, and refrigerate until chilled.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Rinse luncheon meat 'fries' with cool water and pat dry.
- Working in batches, cook 'fries' in preheated oil until browned and crispy on the outside and still moist on the inside, 4 to 6 minutes. Remove to a paper towel-lined plate. Transfer 'fries' to a plate and serve with chilled dipping sauce.

- Preheat your oven to 400 degrees F. Line a rimmed baking sheet with high-heat-resistant parchment paper.
- Wipe the chicken drumsticks dry with paper towels. Arrange them in a single layer on the baking sheet.
- Prepare the rub: In a small bowl, combine the olive oil, kosher salt, chili powder and cayenne pepper to create a paste. Pour the paste over the chicken pieces and, using your hands or a pastry brush, coat the chicken on all sides.
- Bake the drumsticks until cooked through (their internal temperature should reach 165ºF) and juices run clear, about 40 minutes. Check them after the first 30 minutes and loosely cover them with foil if they seem to be darkening too fast on top.
- If you wish, garnish with chopped parsley and red pepper flakes, then serve.

- 1. Mix all ingredients adding enough mayonnaise to moisten.
- 2. Spread on toasted rye or whole grain toast and broil until the sanwiches are slightly brown and bubbly.
- 3. Spread on hamburger buns and wrap in foil. Refrigerate until needed. Heat in a 375 degree oven for about 20 minutes.
- 4. Preheat a pie iron over the fire. Butter the outside of the bread and place buttered side down on the iron. Place desired amount of filling on one side of bread. Close iron and bake over a fire or BBQ until toasted and hot.
- 5. Spread filling on bread and add lettuce or tomato slices as desired.

These sandwiches are an old family favorite. We used to BEG my mom to make these for us. For proper melting use only Longhorn cheese. These are great reheated or even cold the next day.
