This fresh-tasting side dish of summer squash and zucchini goes well with chicken, pork or steak. But it's so colorful and flavorful that it might steal the spotlight from your entree.

2 medium summer squash, halved and sliced
2 medium zucchini, halved and sliced
1/3 cup chopped onion
1-1/2 teaspoons olive oil
1 large plum tomato, diced
1 tablespoon butter
1/2 teaspoon lemon-pepper seasoning
1/4 teaspoon garlic powder
1/8 teaspoon salt
1/2 cup shredded Monterey Jack cheese

Steps:

  • In a large skillet, saute the squash, zucchini and onion in oil for 8 minutes or until crisp-tender. Stir in the tomato, butter, lemon-pepper, garlic powder and salt. Cook for 2 minutes or until heated through. Remove from the heat; sprinkle with cheese. Cover for 1 minute or until cheese is melted.

An easy side dish that can also be served at room temperature as part of a salad. I love the combination of smoked sweet paprika and sweet butternut squash.

1 large butternut squash
1 teaspoon smoked sweet paprika
1 teaspoon garlic powder
1 teaspoon onion salt
1 teaspoon fresh ground black pepper
2 teaspoons balsamic vinegar
3 tablespoons extra virgin olive oil

Steps:

  • Preheat oven to 375.
  • Cut ends off butternut squash, peel, and slice lengthwise.
  • Remove seeds and chop into 1 inch cubes.
  • In a medium bowl, combine spices, oil and vinegar into a paste.
  • Add squash and toss until coated.
  • Arrange the squash cubes in one layer in a roasting pan.
  • Roast for 20 minutes, toss once, and cook for an additional 25 minutes or until the squash is browned and is tender throughout.

  • In a large skillet, saute the zucchini, squash and onion in oil for 4-6 minutes or until crisp-tender. Add the remaining ingredients; cook 1 minute longer.

This recipe was given to me by my grandmother. I have revised it a little. It is one of my family's favorites!

1 pound ground beef
1 tablespoon vegetable oil
3 medium yellow squash, sliced
1 small yellow onion, sliced
1 (14.5 ounce) can diced tomatoes, drained
½ cup water
1 teaspoon chili powder
¼ teaspoon cumin
1 dash garlic powder
salt and pepper to taste

Steps:

  • In a large skillet over medium heat, cook the ground beef until evenly brown. Drain, and set aside.
  • Heat the oil in the skillet over medium heat. Mix in the squash and onion, and saute until tender.
  • Mix the tomatoes and water into the skillet. Season with chili powder, cumin, garlic powder, salt, and pepper. Bring the mixture to a boil. Cover skillet, reduce heat to low, and simmer 30 minutes, stirring occasionally.
