1 small green bell pepper, chopped
1 (8oz) can low sodium or no salt added tomato sauce
2 1/2 cups water
1 tsp. chili powder
1/4 tsp. garlic powder
1/4 tsp ground cumin

Steps:

  • Heat oil in a large skillet pan over medium heat. Stir in quinoa, garlic, onion and bell pepper. Cook 5-10 minutes until onion is slightly tender. Stir in water and tomato sauce and season with cumin, chili powder and garlic powder. Bring to a boil and then reduce heat, cover, and simmer until quinoa is tender and liquid is absorbed. Stir occasionally, cooks in about 30 minutes.

1 (14 1/2 ounce) can diced tomatoes with green chilies
1 tablespoon olive oil
1 medium onion, diced
water
1 garlic clove, minced
1/2 cup quinoa, washed and drained
1 teaspoon chili powder
1 teaspoon cumin

Steps:

  • Drain tomatoes and reserve juice.
  • Heat oil and saute garlic and onions until translucent.
  • Place the tomato juice in a liquid measuring cup and add enough water to equal 1 cup of liquid.
  • Add the liquid to the sauteed garlic and onions; bring to a boil.
  • Stir in the quinoa, pepper, and salt.
  • Reduce to simmer, cover and cook for 15 minutes or until the liquid is absorbed.
  • Stir in tomatoes, chili powder, and cumin; cook another 2-4 minutes until hot.

2 cups Minute Rice
1/4 cup vegtable oil or butter
2 cups hot water
2 (8 ounce) cans tomato sauce, or 4 cups (2 cans, l pound each) canned tomatoes and omit the water
1 teaspoon salt
1/2 teaspoon Chili powder (or to taste)
Dash pepper
Optional: 1/2 cup frozen or canned corn, can of sliced black olives
For an entree, add 1 pound of cooked hamburger

Steps:

  • Saute onion, green pepper, and Minute Rice (right from box) in the oil. Add remaining ingredients; mix well. Bring to a boil. Then reduce heat and simmer, uncovered, 5 to 10 minutes or until rice is done. Makes 4 to 6 servings. Here are some ways to mix it up a bit: Cheese Spanish Rice: Stir 1/2 cup grated Cheddar cheese into prepared rice; place in serving dish and top with additional 1/2 cup grated cheese. Beef Spanish Rice: Prepare as above, sauteing 1/2 to 1 pound ground beef with the rice. Mushroom Spanish Rice: Prepare as above, sauteing 1/4 pound sliced fresh mushrooms with the rice.

If you haven't tried Quinoa you must - It is just so yummy and easy to make! Be sure to rinse it very well (VERY well!) or it could taste bitter.

3/4 cup quinoa (rinsed numerous time)
1 (15 ounce) can tomatoes, diced
2 -3 minced garlic cloves
1 tablespoon chili powder
2 teaspoons ground cumin
1/4 teaspoon cayenne

Steps:

  • Depending on your preference, blend the canned or fresh tomatoes in a blender to remove chunks.
  • Add water to tomatoes so you have 1 1/2 cups liquid (tomatoes + water).
  • Add well rinsed quinoa, water/tomato mixture and garlic to a sauce pan and heat to boiling.
  • Lower heat & simmer for 15-20 minutes until the liquid is absorbed.
  • Add remaining ingredients & mix well.
