EASY SPANISH TORTILLA RECIPE
Spanish tortilla or tortilla española is basically a Spanish omelette with potatoes and eggs cooked gently in olive oil. This dish is traditionally served at room temperature or cold as a tapa, but it is great for any meal of the day. Leftovers will last in the fridge for a good 3 days!

- In a big bowl, whisk together the eggs, salt, and paprika. Set aside for now.
- Prepare a 10-inch oven-proof nonstick skillet or a well-seasoned cast iron skillet. Heat the olive oil in the skillet over medium-high heat until shimmering but not smoking.
- Add the potatoes, onions, and scallions to the oil (at first, they won't all seem to fit, but with a little stirring, they'll compress as they cook). Lower the heat immediately to medium-low and watch to control the heat and make sure it continues to gently bubble. Cook for 25 minutes, stirring occasionally, until the potatoes are very tender.
- Use a heat-safe strainer over a heat-safe bowl to drain the olive oil (reserve the oil aside for now).
- Season the potatoes well with kosher salt and add them to the egg mixture in the bowl.
- Turn the oven broiler on.
- In the skillet, heat 3 tablespoons of the reserved olive oil over medium heat. Pour in the egg and potato mixture, and gently press to even out the top. Reduce the heat to medium-low. Cook until you see the edges of the omelette begin to set and firm up then put the pan under the broiler to finish cooking. Broil for about 5 minutes, watching carefully until the eggs are cooked through and the top of the omelette browns slighlty (see notes if you prefer to finish cooking on stovetop).
- Allow the tortilla a few minutes before serving.
- To serve, invert the tortilla onto a large serving platter (you may need to loosen the edges using a spatulla). Cut into 6 slices and serve.

SPANISH TORTILLA (POTATO AND EGG CASSEROLE)
A staple in Spain, and if you are not familiar with Spanish cuisine, you may be in for a surprise.

- Peel the potato and onion. Slice thinly. It works great if you use a mandolin.
- Heat the oil a large non-stick skillet over medium heat.
- When hot add in the potato slices and onion slices.
- Sprinkle with a good bit of salt and a pepper,
- Using a wooden spoon gently turn the mixture in oil and adjust the heat so the oil is just bubbly but not too hot.
- Keep turning the potatoes every few minutes until they are fork tender. You want them tender, but not brown.
- While the potatoes are cooking you can beat the eggs in a large bowl with some salt and pepper.
- Drain the potatoes into a metal colander and reserve the oil.
- Wipe out the skillet with a paper towel.
- Add in two tablespoons of the reserved oil and heat to a medium flame.
- Add the potatoes and onions to the egg mixture and gently combine together.
- Add this to the heated oil.
- As soon as the edges start to firm, reduce the heat to medium-low. Cook for 5 minutes.
- Using a rubber spatula run it along the edges of the tortilla.
- You want to make sure it is completely loose and will slide easily from the pan.
- Carefully slide it onto a plate. Cover it with another plate and holding them tightly together, invert them.
- Add another tablespoon of oil to the skillet and slide the tortilla back into the skillet.
- Cook another 5 minutes and then slide onto a clean plate.
- Serve warm or at room temperature.

TORTILLA ESPANOLA
Tortilla Espanola is a dish I make all the time at home. My boyfriend's family are Spanish, and he just loves this authentic dish. It's easy to prepare and always a crowd pleaser. Traditionally this dish only uses only onions, potatoes and egg; however I like to add a little green, either parsley or chives depending on your taste. They're both wonderful.

- Preheat an oven to 350 degrees F (175 degrees C).
- In an ovenproof skillet over medium heat, heat 1 tablespoon of olive oil until it shimmers, and place the potatoes into the hot oil. Season with salt and pepper, and sprinkle with smoked paprika. Pan fry the potatoes, stirring and tossing occasionally, until they are beginning to soften, about 8 minutes. Stir in the onion, and cook, stirring occasionally, until the potatoes and onion are slightly browned and the onion is translucent, about 10 more minutes. Take the skillet off the heat, and allow to cool for about 5 minutes.
- Beat the eggs with 1 teaspoon of olive oil in a large bowl. Stir in the parsley, add the potato-onion mixture, and lightly combine.
- Heat 1 tablespoon of olive oil in the skillet over medium heat until it shimmers, then gently spoon the egg-potato mixture into the hot skillet. Reduce heat to medium-low, and shake the skillet a few times to help release the omelet from the bottom of the skillet.
- Slide the skillet into the preheated oven, and bake until the omelet is puffed and the top is golden brown, about 5 minutes. A toothpick inserted into the center of the omelet should come out clean. Cut the omelet into pie-shaped pieces, and serve hot.

- Adjust oven rack to the middle position; preheat oven to 450°.
- Heat oil in a 10-inch ovenproof nonstick skillet over med-high heat until shimmering.
- Add in potatoes, onion, and 1/2 teaspoon salt.
- cover and cook, stirring occasionally, until potatoes and onion are soft, 8-10 minutes.
- In a bowl, whisk eggs, 1/4 teaspoon salt, and 1/4 teaspoon pepper together.
- Add eggs to the skillet and cook, using rubber spatula to stir gently in circular motion, until mixture is slightly thickened, about 1 minute.
- Bake in oven until top is puffed and edges have pulled away slightly from sides of pan, 3-5 minutes.
- Use rubber spatula to loosen tortilla from skillet, then slide onto cutting board, slice into wedges and serve.

TORTILLA ESPANOLA (TRADITIONAL SPANISH POTATO OMELETE).
This Spanish influenced recipe is adapted by chef Mario Batali. Tortilla Espanola is a very common, simple and delicious dish found in most areas of Spain. This version has a high ratio of potatoes to eggs (the way I like it!). You could serve this as a tapas offering, breakfast, a sidedish or a non-meat main dish. Enjoy.

- Heat 1/4 cup of the olive oil in a large cast-iron skillet.
- Add the potato and onion slices, season with salt and pepper and cook over moderate heat, stirring frequently, until the potatoes and onion are tender but not browned, about 15 minutes.
- In a large bowl, lightly beat the eggs and season with salt and pepper.
- Gently scrape the potato mixture into the large bowl containing the eggs. (Make sure not to leave any of the potato mixture in the skillet.).
- Return the empty skillet to the heat and add the remaining 2 T. olive oil.
- Add the egg mixture (with potatoes and onions), spreading it out in an even layer.
- Cover and cook over low heat until the tortilla is set on the bottom and edge , about 10 minutes.
- Set a large plate over the skillet and carefully invert the tortilla onto the plate and back to the skillet to cook the other side for a few minutes, when done, slide in to serving plate.
- Let stand for 5 minutes.
- Cut into wedges and serve warm or at room temperature.
- Note: The tortilla can stand at room temperature for 3 hours before serving.

- Cook potatoes in boiling salted water until tender. Drain well and slice.
- Heat oil in 20cm frying pan. Add potato slices and onion and fry for 5 minutes until tender and golden.
- Whisk eggs and season well. Pour over potato and onion mixture.
- Cook tortilla over low heat for 10 minutes until eggs set.
- Loosen edges of tortilla with spatula and slide onto a plate and turn the tortilla over to cook the underside again for another 5-10 minutes. Or you can finish under a grill the top side to brown.
- Stand for 10 minutes before cutting to serve.
