RASPBERRY BASIL LIMONCELLO COCKTAIL

Ingredients

1 pint fresh raspberries, plus more for garnish
12 fresh basil leaves, roughly torn, plus sprigs for garnish
1 lemon, cut into sixths, plus wheels for garnish
1/4 cup simple syrup, chilled (more if you prefer the cocktail a little sweeter)
2 ounces Limoncello
4 ounces citron vodka
Crushed ice
Sparkling rose wine, chilled

Steps:

Combine the raspberries, basil, lemons and simple syrup in a small pitcher and muddle until the raspberries are mashed. Add the Limoncello and vodka. Let chill in the refrigerator for 30 minutes to allow the flavors to meld.
Put crushed ice into rocks glasses and add some of the raspberry mixture. Fill to the top with sparkling wine. Garnish with lemon and raspberries and basil sprigs if desired.

1 cup raspberries
1 lemon, zest of
3 fluid ounces pink lemonade
2 fluid ounces lemon-flavored liqueur
1 (750 ml) bottle sparkling wine
3 cups ice cubes

Steps:

In a large glass pitcher, mix together the raspberries, lemon zest, lemonade and Lemoncello. Refrigerate for about 2 hours.
When ready to serve, slowly add the sparkling wine, stir gently.
Fill glasses with ice cubes and slowly pour sangria over the ice, allowing raspberries to fall into the glasses.

1/4 teaspoon grated lemon zest
1 few drops fresh lemon juice
3 raspberries
2 tablespoons limoncello
crushed ice, as needed
1/2 cup sparkling wine or 1/2 cup prosecco
fresh mint leaves or lemon zest, strip (to garnish)

Steps:

On a small plate, stir together the sugar and grated lemon zest. Dip a clean finger in the lemon juice and moisten the rim of a Champagne flute or other wine glass. Dip the rim in the sugar mixture to coat.
In a small bowl or ramekin, using a cocktail muddler or the end of a wooden spoon, pulverize the raspberries with the limoncello. Transfer the puree to the sugar-rimmed glass. Place a spoonful of crushed ice in the glass, then pour in the sparkling wine. Garnish with the mint leaves or lemon zest strip and serve immediately.
