Ingredients

5 mint leaves + a sprig of mint for garnish
1 tablespoon + 1 teaspoon bourbon
1 tablespoon + 1 teaspoon lime juice, plus lime slices for garnish
2½ teaspoons maple syrup
handful of ice
¼ cup 14 Hands Brut

Steps:

In a jar, combine the mint, bourbon, lime juice, maple syrup and stir. Pour into an 8 ounce julep glass filled with ice and top it off with the sparkling wine. Garnish with more lime slices and mint leaves.

3/4 ounce simple syrup
3 ounces Champagne or dry sparkling wine
1/2 ounce cognac
1 dash bitters (such as Angostura)
Lemon twist (for serving)

Steps:

Muddle mint leaves and simple syrup in a julep cup or rocks glass. Add Champagne, cognac, and bitters. Fill glass partway with crushed ice and stir gently to combine. Mound more crushed ice on top and garnish with a mint sprig and a lemon twist.

1 cup sugar
12 strips lemon zest (from 2 lemons)
6 fresh mint leaves, plus sprig for garnish
Crushed ice
2 ounces bourbon, such as Bulleit

Steps:

Lemon Simple Syrup: Heat sugar, 1 cup water, and lemon zest in a small saucepan over high, stirring occasionally, until sugar dissolves. Remove from heat; let cool 20 minutes. Remove zest; let cool completely. Syrup can be refrigerated up to 1 week. (Makes 1 1/2 cups.)
Cocktail: In the bottom of a julep cup, muddle mint leaves with 1 tablespoon syrup for a few seconds until mint starts to break down. Add bourbon and fill cup with ice; stir until well chilled. Top with more ice and garnish with mint sprig.

85g golden caster sugar
4 tbsp fresh lemon juice
1 bottle of chilled, sparkling wine (Cava is a good choice)
20g/1oz pack fresh mint

Steps:

Put the sugar and lemon juice in a small pan and heat gently to dissolve the sugar. Simmer for 2 minutes to make a syrup. Remove from the heat and leave to cool. This can be made in advance and kept in the fridge for up to a week.
To serve, pour the lemon syrup into 6 champagne flutes or tall glasses, top up each glass with the chilled sparkling wine, then stir quickly to mix before serving with mint sprigs tucked in the top.

1/2 teaspoon superfine sugar
1/2 ounce bourbon, plus 2 ounces
8 to 10 red-stemmed mint leaves
2 cups crushed ice
Sparkling water, as needed
1 lemon twist
1 mint sprig
Confectioners' sugar

Steps:

In a 12-ounce, Collins-style glass, dissolve sugar in 1/2 ounce bourbon. Add mint and bruise gently with muddler or wooden spoon. Fill the glass 2/3 with crushed ice and mix gently. Add more ice and remaining bourbon. Top with sparkling water and stir. Rub rim of glass with lemon twist, squeeze mint sprig slightly, and insert stem into ice. Dust top of drink with confectioners' sugar. Insert 2 straws into ice so drinker must bury nose in mint in order to sip drink.
