LIME ICED TEA

Lime Iced Tea image

A very refreshing summer drink. This recipe is from Iced Tea by Fred Thompson. It is suggested in the book that some crushed mint leaves and sour mash whisky can be added for a nice cocktail. I made it using splenda which worked out very well. Prep time includes time to bring water to a boil.

Provided by Chef Jean

Categories     Beverages

Time 15m

Yield 2 quarts

Number Of Ingredients 6

7 cups cold water
6 regular tea bags (I use lipton)
1 cup granulated sugar
1 (6 ounce) can frozen limeade concentrate, thawed
lime wedge, for garnish
ice, for serving

Steps:

  • Bring 4 cups of water to a boil. Remove from heat and add tea bags. Steep for 5 minutes. Remove tea bags without squeezing( squeezing can add bitterness).
  • While tea is steeping, mix the limeade and sugar in a 2 quart heat-proof pitcher.
  • Pour the tea into the pitcher and stir. Add the other 3 cups of cold water and let cool, then chill.
  • Serve over ice with a lime wedge on the glass.

ICED MINT TEA

Iced Mint Tea image

A summer favourite, when your garden is overgrown with mint. Easy to make, and delicious! Cook time is cooling time. Original recipe from Homemakers Magazine had 1/4 cup lime juice, but after Acadia's review, I adjusted it, as I agree that is too much and is overwhelming. I think that lemon juice compliments the taste more, as well. For a vegan version, use agave nectar!

  • Meanwhile, boil a pot of water. About 2-3 cups. Let the tea steep in the hot water. White tea does not get very dark because it is well, white. This is after 3 minutes. Let the tea cool completely. Strain the mint leaves out of the syrup. Get your lime juice ready and reserve a few extra slices for garnish.
  • Combine the simple syrup, tea mixture, lime slices, and some mint in a pitcher. Add sparkling water. This is more to taste. The more you add, the less sweet the mixture will be. I think that I added about 2 cups.
