1 250g packet steamed microwave rice
4 tsp sesame oil
2 eggs
100g ham
1 clove garlic
1 carrot
½ cup tinned corn
½ cup frozen peas
200g tinned baby prawns (shrimp)
2 tbs soy sauce or tamari, depending on your dietary requirements.
2 handfuls of prawn crackers

Steps:

  • Cook the rice according to packet directions. Meanwhile, cut the carrot into small pieces and mince the garlic. Set aside.
  • Heat a large frying pan over medium heat with 1 tsp of sesame oil. Whisk the eggs in a small bowl and then tip the eggs into the hot frying pan. When the eggs begin to set, use a spatula to break them up. Remove the egg from the frying pan into a small bowl.
  • Add another teaspoon of sesame oil to the frying pan (there's no need to wipe it out) then cook the carrot and garlic for 5 minutes or until the carrot is just soft.
  • Next, add the rice, peas, corn, prawns and egg to the frying pan and stir until all the ingredients are combined and warmed through. Mix through the soy sauce/tamari and remaining sesame oil.
  • Remove from heat, divide between 2 bowls and serve with a handful of prawn crackers.

2 3/4 cups water
1 1/2 cups white rice
3 tablespoons vegetable or wok oil, 3 turns of the pan
2 eggs, beaten
2 cloves garlic, chopped
2 inches fresh ginger, minced or grated
1/2 cup shredded carrots, available in pouches in produce section, a couple of handfuls
1 small red bell pepper, diced
4 scallions, thinly sliced on an angle
1/2 cup frozen peas
1/3 cup Tamari, dark aged soy sauce

Steps:

  • Bring water to a boil. Add rice, reduce heat, cover and cook over medium low heat until tender, 15 to 18 minutes. Spread rice out on a cookie sheet to quick cool it.
  • Heat a wok, wok shaped skillet or large nonstick skillet over high heat. Add oil to the pan. Add egg to hot oil and break into small bits as it scrambles. When eggs are scrambled, add garlic and ginger to the pan. Add carrots, pepper, scallions to the pan and quick stir-fry veggies 2 minutes. Add rice to the pan and combine with veggies. Fry rice with veggies 2 or 3 minutes. Add peas and soy sauce to the rice and stir fry 1 minute more, then serve.

1/3 cup tamari or low sodium soy sauce
1 teaspoon honey
chili flakes
4 tablespoons salted butter
1 1/2 cups roughly chopped broccoli
2 large eggs, beaten
4-5 cups steamed rice
3 green onions, thinly sliced

Steps:

  • 1. In a small bowl, combine the tamari and honey, and season to taste with chili flakes.2. Melt 1 tablespoon butter in a large skillet over medium heat. Add the eggs and let cook until the edges start to set, 1-2 minutes. Gently scramble the eggs. Add the rice, broccoli, and remaining butter. Toss the rice in with the butter and cook until the butter coats the rice. Pour in the sauce, cook until the rice is crisping, 4 to 5 minutes. Stir in the green onions and remove from the heat. 3. Serve warm, topped with green onions and chili flakes.

2 teaspoons canola oil, or more as needed
2 eggs
½ teaspoon water
2 teaspoons sesame oil, divided
½ onion, diced
1 clove garlic, minced
¼ cup frozen peas and carrots, thawed and patted dry with paper towel
2 cups cold cooked jasmine rice
2 teaspoons light soy sauce
1 teaspoon fish sauce
1 tablespoon sriracha sauce, or to taste
½ teaspoon white sugar
½ teaspoon salt, or to taste
½ teaspoon ground white pepper, or to taste
½ teaspoon monosodium glutamate (MSG)
¼ cup chopped green onion, or to taste, divided
¼ cup chopped fresh cilantro, or to taste
1 cucumber

Steps:

  • Heat 2 teaspoons canola oil in a large wok or skillet over high heat until smoking.
  • Beat eggs and water together in a bowl until smooth. Pour beaten egg mixture into the skillet, let it cook in the oil briefly to begin to firm, and then scramble lightly with a wooden spoon until the eggs are cooked and shiny, 2 to 3 minutes. Remove cooked eggs to a plate.
  • Pour 1 teaspoon sesame oil into the hot pan. Add enough canola oil to cover the cooking surface of the pan and heat to smoking. Saute onion and garlic in oil until fragrant, 1 to 2 minutes; add peas and carrots and cook until hot, 1 to 2 minutes more. Return cooked eggs to the pan.
  • Gradually add rice to the skillet, breaking and tossing chunks to break into individual grains and mixing with vegetables; cook and stir until the rice starts to turn a slight brown color and is completely hot, 2 to 3 minutes.
  • Stir soy sauce, fish sauce, sriracha sauce, sugar, salt, 1/2 teaspoon white pepper, and monosodium glutamate into the rice mixture; continue to cook and stir until the grains of rice are no longer sticking together, 2 to 3 minutes more. Remove pan from heat and sprinkle green onion and cilantro over the fried rice; toss to mix.
  • Peel outside skin of cucumber with vegetable shredder to create a ragged design on the outside. Slice cucumber diagonally and arrange in a circle around the serving platter. Serve rice in middle of platter, topping with additional green onion and a dash of white pepper.

100g basmati rice or long-grain rice
85g frozen pea
1 tbsp sunflower oil
1 egg , beaten
50g finely diced chorizo , bacon or ham
1 garlic clove , chopped
3 spring onions , sliced on an angle
½ red pepper , deseeded and chopped
good pinch five spice powder
1 tsp soy sauce
100g beansprout (optional)
50g peeled prawn

Steps:

  • Boil the rice following pack instructions, adding the peas for the final min. Drain.
  • Heat half the oil in a wok. Pour in the egg and stir-fry until scrambled. Tip onto a plate and set aside.
  • Wipe the wok with kitchen paper, then heat the remaining oil. Toss in the meat, garlic, spring onions and pepper, and stir-fry until the pepper starts to soften. Add the five-spice, rice, peas and soy, then stir-fry for 5 mins more. Finally add the beansprouts, if using, the egg and prawns, and stir-fry to heat through.

  • SCRAMBLE: Heat a large skillet, wok or large dutch oven over medium heat. Add a tablespoon of butter and olive oil to the skillet. When the butter melts, add the beaten eggs and scramble them in the pan quickly, breaking up any large pieces. Remove the eggs to a bowl and set aside for later.
  • SAUCE: In a small bowl, stir together the soy sauce, oyster sauce, sesame oil, red pepper flakes (if using) and the white pepper; set aside for later.
  • SAUTE: Kick the heat up to medium-high. Add the remaining butter and oil to the skillet. When the butter melts, add the onions, carrots, and garlic and saute them for 3-4 minutes, stirring often to make sure nothing sticks or burns. Then, add the peas and continue to cook for one more minute.
  • FRY: Now add the rice over the veggies, add the scrambled eggs back into the pan and drizzle with the prepared sauce. Stir everything so the rice is evenly coated. Flatten the rice out into a think layer and allow the rice to sizzle for 30 seconds untouched. Stir and then let sit again for 30 seconds. Alternating gives the rice time to heat though. You’ll notice the rice starts to sizzle and pop in the pan. When the sauce is absorbed and the rice is popping, it’s done! Add the scallions during the last few seconds. Taste, adjust with additional soy sauce if desired. Serve warm.
