SPICY FLAT IRON STEAK RUB
This is a super flavorful rub with a Southwest taste for flat iron steak. You can use this recipe for grilling, broiling or stove top (fry pan or stove top grill) cooking. The steak is also great served with a few slices of avocado on top. Let the rub sit for up to 2 days, if possible, for the best flavor.

Steps:
- Mix the brown sugar, garlic powder, onion powder, chili powder, ancho chile powder, chipotle chile powder, salt-free seasoning blend, salt, and pepper together in a bowl until thoroughly blended. Sprinkle over both sides of the steak, and rub into the meat. Cover, and refrigerate at least 30 minutes, or up to 2 days.
- Before cooking, drizzle steak with vegetable oil, and rub the oil into the meat. Cook as desired.

SPICE-RUBBED GRILLED STEAK
I love this spice rub for steaks on the grill, but it's also great with lamb chops. For the best flavor, grind your own whole cumin seed.

- Prepare a grill fire. In a small bowl, combine the ground cumin, oregano, peppercorns, brown sugar, cinnamon, paprika, and salt. Pat the rub all over the steaks. Grill the steaks over a medium-hot fire, about 5 minutes per side, or until done to your liking.

SPICE-RUBBED STRIP STEAKS WITH SWEET-AND-SPICY ONION SAUCE

Steps:
- Mix together the paprika, chili powder, coriander, 1 teaspoon black pepper and 1 teaspoon salt in a small bowl. Sprinkle the steaks on both sides with the spice mixture. Refrigerate for 1 hour.
- Heat the olive oil in a large skillet over medium-low heat. Add the onions and sprinkle with salt and pepper. Cook, stirring occasionally, until soft and slightly golden, 10 to 15 minutes. Add the garlic, tomato paste and pepper flakes, and cook for 2 minutes. Stir in the beef broth, hot sauce and Worcestershire. Cook until thickened, about 5 minutes. Keep warm.
- Prepare a grill or grill pan for medium-high heat.
- Grill the steaks for 3 to 4 minutes per side for medium rare. Let rest for 5 minutes. Serve topped with the onion sauce.
SPICE-RUBBED STEAK SALAD WITH CREAMY RED WINE VINAIGRETTE
Steps:
- For the steak: Place the steak on a large plate. Mix together the salt, sugar, pepper and cayenne in a small bowl. Rub the spice mix all over the steak.
- Heat a grill or grill pan to medium-high heat. Brush with the vegetable oil.
- Add the steak and onions to the grill and cook, without disturbing, 2 to 3 minutes; flip and cook the other side for another 2 to 3 minutes. Remove the steak to a cutting board to rest before carving, 6 to 8 minutes. Transfer the onions to a cutting board and roughly chop.
- For the creamy red wine vinaigrette: Whisk together the vinegar, mayonnaise, honey, red pepper flakes and garlic in a large bowl. Slowly whisk in the olive oil until combined and smooth. Season with salt and pepper.
- For the salad: Add the lettuce, cheese, tomatoes and grilled onions to the bowl with the dressing and toss to coat. Serve with the sliced steak.
STEAK DRY RUB
This dry rub is perfect for grilled steaks and will add amazing flavor to any cut of meat. Extra rub can be stored at room temperature for later use.

Steps:
- Season both sides of the flank steak generously with salt, pepper, garlic powder, onion powder, and cayenne. Massage the spices into the steak well.
- In an oiled skillet, cook steak for 2-3 minutes on both sides (depending on desired doneness), flipping once.
- Remove steak from skillet and allow to rest on a cutting board for 10 minutes. Allowing the steak to rest before cutting it allows the juices to resettle.
- While the steak rests, combine the mustard, honey, lemon juice, olive oil, salt, and pepper in a small bowl. Whisk to combine. Set aside.
- Cut the steak against the grain.
- Assemble the salad with mixed greens, cherry tomatoes, avocados, shredded carrots, and red onion. Top with cut steak.
- Serve with dressing.

- Let the steaks come to room temperature. Pat dry with paper towels. Rub both sides of each steak with the oil and set aside.
- In a small bowl, combine the remaining ingredients with the orange peel, if desired, to create the spice rub. Sprinkle the rub on both sides of the steaks, pressing to adhere to the surface of the meat (some spice rub will be left over).
- If using a gas grill, preheat to medium- to medium-high, depending on your grill. If using a charcoal grill, distribute the hot charcoal or wood briquettes evenly under the cooking area for direct heat. Oil the grate.

- Mince garlic and mash to a paste with kosher salt. Stir together spices in a bowl, then stir in garlic and oil until a paste forms. Pat steak dry, then rub all over with paste. Marinate steak in a sealed large plastic bag, chilled, at least 6 hours.
- Bring steak to room temperature, about 30 minutes.
- While steak comes to room temperature, prepare grill for cooking. If using a charcoal grill, open vents on bottom of grill, then light charcoal.
