Reduced Sugar Spiced Apple Butter image

I was tired of finding apple butter recipes with more sugar than apples, so I adapted a few and perfected it. This recipe makes the house smell fantastic and tastes like fall. Enjoy! If you do not have an immersion blender: allow cooked apples to cool, transfer to a regular blender, and blend until smooth. Taste and adjust the flavor. If the texture is too liquidy still, return to slow cooker and allow it to reduce for about another hour more. This recipe is really about adjusting to your taste. If you like a lighter color, cook it less. If you want it highly spiced, throw on the cloves, etc. This recipe freezes well.

4 pounds apples, coarsely chopped
½ cup brown sugar
¼ cup apple cider vinegar
4 teaspoons ground cinnamon
½ teaspoon ground cloves
½ teaspoon salt

Steps:

  • Stir chopped apples, brown sugar, apple cider vinegar, cinnamon, cloves, and salt together in a slow cooker.
  • Cook on Low until the apples are soft enough to mash easily with a fork, 8 to 10 hours.
  • Puree apple mixture with an immersion blender until smooth.
  • Cook uncovered until some of the liquid reduces and the color is dark brown, about 1 hour.

1/2 cup apple butter
1/4 cup ruby port wine
2 tablespoons cider vinegar
1 teaspoon coarsely ground pepper
1/2 teaspoon salt
1 medium tart apple, peeled and cubed
1 celery rib, chopped
1 small red onion, chopped
1/3 cup dried apples, diced
1/3 cup dried cranberries
2 garlic cloves, minced
1 tablespoon cornstarch
3 tablespoons cold water

Steps:

  • Cut brisket in half; place in a 5-quart slow cooker., In a large bowl, combine the apple butter, wine, vinegar, pepper and salt. Stir in the tart apple, celery, onion, dried apples, cranberries and garlic. Pour over brisket. Cover and cook on low for 8-10 hours or until meat is tender., Remove meat to a serving platter; keep warm. Skim fat from cooking juices; transfer to a small saucepan. Bring liquid to a boil. , Combine cornstarch and water until smooth. Gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with meat.

2/3 cup butter or margarine, softened
1 egg
1 cup finely chopped pecans
1 cup apple butter

Steps:

  • Heat oven to 350°F. Line 9-inch square pan with foil, leaving 2 inches of foil overhanging at 2 opposite sides of pan; spray foil with cooking spray.
  • In large bowl, beat cake mix, butter and egg with electric mixer on low speed about 1 minute or just until crumbly. Stir in pecans, using hands if necessary. Reserve 1 cup mixture. Press remaining mixture in bottom of pan. Spread apple butter over crust. Crumble reserved pecan mixture over top.
  • Bake 30 to 35 minutes or until golden brown. Cool completely in pan on cooling rack, about 2 hours. Use foil to lift out of pan. Cut into 5 rows by 4 rows.

1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ cup chopped pecans
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda

½ cup butter, room temperature
1 cup white sugar
¾ cup apple butter
1 teaspoon vanilla extract
½ cup whole bran cereal or wheat germ
1 cup sour cream
2 eggs, room temperature

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan.
  • Prepare the topping by mixing together the brown sugar, cinnamon, nutmeg, and chopped pecans.
  • Sift together the flour, baking powder, baking soda, and salt.
  • Beat butter and sugar together in a large bowl with an electric mixer until light and fluffy; add eggs one at a time, thoroughly beating each egg into the butter mixture before adding the next. 1 beef brisket, 4 to 4 1/2 lbs
1 small onion, quartered
10 whole cloves
1 garlic clove, halved
1 cup apple butter
1/2 cup chablis or 1/2 cup other dry white wine
3 tablespoons prepared mustard
2 tablespoons green onions, finely chopped
1 1/2 teaspoons salt
3/4 teaspoon curry powder
1/2 teaspoon pepper

Steps:

  • Place brisket, onion, cloves, and garlic in a large Dutch oven; add water to cover. Bring to a boil; cover, reduce heat, and simmer 2 1/2 hours. Remove the brisket from the Dutch oven. Place the brisket in a roasting pan.
  • Combine the apple butter and the remaining ingredients in a medium saucepan. Cook over medium heat for 3 to 4 minutes, stirring occasionally.
  • Brush 1/2 cup apple butter mixture over the brisket. Bake, uncovered, at 325 degrees for 30 minutes, basting occasionally with the remaining apple butter mixture.
