SPICED APPLE-CRANBERRY CREPES

Steps:
- In a large skillet, saute the apples, cranberries, sugar, pie spice, orange zest and lavender in butter until fruit is tender. Set aside., In a large bowl, combine the eggs, milk, butter and vanilla. Combine the flour, sugar, salt and baking powder; add to egg mixture and mix well. Cover and refrigerate for 1 hour., Heat a lightly greased 8-in. nonstick skillet; pour 2 tablespoons batter into the center of skillet. Lift and tilt pan to evenly coat bottom. Cook until top appears dry; turn and cook 15-20 seconds longer. Remove to a wire rack. Repeat with remaining batter, greasing skillet as needed. When cool, stack crepes with waxed paper or paper towels in between., Spread each crepe with 2 teaspoons cheese; top with 3 tablespoons apple mixture and roll up. Dust with confectioners' sugar if desired.

SPICED CRANBERRY APPLE CHUTNEY
The combination of fresh cranberries, Granny Smith apples, and spices makes for a lovely alternative to regular cranberry sauce. It is divine served over baked brie. This recipe has yielded many compliments, as I have given it as Christmas gifts in pretty jars or served at Thanksgiving dinner.

Steps:
- Place the cranberries, sugar, and water in a large saucepan, and bring to a boil. Reduce heat to medium, and cook until all the cranberries have popped, 8 to 10 minutes. Stir in the apple, celery, orange zest, orange juice, pecans, raisins, ginger, cloves, and salt, and cook over medium heat, stirring frequently, until the celery is tender and the sauce is reduced, about 35 minutes. Turn off the heat, cover the saucepan, and let the chutney stand to thicken, about 15 minutes. Serve warm.

This is an easy way to enjoy a yummy dessert that looks like you spent hours in the kitchen. Using canned sliced apples makes this a breeze to put together. Topping with vanilla ice cream makes it a winner!

- Preheat the oven to 350 degrees F (175 degrees C). Butter an 8-inch square glass baking dish and set aside.
- Drain apple slices and place in the baking dish. Randomly scatter cranberries among the apples.
- Combine flour, sugar, and butter in a food processor. Process until pea-sized crumbs are formed, stopping just short of it being cookie dough. Cover the apples with the crumb mixture.
- Bake in the preheated oven until golden brown, about 45 minutes. Remove from the oven and sprinkle with cinnamon. Serve warm topped with a scoop of ice cream.

BAKED APPLES WITH SPICED CRANBERRY RELISH
Steps:
- Preheat the oven to 400 degrees F.
- In a small saucepan, heat the orange and lemon juices with 1/2 cup of the port. Add the zest and cook until tender, about 10 minutes. Reserve.
- In a medium saucepan, combine the cranberries, onion, 2 cups port, ginger, brown sugar, salt, pepper, and cinnamon. Over medium-high heat, cook until the relish thickens, 15 to 20 minutes, stirring occasionally. Stir in the remaining 1/2 cup port, the orange liqueur, and the reserved orange and lemon juice and zest mixture. Set aside.
- Cut off the top 1/4-inch of each apple. Using a melon baller, remove the core of the apple, being careful not to pierce the sides or bottom of the apples, to make apple "cups". Place the apple cups in a small baking dish. Spoon the cranberry relish into the apples. Spoon the excess relish around the apples. Cover with foil and bake until apples are tender, about 30 to 45 minutes.

- In a large bowl, combine the flour, sugar, salt and cardamom; cut in butter and shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Divide dough in half so that one portion is slightly larger than the other; wrap each in plastic wrap. Refrigerate for 2 hours or until easy to handle., Roll out larger portion to fit a 9-in. deep dish pie plate. Transfer pastry to pie plate. Trim pastry even with edge. Beat egg white and water; brush over pastry., For filling, in a large bowl, combine ice water and lemon juice. Add apples; let stand for 20 minutes. Combine 1/2 cup sugar, 1/3 cup brown sugar, cornstarch, tapioca, cinnamon and nutmeg., Drain apples; pat dry. Combine apples and cranberries. Add sugar mixture; toss to coat. Let stand for 15 minutes. Spoon filling into crust; sprinkle with remaining brown sugar and dot with butter., Roll out remaining pastry to fit top of pie. Place over filling. Trim, seal and flute edges. Cut slits in pastry. Beat egg yolk and water; brush over pastry. Sprinkle with remaining sugar., Bake at 425° for 20 minutes. Reduce heat to 350° bake 40-45 minutes longer or until crust is golden brown and the filling is bubbly. Cover with foil during the last 20-30 minutes to prevent overbrowning if necessary. Cool on a wire rack.

- Mix the juices, apples, cranberries,honey and cinnamon stick in the crock pot.
- Cover and cook on low for 4 hours or until liquid is absorbed and fruit is tender.
- Remove and discard cinnamon stick halves.

- Preheat oven to 350* and grease and flour a 10-inch Bundt pan or 4-liter tube pan.
- In a large mixer bowl, combine cake mix, eggs, applesauce, butter and water. Beat on low speed for 1 minute to blend, then on medium speed for 2 minutes. Stir in diced apples and cranberries. Spread batter evenly in prepared pan.
- Bake 55 to 65 minutes or until a cake tester inserted in center comes out clean.
- Cool 25 minutes in pan on a wire rack, then remove cake and cool completely.
