- Pour milk into a small bowl; place mixer beaters in the bowl. Cover and freeze for 30 minutes or until ice crystals begin to form., Add the sugar, cinnamon and vanilla; beat until thick and fluffy. Divide between two mugs; add coffee. Garnish with nutmeg and cinnamon sticks. Serve immediately.

Note: Dark-roast coffee doesn't work as well with the spices in this recipe. Colombian or another mild coffee works best. Healthier version with fat-free half-n-half

- With an electric mixer on medium-high speed, beat the cream in a medium bowl until it starts to mound softly, then beat in the confectioners' sugar and brandy. Continue beating until it is just firm. If not using it right away, cover the bowl of whipped cream with plastic wrap and refrigerate it. (The whipped cream can be prepared 1 day ahead.)
- To brew the coffee, use a drip-style coffeepot (preferably an automatic drip coffeemaker) and line the filter cup with a paper filter. Put the coffee, cardamom, sugar, cinnamon, and nutmeg in the filter. Mix gently with a spoon to combine the spices with the coffee. Add the water to the water chamber, and brew accordingly to the manufacturer's directions.
- To serve, pour the coffee into 8 warm cups and garnish each cup with a generous dollop of the whipped cream. The cream will melt as it floats on top. Serve immediately.

BRANDIED VIENNESE COFFEE

- In the top of a double boiler set over simmering water, melt the chopped chocolate with the cream, stirring, and stir the mixture until it is smooth. Add the coffee, heated if necessary, and the brandy in a stream, stirring, and stir the mixture until it is combined well. Divide the coffee among four 8-ounce mugs, top each drink with a dollop of the whipped cream, and sprinkle the whipped cream with the grated chocolate.

- Combine milk, pumpkin puree, pumpkin spice syrup, 1/4 teaspoon pumpkin pie spice, and sweetener in a saucepan. Bring to a simmer over medium-high heat. Stir until well combined and heated through.
- Combine boiling water, coffee granules, sugar, and remaining 1/4 teaspoon pumpkin pie spice in a tall container. Whip with an immersion blender until foamy, about 2 minutes.
- Pour pumpkin-milk mixture into a mug and top with coffee foam.
