SPICED ICING
Hanging out and baking on a rainy Friday in my friend's apartment, we got creative with a batch of brownies. After adding tons of chocolate chips and some M+M's, I decided they still weren't sweet enough and needed frosting, too. I had been eyeing the bottle of Captain Morgan's sitting out on the coffee table (yeah) and suddenly, I had a beautiful idea for frosting... (keep in mind i didn't measure anything when making this, so no need to be precise on amounts).

Steps:
- In medium-sized bowl, mash butter with a fork until it's soft.
- Add 1 cup powered sugar and mix with fork until there's no dry sugar left.
- Add the rum and beat with electric mixer on medium until mixture is somewhat smooth.
- Slowly add in the rest of the sugar, adding more or less depending on the consistancy you'd like.
- Beat with mixer until completely smooth.
- This makes enough frosting for a batch of brownies (um, or a snack -- ), but I'm positive it could be doubled or tripled easily; it's pretty hard to mess up frosting.

SPICE CAKE WITH FROSTING
My Grandma Susie would take this wonderful cake to barn raisings and to barn dances, where my Grandpa Ward would also take his fiddle. I hope my two grandchildren will have such warm memories of me when they are grandparents.

FROSTED SPICE COOKIES
This recipe has been handed down through many generations of my husband's family. The cookies were always in his grandmother's cookie jar when he'd visit. Today, he enjoys them more than ever—and so do I. —Debbie Hurlbert, Howard, Ohio

SPICED PECAN CAKE WITH PECAN ICING
This cake is a lot of work !!! But it is well worth it for that special occasion! Although I found this in the March, 1984 issue of Bon Appetit, when it first came out, but it REALLY comes from Paul Prudhomme's first cookbook, the one that started the whole international Cajun cooking craze. Regardless of quoted times, this takes all day to make, on and off.

- Arrange pecan halves around top edge.

- Note: If this does not sound rich enough for you, it can be made even richer.
- To do so, increase all ingredients used to candy the pecans by one half.
- After cooling, reserve one cup of the candied pecans and add these to the icing at the same time as the toasted pecans are added.

- Brown butter: In a light bottomed saucepan, add equal-ish sized cubes of butter and melt on medium. Let it brown for about 7-10 minutes or until there’s brown bits at the bottom and it smells nutty. Stir or swirl the pan occasionally. It will froth a bit, but that’s normal. Let the brown butter cool for 5 minutes, meanwhile, make the rest.
- Cream together: Add all the other ingredients to a large bowl and mix using either a stand mixer or hand mixer. Mix 2-3 minutes before adding in the brown butter. Mix until creamy.
- Tips: Keep in an airtight container in the fridge for 2 weeks. Double the recipe if you want a lot of frosting on your cupcakes.
