Pears are among my favorite fall fruits. This lovely dessert makes them especially spectacular. Easy elegance at its best-and that's important around the holidays.

7 cups water
1-1/4 cups packed light brown sugar
1/2 cup whole-berry cranberry sauce
1/3 cup honey
9 orange-flavored black tea bags
12 medium pears
SAUCE:
1/2 cup creme fraiche or sour cream
1 tablespoon confectioners' sugar
1 tablespoon grated orange zest

Steps:

  • In a Dutch oven, combine the water, brown sugar, cranberry sauce and honey. Bring to a boil. Remove from the heat; add tea bags. Cover and steep for 5-8 minutes., Meanwhile, core pears from bottom, leaving stems intact. Peel pears; cut a thin slice from bottom to level if necessary. Remove and discard tea bags. Add pears to the pan. Bring to a boil. Reduce heat; cover and simmer for 12-15 minutes or until pears are tender. Remove pears with a slotted spoon and keep warm., In a small saucepan, bring 2 cups tea mixture to a boil; cook until liquid is reduced to 1/2 cup, about 20 minutes., In a small bowl, combine the creme fraiche, confectioners' sugar and orange zest. Place pears on dessert plates. Drizzle with syrup and serve with sauce.

Quick and easy to make poached pears are a classic of the French kitchen they will become a regular at meal times.

4 medium pears (firm)
2 cups white wine
3 1/2 cups water
1 cinnamon stick
1 vanilla bean (or 1/2 teaspoon vanilla extract)
1 teaspoon lemon zest
1 teaspoon lemon juice
2 cups granulated sugar (white)

Steps:

  • Gather the ingredients.
  • Thinly peel the pears, making sure to keep the stem intact. Slightly slice the bottom of the pears so they will stand up in the pan and when serving.
  • In a large and tall saucepan, stir together the white wine , water, cinnamon stick, vanilla bean, lemon zest, and lemon juice. Bring the mixture to a simmer over medium-high heat.
  • Once the liquid is simmering, add the prepared pears and place them standing on the pan. The liquid should cover most of the pears' height.
  • Poach the pears, uncovered, for 7 to 9 minutes until their meat is slightly tender, but they are still firm enough to hold their shape. Watch this process carefully as you do not want the pears to overcook or they will collapse.
  • Remove the pears from the poaching liquor with a slotted spoon and place them on individual serving plates.
  • Return the poaching liquid to a simmer. Add the sugar and allow the mixture to reduce in volume by half or about 6 to 8 minutes. The syrup is ready when it is thick enough to coat the back of a spoon.
  • Remove the cinnamon stick and vanilla bean from the syrup and strain the liquid through a fine sieve.
  • Drizzle each pear with the wine syrup and add any other topping that you'd like.

1/3 cup sugar
3 cups water
Zest and juice of 1/2 orange, zest removed with a vegetable peeler cut in wide strips
Zest and juice of 1/2 lemon, zest removed with a vegetable peeler cut in wide strips
2 pieces star anise
1 piece thin cinnamon stick (about 1½ inches long)
1 piece vanilla bean (about 2 inches long), split, seeds removed with a paring knife, seeds and bean reserved and scraped
3 medium apples or pears, peeled, halved, and cored

Steps:

  • Put all the ingredients except the fruit in a large saucepan, turn the heat to medium-high, and bring to a boil. As soon as the liquid boils, reduce the heat to medium-low and simmer the syrup for 5 minutes.
  • Carefully drop the apples or pears into the pan and bring the syrup back to a simmer. Cover the pan and cook until the fruit can be pierced easily with a thin knife, 10 to 15 minutes, depending on the fruit; check early and often. Using a slotted spoon, transfer the apples or pears to a bowl.
  • Turn up the heat and boil the syrup for another 10 minutes, at which point you'll have about 1¼ cups. Pour the syrup over the fruit, cover, and let cool until slightly warm or at room temperature.

1 cup red wine
2 tablespoons lemon juice
1 cup sugar
1 cinnamon stick
1 teaspoon whole allspice
4 -5 firm pears, peeled with stalks attached
1 cup fresh whipped cream

Steps:

  • Combine the water, red wine, lemon juice, sugar and spices in a medium saucepan and bring to a boil.
  • Reduce heat and simmer gently for 5 minutes.
  • Place the pears in an ovenproof dish and pour the syrup over them.

2 cups dry red wine, such as cabernet or merlot
1/4 cup plus 1 tablespoon sugar
1 orange, juiced (about 1/2 cup)
One 1 by 3-inch strip orange zest
1 cinnamon stick
2 cloves
4 firm, ripe pears

Steps:

  • In a 4-quart saucepan, combine wine, sugar, orange juice, zest, cinnamon stick and cloves. Bring to a boil, reduce heat and simmer for 5 minutes. While liquid is simmering, peel pears, leaving stem intact and being careful not to blemish the flesh of the pears. Slice 1/2-inch off the bottom of the pears to create a flat bottom. Gently place pears in poaching liquid, cover, and simmer for 15 to 20 minutes, turning every 5 minutes to ensure even color, until pears are cooked but still firm. Remove saucepan from flame, uncover and cool with pears upright in pan. Once cool, cover and chill in refrigerator at least 3 hours or up to 24 hours, turning occasionally, if desired. Gently remove pears from liquid and allow to come to room temperature. Meanwhile, reduce liquid by about half over a medium-high flame for 15 minutes, until liquid is thicker and slightly syrupy. Remove from flame and let liquid come to room temperature. Drizzle each pear with 2 tablespoons syrup and serve.

This fragrant fruit dessert is served with star anise yogurt.

6 ripe peaches
5 cups cold water
1 cinnamon stick
4 star anise, left whole, plus 2 teaspoons ground star anise
4 thin slices fresh ginger
8 ounces sugar
14 ounces Greek-style yogurt
Flaked toasted almonds (blanched and sliced), for garnish

Steps:

  • Score a cross shape in the bottom of each peach. Put the peaches into a large pot of boiling water, for 30 seconds, then transfer the peaches to a large bowl filled with cold water to refresh. Set aside for another 40 to 45 seconds, then drain the peaches, and peel using a sharp knife.
  • Put the measured cold water, cinnamon, whole star anise, ginger slices, and sugar into a large saucepan, stir well, and bring to a boil. Reduce the heat, and simmer the mixture, stirring occasionally, until the sugar has dissolved and the mixture resembles syrup.
  • Add the peaches to the syrup mixture, and cover them with a disk of greaseproof or parchment paper measuring the same diameter as the pan. Cover the pan with a lid, reduce the heat to a simmer, and simmer for 15 to 20 minutes, or until the peaches are cooked through (they will be soft when pricked with a knife.) Remove the peaches, and set aside on a warm plate. Continue to boil the syrup until its volume has reduced to about 1 cup. Set aside to cool.
  • Brush the peaches with a little of the syrup. Stir half of the remaining syrup and the ground star anise into the Greek-style yogurt until well combined, adding more syrup as necessary, to taste.
  • To serve, cut each of the spiced poached peaches in half and place 2 of the peach halves onto each of the serving plates. Spoon a portion of the star anise yogurt alongside each peach. Drizzle a little syrup over each peach. Sprinkle over the toasted almonds.

200g good-quality dark chocolate
142ml double cream
150ml full-fat milk
pinch ground cinnamon

  • In a pan big enough to hold the pears snugly, tip in all the ingredients except the pears. Half fill the pan with water and bring to the boil. Simmer for 10 mins to infuse, drop in pears, cover and gently poach for about 30 mins until soft. Turn off the heat and set aside. The pears can be poached up to 2 days ahead and kept in the poaching syrup in the fridge.
  • To make the chocolate sauce, tip the chocolate into a heatproof bowl. Bring the cream, milk and cinnamon to the boil and pour over the chocolate. Stir until the chocolate has melted. To serve, drain the pears and, holding them by the stem, dip them in the chocolate sauce to completely cover. Serve each pear with a generous scoop of vanilla ice cream.

SPICED BAKED PEARS



Spiced Baked Pears image

This is a perennial favorite for Thanksgiving! It's adapted from a recipe for Spiced Baked Apples by Lorraine Chausse on allrecipes. The pears make a really lovely presentation for dinner parties and can cook while you eat dinner. The recipe states 6 servings, but you can also halve them and just ladle the sauce over the half. These are yummy served by themselves or with some vanilla ice cream.

9 tablespoons craisins
6 tablespoons walnuts, chopped
3/4 teaspoon orange peel, grated
3/4 cup brown sugar, packed
3/4 cup water
3 tablespoons butter
3/4 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
6 bartlett pears

Steps:

  • Core the pears and set inside a baking dish. An old fashioned peeler with the pointy tip works well for this.
  • Combine the craisins, walnuts and orange peel. Set aside.
  • In a saucepan, combine the rest of the ingredients over medium-low heat for 2-5 minutes or until combined and bubbly.
  • Take a pinch of your craisin mix and stuff into bottom of each pear. Stir in the rest of the craisin mix into your bubbly sauce.
  • Ladle the hot sauce into each pear.
  • Bake, uncovered, in a 350 degree oven till the pears are soft. (Usually 30-40 minutes) Check on the pears halfway through. If they look like they are going to burn, cover with foil till the last 5 minutes.
  • Let stand at least 5 minutes. Put each pear on a plate then ladle some of the escaped sauce over the pear and drizzle around the plate for presentation.
  • Tip: If you don't have any orange peel handy, substitute orange juice for the water.
  • Tip: The sauce will escape through the bottom. Don't sweat it. Just ladle it back in after baking. The nut/craisin mix in the bottom helps with this.
  • Tip: I know the baking time is a little ambiguous, be we move around a lot and I've made this in several different ovens. It's hard to "kill" these. Just test the pears with a fork. When the tops get that pretty caramel color and they're soft, they're ready.
  • Tip: This works with any pear, just adjust the baking time depending on the firmness of the pear. Firmer=longer. I like Bartlett pears because they're fat and stand up on their own better.

SPICED RED WINE POACHED PEARS

Here, the poaching syrup is red wine, honey and good cold-weather spices: cloves, cinnamon and star anise. You can serve the pears soon after they're made or you can cover and refrigerate them in their syrup and serve them chilled or at room temperature. They're good on their own or alongside whipped cream or crème fraîche.

  • Simmer for 15 to 20 minutes - the pears should still be slightly firm but easily pierced with the tip of a knife; transfer them to a bowl. Boil the syrup for 5 minutes, pour over the fruit and discard the spices. Serve slightly warm, at room temperature or chilled, with or without cream.

1 bottle red wine
225g caster sugar
1 cinnamon stick, halved
fresh thyme sprig, plus sprigs to seve
6 pears, peeled, but kept whole with stalk intact

Steps:

  • Halve the vanilla pod lengthways, scrape out the black seeds and put in a large saucepan with the wine, sugar, cinnamon and thyme. Cut each piece of pod into three long thin strips, add to pan, then lower in the pears.
  • Poach the pears, covered, for 20-30 mins, making sure they are covered in the wine. The cooking time will very much depend on the ripeness of your pears - they should be tender all the way through when pierced with a cocktail stick. You can make these up to 2 days ahead and chill.
  • Take the pears from the pan, then boil the liquid to reduce it by half so that it's syrupy. Serve each pear with the cooled syrup, a strip of vanilla, a piece of cinnamon and a small thyme sprig.
