- Special equipment: a 60-ounce (7 1/2 cups) pitcher
- For the syrup: In a small saucepan, bring the orange juice and sugar to a boil over medium-high heat. Simmer, stirring occasionally, until the sugar has dissolved, about 5 minutes. Remove from the heat and cool for 20 minutes.
- For the tea: In a small saucepan, bring the water to a boil. Add the tea bags and remove the pan from the heat. Allow the tea to steep and cool to room temperature, about 20 minutes. Remove the tea bags and discard. Pour the tea and syrup into a pitcher and refrigerate until ready to serve.
- To serve: Pour the sparkling water into the pitcher and add the orange slices. Pour the tea into 4 ice-filled glasses. Garnish with fresh mint, or basil, and serve.

- In a medium saucepan, combine water, orange slices, cinnamon and cloves. Bring just to boiling; remove from heat. Add tea bags. Let stand, covered, for 5 minutes. Remove tea bags; discard. Strain tea mixture through a fine mesh strainer; discard orange slices and spices.
- In a glass pitcher, combine strained tea mixture, orange juice, pomegranate juice and sugar, stirring to dissolve sugar. Cover and chill for at least 4 hours or up to 24 hours.
- Place 2 orange wedges and 1 lime wedge onto each skewer. Serve tea in glasses filled with ice cubes. Add fruit skewers to each glass.

ORANGE POMEGRANATE ICED TEA

- In a large saucepan, combine water, orange slices, cinnamon, and cloves.
- Bring to a boil, add sweetener, and stir until dissolved.
- Remove from heat, add tea bags, and cover.
- Steep for 5 minutes, then strain mixture.
- Combine tea with orange juice and pomegranate juice.
- Cover and allow to chill (4 hours or overnight).
- Serve with orange and lime wedges over ice and enjoy!
- Pour into popsicle molds and freeze (6-8 hours, or overnight).
- Once frozen, remove desired pops from mold and enjoy! (You may need to allow pops to sit outside of the freezer for a minute or two in order to easily remove from mold.) You can leave pops in molds in freezer for a few days.
- For longer storage, remove from molds and place in individual freezer bags, or in an airtight plastic container with layers of wax paper or plastic wrap in between. Will last 3 to 4 weeks stored this way.
- Yields 6 cups of orange pomegranate iced tea, or ~12 iced tea popsicles.

- In a mixing bowl, crush or muddle the lemon and lime juices with the brown sugar, blending the juices and sugar together. Next, thin slice a few mint leaves and add to the juices. Then add the sweet tea, pomegranate juice and cranberry juice and mix well. After mixing, serve over ice and garnish with fresh mint.

- Prepare the basic simple syrup as directed, adding the strips of orange zest before bringing it to a boil. Remove from the heat and let steep for 30 minutes.
- Strain the orange syrup into a large measuring cup.
- In a large saucepan, bring the cold water to a boil.
- Remove from the heat and add the tea bags, then let steep for 5 minutes. Remove the tea bags and let them cool to room temperature. Transfer to a bowl and refrigerate until chilled.
- Pour the tea and pomegranate juice into a large pitcher. Stir in ¾ cup of the orange syrup, or more to taste. Refrigerate the rest for later use.
- Serve in 8 tall glasses over ice, garnished with a slice of orange. Enjoy!

SPICED ORANGE TEA, HOT OR COLD
I found this recipe in a book I picked up at a thrift shop. I'm not really a tea drinker so like to find ways to get those good anti-oxidants without the tea taste. This is all orange & spice so I quite liked it. I didn't have whole cloves so made mine with a dash of ground cloves instead. I had one cup warm & then put the rest in the fridge to have iced, it was nice both ways.

- Combine water, sugar, cloves & cinnamon in a saucepan, mix & bring to the boil.
- Remove from heat & add tea bags, infuse for 4 minutes.
- Strain & stir in remaining ingredients.
- Place over a low heat to keep warm but do not boil.
- Discard orange peel & add honey to taste, (I added about 1 tsp per cup).
- Serve with long cinnamon sticks as mixers.

POMEGRANATE ICED TEA
This mocktail can be made with freshly squeezed juice from a pomegranate or by using Pomegranate Juice. To juice the pomegranate, cut it in half (as you would a grapefruit) and juice using a citrus reamer or a juicer. Pour mixture through a cheesecloth-lined strainer or sieve. One large pomegranate will produce about 1/2 cup of juice. I got this from a pomegranate site.
