- Preheat the oven to 400 degrees F. Spread the walnuts out on a baking sheet and bake until toasted, about 8 minutes. Let cool, then finely chop.
- Meanwhile, beat the heavy cream, pumpkin pie puree and confectioners' sugar together in a large bowl with an electric mixer until stiff peaks form, about 5 minutes.
- Spread a fifth of the pumpkin mixture on the bottom of a 9-by-13-inch baking dish, followed by a layer of gingersnap cookies (4 cookies wide by 7 cookies long). Repeat 3 more times, for 4 layers of pumpkin and cookies. Finish with the remaining pumpkin mixture. Refrigerate for at least 4 hours or overnight. Sprinkle the chopped walnuts and mini chocolate chips on top of the cake right before serving.

- In a large saucepan, sprinkle gelatin over milk; let stand 1 minute. Heat and stir over low heat until gelatin is completely dissolved. Whisk in pumpkin, brown sugar, pie spice and salt; cook and stir over medium heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes. Remove from heat., In a small bowl, whisk a small amount of hot mixture into egg yolks; return all to pan, whisking constantly. Bring to a gentle boil; cook and stir 2 minutes. Immediately transfer to a clean bowl; cool 30 minutes. Press plastic wrap onto surface of mixture; refrigerate 30 minutes., In a small bowl, beat cream until it begins to thicken. Add sugar; beat until soft peaks form. Fold into pumpkin mixture. Refrigerate, covered, until cold., Spread scant tablespoonfuls of pumpkin mixture over wafers; arrange in a 8x8-in. baking dish, closely overlapping wafers. Repeat with remaining pumpkin mixture and wafers. Sprinkle top with wafer crumbs. Refrigerate 8 hours or overnight.

PUMPKIN SPICE CAKE I
If you like spice cake, this is very good. Even if your family doesn't like pumpkin, I promise they'll never know there's pumpkin in this delicious cake. I even used this recipe for cupcakes at Thanksgiving so everyone could get a little more cream cheese frosting.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10-inch Bundt pan. Sift together the flour, baking soda, salt, cinnamon, nutmeg, allspice, and ginger. Set aside.
- In a large bowl, cream together the shortening, eggs, brown sugar and white sugar until light and fluffy. Beat in the pumpkin puree. Beat in the flour mixture. Stir in the chopped pecans. Pour batter into prepared pan.
- Bake in the preheated oven for 60 to 65 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

PUMPKIN ICEBOX PIE
This easy version of pumpkin pie doesn't rely on custard for its silky texture. Instead, a small amount of cream cheese and gelatin is used to set the filling.

- Make crust: Preheat oven to 325 degrees. In a food processor, combine graham crackers, sugar, and salt; process until fine crumbs form. With machine running, slowly pour butter through feed tube and process until mixture resembles wet sand. Press crumbs in bottom and up sides of a 9-inch square baking dish. Bake until crust is deep golden brown and fragrant, 20 minutes. Let cool completely in baking dish on a wire rack.
- Meanwhile, make filling: Place 1/4 cup cold water in a small bowl. Sprinkle gelatin on top and let stand 5 minutes. In a large bowl, whisk together pumpkin puree and cream cheese until smooth. In a small saucepan, combine evaporated milk, brown sugar, cinnamon, nutmeg, and salt; bring to a simmer over medium. Add gelatin mixture and stir until completely dissolved. Pour milk mixture into pumpkin mixture and whisk until completely smooth.
- Pour filling into cooled crust and refrigerate until chilled and completely set, about 3 hours (or wrap tightly with plastic and refrigerate, up to 2 days). To serve, whip cream with confectioners' sugar until soft peaks form. Top pie with whipped cream and sprinkle with nutmeg.

SPICED PUMPKIN COOKIE CAKE
Two spiced shortbread cookies are soaked with a little coffee, then layered with a light pumpkin whipped cream in this rich, elegant icebox cake. You don't need to be precious with the cookies or the cream while preparing them - they're fairly foolproof - yet they come together into a stunning make-ahead dessert. If you don't have pumpkin pie spice but have a relatively well stocked spice cabinet, you can make your own homemade version (see Tip).

- Heat the oven to 375 degrees. In the bowl of a stand mixer fitted with a paddle attachment, add the butter, 1 cup confectioners' sugar, pumpkin pie spice, 1 teaspoon vanilla extract and the salt. Beat on low speed until most of the sugar has been incorporated into the butter, then increase the speed to medium-high and beat until the ingredients are completely combined, stopping to scrape down the sides of the bowl and beater as needed.
- Turn the mixer off, add the flour, and beat on low, slowly increasing the speed until the flour is incorporated, scraping down the sides of the bowl as needed. Add 1/4 cup of the heavy cream and beat on medium-high until the mixture is smooth.
- Divide the mixture between two 9-inch cake pans. Using damp hands, press the mixture into the bottom and to the edges of each pan to create a flat layer. (It doesn't need to be perfect; any fingerprints will disappear during baking or get covered with whipped cream.)
- Bake for 20 to 25 minutes or until the shortbread is deep golden brown. Remove from the oven, and, using a fork, prick all over with a fork while the cookies are still soft. Allow to cool in the pans for at least 30 minutes, then run a butter knife along the edges of the pans to loosen the cookies. Carefully invert the cookies onto a wire rack to finish cooling.
- Wash and dry the bowl of the stand mixer and set up the whisk attachment. Add the remaining 1 1/2 cups heavy cream, 1/2 cup confectioners' sugar and 1 teaspoon vanilla extract to the bowl and beat on medium speed, slowly increasing the speed to medium-high and whisking until the cream is thick. Increase the speed to high and add the pumpkin purée 1 tablespoon at a time until the cream is stiff. (This happens quickly, so be careful not to overwhip!)
- Assemble the cake by placing one of the cookies on the serving tray and slowly spooning 1/4 cup of the coffee overtop. Once the coffee has soaked into the cookie, add half the whipped cream mixture on top, spreading it to the edges. Repeat with the remaining cookie, coffee and whipped cream.
- Sprinkle the top layer of whipped cream with more pumpkin spice, and cover the cake loosely with plastic wrap. Refrigerate the cake overnight - ideally a full 24 hours, so the cookies soften - and for up to 2 days before serving, for the best results.

- To serve: Warm remaining dulce de leche in microwave, thinning with a little milk or cream if needed. Slice cake crosswise into eight slices (through the center of each cookie stack), cleaning the knife between each cut. Garnish each slice with a drizzle of dulce de leche and a sprinkle of cinnamon.
