RUM BALLS
I wanted a good rum ball with a lot of kick, so I sat down and came up with this recipe. I didn't realize how good these were until one year I didn't make them for work. I just about got lynched! Needless to say, I've made them every year since (about 20 years). These are best if you use Meyers Original Dark Rum® chilled, and Nabisco® 'Nilla wafer cookies. They are at their peak if you make them 2 days in advance. Remove from fridge 30 minutes before serving.

Steps:
- Place vanilla cookies in a food processor and process into fine crumbs.
- Heat chocolate chips and corn syrup together in a saucepan over low heat. Cook, stirring often, until chocolate is melted and smooth, about 5 minutes. Remove from heat and stir in rum and confectioners' sugar until smooth. Fold in cookie crumbs; dough will be sticky.
- Place saucepan in the refrigerator until dough is firm and easy to roll, about 15 minutes. Cover 2 plates with waxed paper; dust with confectioners' sugar.
- Roll dough into 1-inch balls and place on the prepared plates. Dust rum balls with confectioners' sugar. Refrigerate until firm, about 30 minutes.
- Remove rum balls from refrigerator and transfer to a resealable bag, including the extra confectioners' sugar. Seal the bag and shake to coat the rum balls completely with confectioners' sugar.

SPICED RUM BALLS
Something of a holiday favorite around our friends and family. In fact, we get pretty competitive about whose balls are the best... The recipe is infinitely customizable. You can substitute vanilla wafers or graham crackers for the ginger snaps, walnuts for the pecans, and/or other liqueurs for the rum, and add spices or cocoa powder to the powdered sugar for extra fun. This is my favorite variant, though. My favorite rum to use in these is Gosling's Black Seal, though Pyrat is not bad. These are easy to make, but really sticky. The recipe makes 24-36, depending on how big your balls are.

RUM BALLS
Steps:
- In a mixing bowl fitted with the paddle attachment, or by hand, mix together the cake crumbs, cocoa powder, powdered sugar, and nuts. Stir in the 2 tablespoons of honey and the rum. Using your hands, try to form the mixture into a ball. If the mixture won't hold together add a little more honey. Roll the mixture into 1-inch balls, then roll them in powdered sugar or melted chocolate, and let them set up. Then, let them age or ripen 24 hours.
CHEESY BACON MASHED POTATO BALLS & SPICED RUM-FASHIONED RECIPE BY TASTY
Here's what you need: Captain Morgan® Spiced Rum, maple syrup, brown sugar, thick cut bacon, cold mashed potatoes, green onion, monterey jack cheese, panko breadcrumbs, freshly ground black pepper, kosher salt, garlic powder, large eggs, all purpose flour, vegetable oil, green onion, granulated sugar, Captain Morgan® Spiced Rum, angostura bitters, ice, orange peel, cherry

Steps:
- Make the rum-glazed bacon: Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Add the Captain Morgan® Spiced Rum, maple syrup, and brown sugar to a small bowl and whisk until the sugar is dissolved.
- Arrange the bacon in a single layer on the prepared baking sheet and brush the rum glaze over one side. Place in the oven for 6 minutes, then flip the bacon, brush the other side with the rum glaze, and return to the oven for another 6 minutes. Continue flipping and glazing until the bacon is crisp and browned, about 15-20 minutes more. Transfer to a plate until ready to use.
- Make the mashed potato balls: Chop 6 slices of rum-glazed bacon and add to a large bowl with the mashed potatoes and green onions, and mix until well combined.
- Using a 1-tablespoon scoop with a spring release, scoop 1 tablespoon of the potato mixture into your hand. Place a cube of Monterey Jack cheese in the center, then top with another tablespoon of the potato mixture. Roll into a ball, completely encasing the cheese. Repeat with the remaining ingredients to make 12 stuffed potato balls.
- Add the bread crumbs, pepper, salt, and garlic powder to a shallow bowl and mix to combine. Beat the eggs in another shallow bowl. Add the flour to a third shallow bowl.
- Roll the potato balls in the flour, then the eggs, then coat in the bread crumbs.
- Heat the vegetable oil in a large, high-walled pan over medium-high heat until it reaches 375°F (190°C).
- Working in batches, gently add the potato balls to the hot oil and fry, turning frequently, until golden brown, 4-6 minutes. Transfer to a paper towel-lined plate to drain while you repeat with the remaining potato balls and make the Old-Fashioned.
- Make the rum Old-Fashioned: Add the granulated sugar, Captain Morgan® Spiced Rum, Angostura bitters, and 1 ice cube to a small rocks glass. Stir with a spoon until the sugar dissolves. Fill the glass with more ice and garnish with the orange peel and cherry.
- Thinly slice the remaining 2 strips of rum-glazed bacon, then sprinkle over the potato balls, along with the green onion. Serve alongside the Captain Morgan® rum Old-Fashioned.
- Enjoy!

- Chop up the dates in a Food Processor if you have one. You may need to do them in a couple of batches because they are so sticky but you will get there.
- Process all of the nuts and coconut. They can all go together. The pieces need to be small so the balls roll up nicely.
- Melt the chocolate and drizzle half of it over the mixtures. Stir it in. Add the rest of the chocolate and mix it all in too. I use my fingers and make sure it is all blended well.
