Roasted Broccoli with Cherry Tomatoes image

2 bunches broccoli, cut into 2 1/2-inch long florets
1 medium shallot, roughly chopped
1 pint cherry tomatoes, whole
3 cloves garlic, roughly chopped
1/2 teaspoon red pepper flakes
4 tablespoons olive oil
Salt and freshly ground black pepper
1/3 cup grated Parmesan

Steps:

  • Preheat oven to 450 degrees F.
  • Add broccoli to a large bowl. Add the shallots, cherry tomatoes, garlic and red pepper flakes with 4 tablespoons oil in large bowl. Sprinkle with salt and pepper. Toss to coat and spread onto large baking sheet. Roast until the stems are tender-crisp and lightly golden brown, about 18 minutes. Grate the Parmesan over the broccoli while it's hot.

This dish helps me warm up on a cold winter's day without being too heavy. It was inspired by a dish from my favorite vegetarian cookbook. I eat it with rice and chicken for dinner or a piece of brown bread for lunch.

1 tablespoon olive oil
1 small onion, thinly sliced
1 clove garlic, minced
1 small carrot, diced
1 stalk celery, diced
salt and ground black pepper
¾ pound broccoli - cut into florets, stems peeled and sliced 1/4 inch thick
1 (15 ounce) can diced tomatoes
1 tablespoon chopped green olives
2 teaspoons maple syrup
¼ cup crumbled goat cheese
¼ cup Parmesan cheese

Steps:

  • Heat olive oil in a skillet over medium heat. Add the onion and garlic; cook and stir until aromatic, about 3 minutes. Stir in the carrots and celery, season with salt and pepper, and continue cooking until the vegetables begin to soften, about 5 minutes.
  • Meanwhile, place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the broccoli, recover, and steam until bright green, 4 minutes. Remove the broccoli from the steamer and place in a 8x8 inch baking dish; set aside.
  • Preheat an oven to 375 degrees F (190 degrees C).
  • Pour the can of diced tomatoes and green olives into the skillet with the onion and carrot mixture. Stir and cook over medium-high heat until most of the sauce thickens, about 5 minutes. Mix in the maple syrup, season with salt and pepper to taste, and cook and stir for 3 minutes.
  • Pour the sauce over the broccoli in the 8x8 inch baking dish. Evenly distribute the goat cheese and Parmesan cheese over the broccoli and sauce.
  • Bake in preheated oven until the cheese begins to brown, about 20 minutes.

I wanted to make a pasta salad, but didn't feel like going shopping, so I rummaged through my kitchen to see what was available that could be done in less than an hour - difficult for me, since I like to cook from scratch as much as possible! I ate it as a main dish, but it would also make a great side dish. The chile paste recipe came from an online guide to pickled mangoes. The mangoes didn't come out well, so I use the chile paste to add a kick to any of my recipes.

5 Thai chiles, chopped
1 tablespoon salt
1 tablespoon white sugar
1 teaspoon garlic powder
½ teaspoon red pepper flakes
½ cup farro
1 ½ cups water
1 teaspoon beef base (such as Better than Bouillon®)
1 tablespoon sesame oil
1 clove garlic, minced
1 cup chopped young broccoli florets and leaves
6 grape tomatoes, quartered
½ teaspoon dried basil
½ teaspoon dried oregano
1 teaspoon unsalted butter
1 tablespoon lemon juice

Steps:

  • Combine Thai chiles, salt, sugar, garlic powder, and red pepper flakes in a mortar and pestle. Pound until a paste is formed.
  • Place farro in a pot and cover with water; bring to a boil over medium-high heat. Reduce heat and add beef base. Cook farro, stirring occasionally, until tender yet firm to the bite, about 30 minutes. Drain.
  • Heat sesame oil in a large saucepan over medium heat. Add garlic; cook until browned, 2 to 3 minutes. Stir in broccoli; cook until color brightens, about 3 minutes. Mix in tomatoes, basil, and oregano. Add butter and the chile paste, stirring constantly until melted, about 3 minutes. Add lemon juice; stir briefly. Remove pan from heat and mix in the cooked farro.

Steps:

  • Wash and cut broccoli florets in 1/2 inch pieces.
  • Place broccoli and water in a shallow, round microwave-safe dish.
  • Cover with plastic wrap or lid and microwave on HIGH for 5-7 minutes or until tender (every microwave is different, so keep an eye on them!).
  • Stir several times- Drain.

2 pt. cherry tomatoes
1/3 c. sugar
1 tsp. chili powder
3 1/2 oz. coarsely torn baguette (about 2 heaping cupfuls)
1 1/2 oz. grated Parmesan (about 1/3 cup)
2 broccoli crowns, halved
Kosher salt and ground black pepper

Steps:

  • Preheat oven to 425°F. Lightly grease a baking sheet. Combine tomatoes, sugar, chili powder, and 1 cup water in a small saucepan. Simmer, stirring occasionally, until completely broken down and glossy, 35 to 40 minutes.
  • Meanwhile, combine bread and Parmesan in a food processor. Pulse until coarsely crumbled, 12 to 14 times. Spread on prepared baking sheet. Bake until golden brown, 4 to 5 minutes.
  • Heat oil in a large cast-iron skillet over medium-high heat. Add broccoli, cut sides down, and cook until golden brown, 5 to 6 minutes. Flip and season with salt and pepper. Transfer to oven and bake until just tender, 14 to 16 minutes. Top broccoli with breadcrumbs and serve with tomato jam alongside.

1 pint red and yellow grape tomatoes, halved
1 clove garlic, minced
6 naan flatbreads
1 1/2 pounds fresh mozzarella, thinly sliced
3 tablespoons chopped pitted green olives

Steps:

  • Preheat the oven to 425 degrees F.
  • Toss the broccoli with 3 tablespoons olive oil and the red pepper flakes on a rimmed baking sheet. Sprinkle with salt and pepper.
  • Mix the tomatoes with the garlic in a small bowl. Sprinkle with salt and pepper.
  • Roast the broccoli until it begins to turn brown, 16 to 18 minutes. Add the tomatoes to the baking sheet, then toss with the broccoli and roast until tender, about 6 minutes.

2 carrots, finely chopped
1 medium yellow onion, finely chopped
Kosher salt and freshly ground black pepper
3 cloves garlic, minced
2 tablespoons ground cumin
1 tablespoon harissa, or more to taste
1/2 teaspoon smoked paprika
Pinch crushed red pepper flakes
1 tablespoon tomato paste
One 28-ounce can or carton chopped tomatoes
1 teaspoon sugar
1 cup alphabet pasta
3/4 cup vegetable stock or broth
A few handfuls crumbled feta
Handful chopped fresh flat-leaf parsley or cilantro (or a mix)

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the carrots, onion and a pinch of salt and cook, stirring, until soft and translucent, 10 to 12 minutes. Add the garlic, cumin, harissa, paprika, pepper flakes, a good pinch of salt and a few turns of black pepper and cook until it's all dreamy and smelly, about 2 minutes. Stir in the tomato paste, then the chopped tomatoes and sugar. Reduce the heat to low, then stir in the pasta and stock. Cover and simmer, stirring occasionally, about 15 minutes.
  • Sprinkle bowls of soup with black pepper, drizzle with olive oil and top with the feta and herbs.

Steps:

  • Cut the tops of the broccoli into bite-size florets. Cut the broccoli stems into 1 1/2-inch lengths, trimming and discarding the outer coating. There should be about 6 cups of broccoli pieces.
  • Meanwhile, bring to a boil enough water to cover the broccoli when added. Add the broccoli, and after the water returns to a boil, cook another 2 minutes. Drain thoroughly.

2 small vine-ripened tomatoes, cored and cut into 1-inch cubes (or 1 cup halved cherry tomatoes)
1 tablespoon grated parmigiano-reggiano cheese

  • Add the potatoes and water to a large, wide saucepan.
  • Cover and cook over low heat until potatoes are almost tender (about 15 minutes).
  • Add in the broccoli; cover and cook 8 minutes or until tender.
  • Place a colander under a bowl and drain the potatoes and broccoli, saving the cooking liquid.
  • Wipe out the saucepan and add the oil and garlic.

6 tomatoes
1 (10 ounce) box frozen chopped broccoli
1 cup shredded cheddar cheese
1 cup dry breadcrumbs
1/2 cup minced celery
2 tablespoons light mayonnaise
1 teaspoon salt
1 tablespoon parmesan cheese

Steps:

  • Steam the broccoli in a small amount of water for about 3 minutes. Drain well.
  • Combine broccoli with cheddar, breadcrumbs, celery, mayo, and salt.
  • Take the stem off the top of each tomato. Carefully cut 5 wedges in each tomato without cutting all the way through the bottom - the wedges should stay connected at the bottom.
  • Spoon equal amounts of the broccoli filling into each tomato. Gently press the wedges back toward the center of the tomato. Sprinkle each with some of the parmesan cheese.
  • Place tomatoes in a shallow pan and bake at 325 degrees for about 25 minutes.

I happened to catch Down Home with the Neelys the other day and they made this wonderful dish. I couldn't wait to make it and it didn't disappoint! I have used a sliced firm tomato and it works ok, I think the cherry tomatoes are better.

2 bunches broccoli (cut into 21/2 inch florets)
1 medium shallot (roughly chopped)
1 pint cherry tomatoes (whole)
3 garlic cloves (roughly chopped)
1/2 teaspoon red pepper flakes
4 tablespoons olive oil
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
1/3 cup parmesan cheese (fresh grated is best)

Steps:

  • Preheat oven to 450 degrees F.
  • Add broccoli, shallots, tomatoes, garlic, red pepper and oil into a large bowl.
  • Sprinkle with salt and pepper.
  • Toss to coat and spread onto a large baking sheet.
  • Roast until the stems are tender-crisp and lightly golden brown. (about 18 min.).
  • Grate the parmesan cheese over the broccoli while it's hot.
  • Serve and Enjoy!

3/4 cup sliced fresh mushrooms
2 green onions, sliced
DRESSING:
3/4 cup olive oil
1/3 cup tarragon vinegar
2 tablespoons water
1 teaspoon lemon juice
1 teaspoon sugar
1 teaspoon salt, optional
3/4 teaspoon dried thyme
1 garlic clove, minced
1/2 teaspoon celery seed
1/4 teaspoon Italian seasoning
1/4 teaspoon lemon-pepper seasoning
1/4 teaspoon paprika
1/4 teaspoon ground mustard

Steps:

  • Place broccoli in a large saucepan with 1-inch of water Bring to a boil. Reduce heat; cover and simmer for 3-5 minutes or until crisp-tender. Rinse with cold water and drain. Place in a large bowl; add the tomatoes, mushrooms and onions. , In a small bowl, whisk dressing ingredients. Pour over salad; toss gently. Cover and chill for 1 hour. Serve with a slotted spoon.

8 ounces uncooked spaghetti
2 cups fresh broccoli florets
2 large tomatoes, peeled, seeded and coarsely chopped
2 garlic cloves, minced
1/4 to 1/2 teaspoon crushed red pepper flakes
2 tablespoons olive oil
1/2 cup sliced ripe olives
1/2 cup minced fresh parsley
1/4 cup grated Romano cheese
3/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large skillet or Dutch oven, bring water to a boil. Add spaghetti; boil, uncovered, for 5 minutes. Add broccoli; boil 3-4 minutes longer or until pasta and broccoli are tender., Meanwhile, in a nonstick skillet, saute the tomatoes, garlic and pepper flakes in oil for 2 minutes. 1 lb fresh broccoli
1 (14 ounce) can tomatoes, diced
1 tablespoon gingerroot, peeled and shredded
1/8 teaspoon red pepper
salt and pepper

Steps:

  • Separate the broccoli heads into small florets. Peel and slice the stems. Blanch the florets and stems in boiling salted water 3-4 minutes until crisp-tender. Drain thoroughly and set aside.
  • (Note: I often use frozen broccoli. When I do, I skip the above steps and put it directly in the skillet.).
  • Cut tomatoes lengthwise into eighths; set aside.
  • Stir-fry ginger for a few seconds. Add broccoli, tomatoes, and red pepper. Stir fry 2-3 minutes or till vegetables are heated through. Add 1-2 Tbsp water (I add tomato juice) and continue to stir fry for about 30 seconds.
  • Serve hot, room temperature, or chilled.
