4 broccoli florets
2 1/2 tablespoons canola oil (I use olive oil)
2 tablespoons sriracha sauce (or Sambal Oelek or Chinese chili-Garlic sauce)
2 teaspoons toasted sesame oil
2 teaspoons raw sugar (or light brown sugar)
2 -3 garlic cloves, peeled and minced
salt, to taste

Steps:

  • Preheat oven to 425°F Lightly spray a large, rimmed baking sheet with non-stick cooking spray (or use a stoneware pan without spray.) Set aside.
  • In a large mixing bowl, stir together the canola oil, chile-garlic sauce, sesame oil, raw sugar and minced garlic until even.
  • Slice the broccoli crowns into long spears, keeping as much of the stem area intact as possible. Do not cut the spears too small or they'll burn instead of cooking to the desired crisp tender stage. Add all of the broccoli spears to the mixing bowl with the oil mixture and toss until everything is evenly coated. Transfer to the prepared pan, arranging the spears so they are in a single layer and sprinkle with salt to taste.
  • Bake for 20-25 minutes, or until there are darkened, black, wilted edges on the cut areas and florets of the broccoli. Remove from the oven and serve immediately with hot, cooked rice or as an accompaniment to a stir fried meats or tofu.

1 large head broccoli (about 1 1/2 pounds), outer part of thick stems peeled
3 tablespoons vegetable oil
2 tablespoons chopped roasted salted cashews
1 tablespoon Asian fish sauce
1 tablespoon freshly squeezed lime juice, plus lime wedges, for serving
1 tablespoon chopped fresh cilantro (or mint)
1 tablespoon chopped jalapeno

Steps:

  • Preheat the oven to 450 degrees F.
  • Cut the broccoli florets into 1-inch pieces and slice the stems crosswise into 1/2-inch-thick pieces. Put in a large bowl and toss with the oil and 1 tablespoon water. Spread on a baking sheet and roast, stirring once halfway through, until tender and lightly charred, 20 to 25 minutes. Transfer to a bowl and toss with the cashews, fish sauce, lime juice, cilantro and jalapeno. Serve with lime wedges.

Steps:

  • Preheat the oven to 450 degrees F.

3 tablespoons rice vinegar
3 tablespoons reduced-sodium soy sauce
2 teaspoons hoisin sauce
1 teaspoon cornstarch
1 teaspoon packed dark brown sugar
1 teaspoon chili paste
1 lb uncooked chicken breast tenders (not breaded)
2 tablespoons cornstarch
1/4 teaspoon pepper
2 tablespoons vegetable oil
1 bunch fresh broccoli, broken into florets (about 3 cups)
1 teaspoon grated gingerroot
5 dried Thai chiles, seeds removed
1 clove garlic, finely chopped
4 green onions, chopped (1/4 cup)
2 cups cooked brown rice

Steps:

  • Place steamer basket in 3-quart saucepan; fill with water. Heat over medium-high heat to boiling.
  • Meanwhile, in small bowl, beat chicken broth, vinegar, soy sauce, hoisin sauce, 1 teaspoon cornstarch, the brown sugar and chili paste; set aside.
  • Cut chicken into bite-sized pieces. In shallow dish, stir together 2 tablespoons cornstarch and the pepper. Add chicken; toss to coat.
  • In 12-inch skillet, heat oil over medium-high heat. Add chicken; cook 4 minutes on each side or until light golden brown and no longer pink in center.
  • Meanwhile, add broccoli to steamer basket in saucepan; cook 5 minutes or until crisp-tender.
  • Remove chicken from skillet; place on plate and set aside. Return skillet to heat. Add gingerroot, chiles and garlic; cook 1 minute. Return chicken to skillet. Add broccoli and sauce; stir to combine. Cook 3 to 4 minutes, stirring occasionally, until sauce is reduced to a thick glaze. Stir in green onions. Serve over brown rice.

6 to 8 green onions
1 medium green or sweet red pepper
1-1/2 cups fresh broccoli
1 large onion
12 edible-pod peas

SAUCE:
2 cloves garlic, sliced
2 slices fresh ginger, chopped
1/4 teaspoon crushed red pepper flakes
2 tablespoons hot water
2 teaspoons sugar
6 tablespoons ketchup
4 tablespoons soy sauce

Steps:

  • Cut pork into narrow 1-in. strips, 1/4-in. thick; set aside. (Partially freeze pork first for easier cutting.) Cut green onions, peppers, broccoli and onion into 1-in. pieces; set aside. Combine garlic, ginger, pepper flakes, hot water, sugar, ketchup and soy sauce (or substitute 8 tablespoons prepared Hoisin Sauce for the ketchup and soy sauce); set aside. In wok or large skillet, heat peanut or vegetable oil over high heat. Stir-fry the pork in oil until browned; remove from wok and keep warm. Add more oil if necessary and stir-fry all vegetables tender/crisp. Add pork and sauce mixture; cook until thickened. Serve with boiled rice.

  • Remove and discard broccoli leaves and tough ends of stalks. Wash broccoli thoroughly, and cut off flowerets; set aside. Cut stalks into 1/2-inch pieces; set aside.
