- In a small saucepan, melt butter; add the lemon juice, spices, lemon zest and salt., Thread shrimp onto eight metal or soaked wooden skewers. Place skewers in a greased 15x10x1-in. baking pan. Broil 3-4 in. from the heat for 3-4 minutes on each side or until shrimp turn pink, basting occasionally with butter mixture.

- Heat grill to medium-high heat.
- Blend barbecue sauce and chiles in blender until smooth. Cut each ham slice into 4 lengthwise strips. Thread shrimp alternately with ham onto 8 skewers.
- Grill 5 to 7 min. or until shrimp turn pink, turning and brushing occasionally with barbecue sauce mixture.
- Sprinkle with cheese.

SPICY GRILLED SHRIMP
Quick and easy spicy grilled shrimp kabobs are an easy dinner on the grill in 20 minutes plus marinating time!

- Add the BBQ sauce, olive oil, lemon juice, hot sauce, soy sauce, garlic powder, and salt in a large bowl and whisk together. Set aside 3 Tablespoons of the mixture as a glaze to brush on later and pour the rest into a gallon sized plastic bag.
- Add the raw shrimp to the bag and remove as much air inside the bag as possible and then close the bag. Slosh the marinade around the bag to make sure every shrimp is coated.
- Let the shrimp and marinade sit in the refrigerator for 30 minutes to 1 hour.
- Preheat the grill to medium high heat (about 350-400 degrees F).
- When the shrimp is done marinating, remove from the marinade and load the skewers with the shrimp (about 5 shrimp per skewer). Grill on each side for 1-2 minutes, or until the shrimp has curled tight and turned pink.
- Brush the marinade that was set aside onto the skewered and grilled shrimp. Make sure it is the marinade that has not been used to marinate the raw shrimp.
- Plate and serve warm right off the grill. Garnish with optional chopped parsley.

I suggest to use fresh shrimp for this as frozen thawed will create a watery marinade, do not marinade for longer than 30 minutes or the acid in the lemon juice will "cook" the shrimp, adjust the cayenne to suit heat level, I have left the Tabasco as optional you may add it or omit --- this shrimp is very good!

- In a small bowl crush the garlic with coarse salt; mix in cayenne pepper and paprika.
- Add in olive oil and lemon juice; mix until combine, then add in Tabasco if using.
- In a large bowl toss the shrimp with the garlic oil until evenly coated.
- Cover and refrigerate for 30 minutes.
- Meanwhile soak the wooden skewers in cold water for 30 minutes.
- Preheat grill to medium heat, then lightly oil the grill grate.
- Thread the shrimp onto the wooden skewers.
- Cook the shrimp for 2-3 minutes per side or until opaque.
- Serve with lemon wedges.

SPICY BARBECUED SHRIMP SKEWERS
This recipe is courtesy of Emeril Lagasse. The original recipe called for Cilantro but I substituted Italian Parsley. Be sure not to overcook the shrimp and soak your bamboo skewers in hot water for at least 30 minutes.

- Peel shrimp and set aside while making marinade.
- Combine all ingredients except shrimp and mix well.
- Add shrimp to marinade mixture and toss thoroughly to coat.
- Marinate shrimp for at least one hour.
- Preheat gas grill for 30 minutes.
- While grill is preheating place 10 shrimp on each skewer.
- Place skewers on grill and cook for about 3 minutes on each side or until shrimp are pink and lightly charred on both side being careful not to overcook.

- In shallow glass or plastic dish or resealable food-storage plastic bag, mix marinade ingredients. Add shrimp, pineapple, bell pepper and onions; stir to coat. Cover dish or seal bag; refrigerate 15 to 30 minutes, turning once or twice.

- Soak four 10-inch bamboo skewers in water for at least 30 minutes to prevent burning.
- Set oven control to broil. Mix barbecue sauce, preserves and red pepper in small bowl; set aside.
- Wrap strip of bacon around each water chestnut. Thread shrimp and water chestnuts alternately on each bamboo skewer, leaving space between each piece. Place on rack in broiler pan.
