- Wet the rim of two (16-20 oz) glasses with a piece of fresh lemon. Then dip the glass rims into a tablespoon of Old Bay seasoning (shake it onto a flat dish).
- Fill glasses halfway with ice.
- Mix all of the ingredients together in a separate pitcher or container, stir it up well, and then pour mixture into prepared glasses.
- Slide in a pickle spear or stalk of celery, a few Old Bay seasoned cooked shrimp, a couple of big fat olives, a hunk of cheese a crab leg or whatever you have on hand and you are good to go. You can also add a lemon and or a lime slice, and if you're feeling crazy add a whole pepperoncini.
- You can garnish a Bloody Mary with whatever you dream up! The greatest thing I ever saw was a Bloody Mary called the Bloody Beast for charity. $50 and topped with a whole roast chicken and more! Of course THAT bloody served 2-4!

SPICY CITRUS BLOODY MARY
Steps:
- Muddle ice, lemon wedges, lime wedges, horseradish, jalapeno, and salt in the bottom of a pitcher. Add vodka, tomato juice, and Worcestershire and stir to combine. Refrigerate if not serving immediately, or pour into glasses over ice and serve.

- Cut the celery in large dice, including the leaves, and puree in the bowl of a food processor fitted with the steel blade. Add the horseradish, onion, lemon juice, Worcestershire sauce, celery salt, kosher salt, and Tabasco and puree it again. Pour the tomato juice into a 2 1/2-quart container, stir in the celery and seasonings mixture, then add the vodka and chill. Place a few ice cubes in each glass, pour in the Bloody Mary mixture, and garnish with a celery stick.

- Grind chile de arbol peppers into a powder with a mortar and pestle.
- Process tomatoes, onions, green bell peppers, carrots, jalapeno pepper, and garlic in a food processor, working in batches, until vegetables are finely chopped. Transfer vegetables to a large pot.
- Stir tomato sauce, vinegar, horseradish, ground chile de arbol peppers, kosher salt, Worcestershire sauce, black pepper, bay leaves, celery seed, seafood seasoning, and hot pepper sauce into the vegetables. Bring mixture to a boil, reduce heat, and simmer until vegetables are tender, about 30 minutes, stirring regularly. Remove bay leaves.
- Process the mixture through a vegetable juicer, working in batches if necessary. Strain excess pulp from the juice if desired. Pour juice into a large pot, set over medium heat, and heat until juice is nearly boiling. Stir in lemon juice.
- Sterilize jars and lids in boiling water for at least 5 minutes. Pack the bloody mary mix into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
- Place a rack in the bottom of a large stockpot or canning kettle and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 40 minutes.
- Remove the jars from the pot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

SPICY BLOODY MARY MIX
My father-in-law first introduced me to this homemade bloody mary mix. It is very similar to what you'd buy in a store. Made as is, it is very spicy. You can customize it to your taste by cutting back on the pepper and hot sauce; I like about half the pepper and hot sauce. Enjoy this wonderful mix! It is so easy and much cheaper than buying pre-made mix.

The addition of Balsamic Vinegar is a surprise but also a delight if you love a good bloody mary. These have a kick. Great for the holidays! I understand this recipe comes from the FoodTV show "Molto Mario" by Mario Batali. I'm not exactly sure when and where I picked it up!

- In a large pitcher, combine the vegetable cocktail, celery seed, pepper, citrus juices, 2 Tbs grated horseradish, Worcestershire sauce, and hot pepper sauce and stir well to combine.
- Cover and refrigerate for 1 hour.
- Fill 4 glasses with ice.
- Add 2 oz vodka to each and fill three-quarters full with the vegetable cocktail mix.
- Sprinkle with the remaining horseradish, place 1 celery stalk in each glass, and squeeze a lime wedge over each glass before dropping the wedge into the glass.
- Float a tsp of balsamic vinegar on the top of each drink and serve.
