1 1/3 lbs cod fish fillets
lemon juice
salt and pepper
4 tablespoons cajun spices
butter
sour cream

Steps:

  • Drizzle cod fillets with lemon juice.
  • Salt and pepper to taste.
  • Rub fillets with cajun spices and coat well.
  • In very hot skillet, cook fillets in butter for 4 minutes on each side.
  • Remove from skillet and serve immediately.
  • Serve with sour cream, carrot and zucchini cut into julienne.
  • Garnish with fresh parsley or dill.

¼ cup butter (melted)
4 tablespoons Heinz Chili Sauce
3 tablespoons olive oil
2 tablespoons Worcestershire
2 tablespoons fresh lemon juice
1 tablespoon fresh chopped parsley
1-1 ½ teaspoons cayenne pepper
1 ½ teaspoons Liquid Smoke
1 teaspoon smoked paprika
1 teaspoon dried oregano
½ teaspoon Siracha
5 cloves fresh garlic (minced)
¾ cup low sodium vegetable broth
4 6.5 ounce frozen cod fillets

Steps:

  • Preheat oven to 400 ° F.
  • Combine all of the ingredients except the fish in a small saucepan, stir and let simmer for 10 minutes. Remove pan from heat and let cool.
  • Arrange the fish fillets in an oven- proof casserole dish and pour the sauce over the fish.
  • Bake for 25-30 minutes, or until fish is flaky when tested with a fork. Serve immediately.

  • Preheat oven to 350 degrees F (175 degrees C).
  • Rinse and dry cod fillets. Place fillets in a lightly greased casserole dish. Pour salsa over fish. Sprinkle with parsley, salt and pepper.
  • Bake in preheated oven for 30 minutes. Serve warm over rice.
