SPICY CASHEW CHICKEN



Spicy Cashew Chicken image

Tender and juicy chicken pieces coated in a sweet and sticky spicy cashew chicken sauce. Fiery garlic, ginger and dried chilies sautéed and lightly toasted in sesame oil, cooked and coated with chicken and sauce then tossed with a handful of cashews.

2 tablespoons tamari or gluten free soy sauce (30 ml)
2 tablespoons rice vinegar (30 ml)
1/4 cup chicken stock (60 ml)
1 tablespoon sugar (brown, white, coconut or caster)
1 teaspoon potato starch
1 tablespoon water (15 ml)
4 boneless and skinless chicken thighs, cut into bite sized pieces
1 tablespoon sesame oil
3 spring onions, white stalks cut into 1/4 inch pieces, top green parts sliced thin
3 cloves garlic, minced
2 inch piece of ginger, peeled and minced
8 small, dried chilies
1/3 cup cashews

Steps:

  • In a medium sized bowl whisk together the soy sauce/tamari, vinegar, sugar and chicken stock together until combined.
  • Once mixed together, spoon half of the mixture into a small bowl and set aside. In the larger bowl, add the starch and water and whisk until combined.
  • Add the chicken to the bowl with the starchy-marinade, toss to coat and let marinate 10 minutes.
  • In a large wok or skillet, add the sesame oil and warm over a medium-low heat. Add the white parts of the green onions, garlic, ginger and dried chilis. Cook 1-2 minutes, stirring frequently.
  • Turn the heat up to high and add the chicken to the skillet along with the starchy marinade. Cook 5-7 minutes stirring often until the chicken is just about cooked through.
  • Add the remaining marinade and cashews to the skillet and toss everything together cook another minute.
  • Scatter the sliced green onions over the chicken, serve over rice and enjoy.

Seasoned Rice Flour ((ingredients below))
Rice Flour Batter ((ingredients below))
Spicy Soy-Sherry Sauce ((ingredients below))
8 ounces Cashews
6 green onions (, cut into 1/4" pieces)
3/4 cup Rice Flour
1/4 teaspoon Kosher Salt
1/8 teaspoon Ground Black Pepper
1/8 teaspoon Paprika
1/8 teaspoon Baking Powder
1 1/2 cups Rice Flour
1/4 cup All-Purpose Flour
1/4 teaspoon Kosher Salt
1/4 teaspoon Ground Black Pepper
1 1/2 cups Ice Water
1 cup Hoisin sauce
1/4 cup soy sauce
1/4 cup Sherry Wine
2 tablespoons red wine vinegar
1 tablespoon Sriracha sauce
1/4 cup granulated sugar
2 ounces fresh garlic (, minced)
1/4 teaspoon Crushed Red Chili Flakes

Steps:

  • Mix the ingredients into a bowl together.
  • Combine all the ingredients together, in a bowl over ice. Keep COLD.
  • Combine the sauce ingredients together and mix well.
  • Toss the chicken with the seasoned flour.
  • Put the batter into a large bowl with the chicken.
  • Carefully combine the two until well coated.
  • Heat the canola oil in a large pan or wok on medium high.
  • Add the chicken pieces to the pan, and cook 3 minutes on each side until browned and crispy.
  • Break apart any pieces that stay stuck together.
  • Add the sauce and cashews into the pan. Add in the green onions.
  • Toss all the ingredients together until well coated.
  • Let cook for 30 seconds to a minute for the sauce to thicken.
  • Garnish with sesame seeds, parsley and crushed cashews.

1.5 lbs. chicken tenders (cubed)
1 red bell pepper (cubed)
1 green bell pepper (cubed)
4 garlic cloves (sliced)
1 large zucchini (sliced)
1/2 cup roasted cashew
3 tbsps. olive oil (divided between chicken and veggies)
Sliced scallions or green onions (optional)
1/2 cup reduced sodium chicken broth
3 tbsps. reduced sodium soy sauce
1 tbsp. vinegar
1 tbsp. freshly grated ginger
1 tsp. black pepper
1/2 tsp. salt
1 tbsp. corn starch
1.5 tbsps. brown sugar
1 tsp. pepper flakes

Steps:

  • Bring 1.5 tbsps. of olive heat to high heat in a skillet or frying pan.
  • Toss in the veggies and cook until tender. Remove and set aside in a bowl.
  • Throw in the cashews into the same skillet and toss to toast them a little bit. Remove and add to the veggies.
  • Add another 1.5 tbsp. of olive oil and bring to high heat. Saute the chicken cubes until they are brown in color and fully cooked.
  • Pour in the cashew chicken sauce mixture and cook together for 1 minute. Return the veggies and cashew to the skillet and mix together with the chicken and sauce to coat well.
  • Cover and allow them to cook together for 2-3 minutes. If you are adding the scallions or green onions, you can do so now. Toss together and remove from the heat to serve.

A wonderfully spicy Thai dish. I created this when I fell in love with a dish at a Thai restaurant. It is very good served over jasmine rice. Fish sauce can be found in any Asian market, or the Asian section of the supermarket.

¼ cup soy sauce
¼ cup fish sauce
1 ½ tablespoons hot pepper sauce
3 cloves garlic, minced
1 tablespoon minced fresh ginger root
4 skinless, boneless chicken breast halves - cut into thin strips
1 cup dry jasmine rice
2 cups water
1 tablespoon sesame oil
3 tablespoons brown sugar
1 small onion, quartered then sliced
¾ cup water
3 tablespoons creamy peanut butter
1 cup unsalted cashew nuts

Steps:

  • In a resealable plastic bag, mix the soy sauce, fish sauce, hot pepper sauce, garlic, and ginger. Place the chicken in the bag, seal, and marinate at least 2 hours in the refrigerator.
  • In a medium saucepan, bring the jasmine rice and 2 cups water to a boil. Reduce heat, cover, and simmer 20 minutes.
  • Heat the sesame oil in a large skillet over medium heat. Stir in the brown sugar until dissolved. Stir in the onion, and cook about 5 minutes, until tender. Reserving the marinade mixture, place the chicken into the skillet, and cook about 10 minutes, until browned.
  • Stir the reserved marinade and 3/4 cup water into the skillet, and bring to a boil. Continue to cook and stir 10 minutes, or until the chicken is no longer pink and juices run clear. Thoroughly blend in the peanut butter. Serve over the jasmine rice with a sprinkling of cashews.

1 cup roasted, salted cashew nuts
6 tablespoons chopped cilantro, with some stems
1/4 cup canola or safflower oil
4 garlic cloves, roughly chopped
2 tablespoons soy sauce
2 teaspoons brown sugar
1 to 2 jalapeño peppers, sliced (discard seeds or not, to taste)
Juice of 1 lime, plus lime wedges for garnish
Kosher salt and freshly ground black pepper
3 pounds chicken thighs and/or drumsticks

Steps:

  • In a blender or food processor, combine nuts, 2 tablespoons cilantro, oil, garlic, soy sauce, sugar, jalapeño, lime juice and 2 tablespoons water. Blend until smooth, scraping down sides as necessary. Taste and season with salt and pepper if desired.
  • Season chicken all over with salt and pepper. Smear on enough cashew mixture to thoroughly coat pieces. (Set aside any remaining mixture.) Let marinate at room temperature while you heat grill or broiler. Or refrigerate for up to 12 hours before cooking.
  • Preheat broiler or grill. Grill or broil chicken, turning frequently, until it is crisp and golden on outside and done on inside (cut a small nick to check), 20 to 30 minutes.
  • Sprinkle chicken with remaining cilantro and serve with lime wedges and remaining cashew mixture.

  • In a large wok or very large nonstick skillet, heat oil over medium-high heat. Add sweet peppers and onion; stir-fry for 2 minutes. Add bok choy, chile peppers, and garlic; stir-fry for 1 to 2 minutes more or until peppers and onion are crisp-tender. Remove vegetable mixture from wok and set aside.

2 teaspoons toasted sesame oil
1 teaspoon hot Chinese chili paste

4 teaspoons low sodium soy sauce or 4 teaspoons regular soy sauce, your choice

1/2-1 teaspoon cayenne pepper (depending on how much "heat" you can handle!)
1/2 cup chicken broth
2 tablespoons cornstarch

3 whole double boneless skinless chicken breasts, cut into cubes
1/4 cup oil
2 -3 tablespoons minced fresh ginger
1 tablespoon minced garlic
1 small onion, chopped

8 ounces mushrooms, sliced
1 carrot, thinly sliced on diagonal

  • Combine sauce ingredients in a bowl and set aside.
  • In a large plastic resealable baggie, combine cornstarch, sugar and salt; Add chicken chunks, seal baggie and shake to coat chicken in cornstarch mixture.
  • Heat wok or large frying pan on high and add oil; heat to hot, but not smoking.
  • Add chicken pieces, garlic, ginger and onion, stirring until chicken is lightly cooked on the outside (about 1 minute).
  • Add bell pepper, mushrooms, and carrots; stir 2-3 minutes until softened.
  • Add snow peas and sauce, cooking until sauce comes to a boil.
  • Add cashews and sprinkle with sesame seeds.
  • Serve immediately, over rice if you'd like-- YUM!
