CHEESY BREADSTICKS

These are baked bread sticks laced with cheese and just a hint of cayenne. I got this recipe from a newspaper, which stated the recipe is from 5 Spoke Creamery. Plan ahead, the dough has to refrigerate for at least 2 hours, which is included in the preparation time.

1 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
1 1/2 teaspoons baking powder
4 tablespoons butter or 4 tablespoons margarine, cut into small pieces
1/2 cup cheddar cheese or 1/2 cup monterey jack cheese, shredded
3 tablespoons sour cream or 3 tablespoons creme fraiche

Steps:

  • In food processor, combine the flour, salt, cayenne and baking powder.
  • Pulse several times to mix.
  • Add the butter and cheese, then pulse for about 30 seconds, or until the ingredients are well mixed (it should resemble slightly moist flour).
  • Add the sour cream and pulse on and off for about 1 minute, or until the ingredients come together as a moist, doughy clump.
  • Remove the dough from the food processor, form into a ball, then cover in plastic wrap and refrigerate for at least 2 hours.
  • Preheat oven to 425 degrees.
  • Line a baking sheet with parchment paper, or coat it with cooking spray.
  • On a lightly floured counter, roll out the dough into a large rectangle about 1/8-inch thick.
  • Trim the edges to create a neat rectangle.
  • Using a knife or a pizza cutter, cut the dough into strips 6 inches long and about 1/2 inch wide.
  • Combine the scraps and repeat with remaining dough to make about 18-24 sticks.
  • Gently twist each strip to create a spiral, then arrange them on the prepared baking sheet.
  • Bake for 8 minutes, or until lightly browned.

1/2 cup finely shredded cheddar cheese
1 tablespoon sesame seeds
1 tablespoon poppy seed
1 teaspoon fennel seed
1 teaspoon kosher salt
1/4 teaspoon cayenne pepper
flour, For Rolling Out Dough

Steps:

  • Preheat the oven to 400 degrees, prepare a sheetpan with parchment or a silpat.
  • On a lightly floured surface, roll out the sheet of puff pastry until it is quite thin.
  • In a small bowl, mix together all of the seeds and spices.
  • Sprinkle them over the dough.
  • Using a rolling pin, roll them into the dough.
  • Sprinkle the cheese over the dough.
  • Roll the cheese into the dough.
  • Slice the Dough into 8 even strips.
  • Twist from both ends of each dough strip so that the dough spirals into a breadstick.
  • Lay them on a sheetpan lined with parchment or a silpat.
  • Bake the breadsticks for 15 minutes until golden.
  • Let cool for a moment then transfer to a tall glass and fan out to serve.

Number Of Ingredients 12

1-3/4 to 2-1/2 cups all-purpose flour
1/4 cup toasted wheat germ
1 package (1/4 ounce) active dry yeast
1/2 teaspoon salt
1 cup water
1 tablespoon plus 2 teaspoons olive oil
1 tablespoon honey
2 tablespoons minced fresh parsley or 2 teaspoons dried parsley flakes
1 tablespoon minced fresh basil or 1 teaspoon dried basil
2 to 4 garlic cloves, minced
1/2 cup shredded part-skim mozzarella cheese
1/2 cup shredded Parmesan cheese

Steps:

  • In a large bowl, combine 1-1/2 cups flour, wheat germ, yeast and salt. In a saucepan, heat the water, 1 tablespoon oil and honey to 120°-130°. Add to dry ingredients; beat just until moistened. Stir in enough remaining flour to form a soft dough. , Turn onto a lightly floured surface; knead until smooth and elastic, about 4-6 minutes. Cover and let rest for 10 minutes., Roll into a 15x10-in. rectangle. Transfer to a greased 15x10x1-in. baking pan; press dough to edges of pan. Brush with remaining oil. Sprinkle with parsley, basil and garlic. Cover and let rise in a warm place until doubled, about 30 minutes., Bake at 425° for 10 minutes. Sprinkle with cheeses. Bake 3-5 minutes longer or until cheese is melted and bread is golden brown. Cut into 20 strips. Serve warm.

1-1/2 cups warm water (110° to 115°)
1/2 cup warm 2% milk (110° to 115°)
3 tablespoons sugar
3 tablespoons butter, melted
1-1/2 teaspoons salt
1/2 teaspoon baking soda
4-1/2 to 5-1/2 cups all-purpose flour
TOPPING:
1/2 cup butter, melted
1 cup grated Parmesan cheese
4-1/2 teaspoons Italian seasoning
1 teaspoon garlic powder

Steps:

  • In a large bowl, dissolve yeast in warm water and milk. Add the sugar, butter, salt, baking soda and 3 cups flour. Beat until smooth. Stir in enough remaining flour to form a firm dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour. , Turn onto a lightly floured surface; cover and let rest for 10 minutes. Divide into 32 pieces. Shape each into a 4-1/2-in. rope., Place melted butter in a shallow bowl. Place cheese in a second shallow bowl. Dip ropes in butter, then coat with cheese. Place 3 in. apart on lightly greased baking sheets. Combine Italian seasoning and garlic powder; sprinkle over breadsticks. Cover and let rise until doubled, about 30 minutes. , Bake at 375° for 10-15 minutes or until golden brown. Remove to wire racks. Serve warm.
