Spicy Vegan Mango and Tofu Stir-Fry image

This is a vegan sweet and spicy tofu stir fry that was inspired by a dish I get at my local Thai restaurant. I've been working through this recipe for several years now but finally have created something I love. Ensuring all of the ingredients are thinly cut results in uniform cooking as well as a crunchy and addictive texture. This recipe also works great with chicken if tofu isn't your thing!

1 (8 ounce) can diced pineapple, undrained
½ cup vegetable broth
1 mango - peeled, seeded and diced
1 habanero pepper, stemmed, or more to taste
1 (2 inch) piece fresh ginger, peeled and thinly sliced
4 cloves garlic
3 tablespoons soy sauce
1 tablespoon brown sugar
1 tablespoon rice vinegar
½ teaspoon ground turmeric
1 (12 ounce) package extra-firm tofu, pressed and cut into thin strips
1 tablespoon cornstarch, or as needed
2 tablespoons vegetable oil
3 stalks celery, cut into very thin strips
2 large carrots, cut into thin strips
2 mangos - peeled, seeded, and cut into thin strips
2 green chile peppers, cut into very thin strips
salt to taste
1 tablespoon chopped fresh cilantro, or to taste
1 tablespoon chopped scallions, or to taste

Steps:

  • Combine pineapple, broth, mango, habanero, ginger, garlic, soy sauce, brown sugar, rice vinegar, and turmeric in a small saucepan. Simmer over medium heat, 10 to 15 minutes.
  • Pour sauce contents carefully into the bowl of a food processor or electric blender and mix until smooth. Set aside.
  • Place tofu in a large mixing bowl and add enough cornstarch to lightly coat all pieces.
  • Heat a wok over high heat. Add vegetable oil to the hot wok; heat until shimmering, about 1 minute. Add tofu and stir-fry until uniformly golden brown, about 5 minutes. Transfer tofu to a plate and set aside.
  • Place celery, carrots, mangos, and green peppers into the wok and stir-fry until they are soft and have a bright color while remaining firm, about 5 minutes. Add tofu back to the pan with sauce and combine well. Taste and add salt as needed. Serve topped with cilantro and scallions.

The title says it all, I think. I like the peppery-ness of the napa cabbage with the sweet peppers. Feel free to add the veggies you like (sometimes I use eggplant). Just make sure you don't cook the veggies until they're mushy. You want them to still be firm, but not raw.

1 (8 ounce) package firm tofu (or extra firm)
2 teaspoons chili-garlic sauce (more or less according to taste)
2 minced garlic cloves
1 tablespoon sesame oil
4 tablespoons soy sauce (I use low-sodium)
1 tablespoon rice vinegar
2 tablespoons rice wine
1 teaspoon fresh grated ginger
1/4 cup low sodium vegetable broth
1 tablespoon sesame oil
1 cup mushroom, sliced in half
1 large red pepper (orange or yellow are good, too(just chop it into roughly 1 by 2 inch pieces)
1/4 cup sliced green onion
2 cups shredded napa cabbage
1/4 cup chopped fresh cilantro
1 teaspoon cornstarch (mixed in 2 T cold water, cornstarch slurry)

Steps:

  • Cube tofu into approximately 1 by 2 inch pieces.
  • Set on top of paper towels and press (not too hard, you don't want to mash the tofu) on the top with more paper towels to rid the tofu of excess moisture.
  • Mix: chili garlic sauce, minced garlic, 1 T sesame oil, soy sauce, rice vinegar, rice wine, ginger, and chicken/veg stock.
  • Add tofu into chili sauce mixture. Make sure all pieces are in contact with the liquid. Let soak for 15 to 20 minutes.
  • Put frying pan over med-high heat. Once pan has heated, add 1 T sesame oil.
  • Put marinated tofu in pan, brown all sides.
  • Remove tofu and set aside.
  • Add cornstarch slurry to remaining marinade, mix. (Add a few more tablespoons of soy sauce or rice wine or vinegar if necessary--you want this to be enough to eventually coat the vegetables as a light sauce).
  • Put mushrooms and peppers into frying pan. Stir constantly over high heat for 2 minutes.
  • Add green onion and napa cabbage. Stir constantly for 1-2 minutes.
  • Pour leftover marinade over vegetables, stir. Add browned tofu and chopped cilantro. When heated through, remove from heat.
  • Serve with rice.

Spicy chili tofu stir fry is the ultimate vegetarian dinner with a kick! It is packed with veggies and deliciously crisp tofu!

5 tablespoons low sodium soy sauce
1 tablespoon light brown sugar
1 1/2 tablespoons chili crunch sauce
1 package of super firm tofu (drained, pressed, and cut into cubes)
2 tablespoons cornstarch or arrowroot powder
1 jar of roasted red peppers (diced)
1 small bunch of broccolini (roughly chopped)
2 garlic cloves (minced)
1/2 teaspoon grated ginger

Steps:

  • In a small bowl, mix together ingredients for lava sauce, set aside.
  • Place two paper towels on a plate then place the entire block of tofu (drained from its packaging liquid) onto the plate. Place two more paper towels on top of the tofu then put a heavy item on top. Not TOO heavy that it would completely crush the tofu but heavy enough that it can squeeze out liquid. Leave for 30 minutes and halfway through, change out the paper towels.ALTERNATIVELY and more eco-friendly: place a wire baking rack on top of a rimmed baking sheet. Place tofu on top and then put a heavy object on top and let drain for 30 minutes.
  • Once the tofu has drained, slice in half then into cubes and place into a large bowl. Sprinkle cornstarch on top and gently toss with your hands to ensure all tofu pieces are covered.
  • In a large skillet, add avocado oil or vegetable oil and heat to medium-high. Add the tofu to the skillet and let cook until crispy. Do not touch it or flip for 3-4 minutes to ensure crispiness then repeat on all sides.
  • Remove tofu from skillet and put on a plate and set aside. Using the same skillet at medium heat, add red peppers, broccolini, garlic, and ginger. Cook until broccolini has softened, about 5-7 minutes. Add the sauce, bring to low simmer, then add tofu back in. Stir to coat everything and remove from heat.
  • Serve on top of white rice.

1 tablespoon sesame oil
1 onion, chopped
1 medium red bell pepper, chopped

Steps:

  • Drain tofu, rinse, and pat dry. Cut into squares.
  • Heat sesame oil in a wok over medium heat. Add onion and cook for 2 minutes. Add red pepper and stir-fry for 2 minutes. Stir in tofu and cook for 2 minutes. 2 large red bell peppers, seeded, thinly sliced
3 tablespoons minced fresh ginger
3 large garlic cloves, finely chopped
16 ounces extra firm tofu, drained well, cut into 1-inch cubes

3 tablespoons soy sauce
2 tablespoons fresh lime juice
1/2-3/4 teaspoon dry crushed red pepper
6 ounces baby spinach leaves

4 tablespoons corn oil
1 (1 lb) package firm tofu, cut into 1 inch cubes
1/2 cup cornstarch
1 bunch green onion, sliced
1 cup snow peas, trimed and sliced
1/2 lb mushroom, sliced
2 carrots, peeled and sliced
12 large shrimp (optional)
1 poblano pepper, sliced
1/4 cup rice vinegar
1/4 cup sweet and sour sauce
1 dash hot sauce (I use Frank's, or more to taste)

Steps:

  • Put cornstarch in pie pan.
  • Add tofu and coat on all sides.
  • Heat 2 TB oil in pan over medium-high heat.
  • Add tofu and cook until brown (be careful it turns very easily).
  • Remove and transfer to bowl.
  • Add remaining 2 TB oil to pan.
  • Saute vegetables (green onions- pepper) over medium heat until cooked through (10 minutes).
  • Add shrimp (if using) and continue cooking 5 minutes or until shrimp is pink.
  • Mix vinegar, sweet n' sour sauce and hot sauce in measuring cup.
  • Add sauce mixture and tofu to pan and cook 5 minutes longer.

  • Drain the tofu. Wrap each block in a double layer of paper towels and pat dry, pressing down on the tofu lightly to squeeze out excess moisture. Cut the tofu into 3/4-inch cubes.
  • In a large nonstick skillet or wok, heat the canola oil over medium-high heat. Once the oil is hot but not smoking, add the tofu (be careful, as the oil will splatter a little bit) and drizzle with 1 tablespoon soy sauce. Sauté, stirring every minute or so until the tofu is nicely colored on all sides and the moisture has cooked off, about 8 to 10 minutes. Don’t feel that you need to stir constantly. Sitting for a while on one side is what will allow the tofu to brown. Add the garlic, roughly two-thirds of the green onion, ginger, chili paste, and the remaining 2 tablespoons soy sauce. Stir and cook until fragrant, about 1 minute.
  • Add several large handfuls of spinach, stirring as you go so that it wilts and you can fit more in the pan. Once the first addition has wilted, continue to add and wilt the spinach by handfuls, until all of the spinach is added. It will seem like a ridiculous amount at first but will cook down considerably. Stir in the sesame seeds. Stir in the sesame oil. Remove from the heat. Sprinkle the reserved green onions over the top. Serve hot, with brown rice, noodles, or whatever you like, along with a few dashes of additional soy sauce and chili paste or flakes to taste.
