GRILLED HONEY CHIPOTLE CHICKEN KEBABS
The chicken kebabs grill up beautifully, with a fabulous caramelization.

- Prepare the honey and chipotle vinaigrette. Reserve 1/4 cup of the vinaigrette and place in refrigerator. Pour the rest of the vinaigrette into a shallow bowl or sealable plastic baggie. Add the chicken cubes to the shallow bowl of vinaigrette. Marinate for at least 2 hours, or overnight (longer is better!).
- If using wooden skewers, be sure to soak them in water for at least an hour before grilling. I used 8 wooden skewers that were about 9'' long.
- Heat grill pan or outdoor grill to medium-high heat and spray pan with non-stick cooking spray.
- Place onion and red pepper in a medium bowl and drizzle with olive oil.
- Thread chicken and vegetables alternately onto skewers. Discard marinade. Sprinkle kebabs with salt and pepper, to taste. Place kebabs on hot grill pan, turning the kebabs as each side gets beautifully charred, about 12 to 15 minutes total. When kebabs are almost done cooking, brush with reserved 1/4 cup of marinade and grill until done.
- Serve warm with cilantro lime rice.

SPICY CHIPOTLE HONEY CHICKEN KEBABS
With just four ingredients, you can make one killer of a grilled dinner. These Spicy Chipotle Honey Chicken Kebabs are bursting with spicy-sweet flavor!

- Cut chicken into 1 1/2″ chunks, removing any gristle or large pieces of fat.
- Combine honey, olive oil, and Chipotle Tabasco in a small mixing bowl. Season with Kosher salt and freshly ground black pepper.
- Place chicken and all but 1/4 cup of the marinade into a ziploc bag. Shake, jiggle, and massage the bag around gently to cover the chicken in the marinade. Let marinate in the refrigerator for at least 6 hours or up to overnight. Reserve remaining 1/4 cup marinade.
- Preheat grill over medium heat. Divide chicken between 8 skewers. If using wooden skewers, soak them in water for 20 minutes to avoid them burning on the grill.
- Grill kebabs, turning once or twice, until the chicken is cooked through, about 10-15 minutes.
- Transfer chicken kebabs to a serving platter and brush with the reserved 1/4 cup of marinade.
- Serve with rice and some grilled vegetables for one heck of a meal.

- Slice chicken into very thin strips with a very sharp knife. Thread accordion-style onto wooden skewers.
- In a small bowl, whisk together honey, tomato paste, apple cider vinegar, chipotle chili, optional salt, and chopped garlic. Spoon sauce over skewers.
