This wonderful gingery-garlic shrimp dish is served cold, and is a nice change from the usual "cocktail" shrimp. The directions listed below use 1 1/2 lb UNCOOKED shrimp, but this can be easily made using shrimp that's already cleaned as well as cooked. After the oil, garlic and ginger are heated, you may toss the already cooked shrimp in the pan and heat for a minute or two before tossing them with the other ingredients and chilling in the fridge. Cook time does not include time to chill.

1 red bell pepper, roasted and chopped
1/4 cup olive oil
1 1/2 lbs shrimp, peeled and deveined
3 tablespoons fresh ginger, grated
2 garlic cloves, minced
1 1/2 tablespoons lemon juice
1 tablespoon lime juice
1/4 teaspoon salt
1/2 teaspoon red chili oil (or more to taste)
1/4 cup chives or 1/4 cup scallion, minced

Steps:

  • In a large sauté pan, heat the oil, garlic and ginger over medium high heat until fragrant.
  • Add the shrimp and cook for 2-3 minutes, or until bright pink.
  • In a bowl, whisk the remaining olive oil, lemon and lime juice, scallion or chives, chili oil and salt.
  • Pour over shrimp and let sit in the refrigerator for at least an hour or even over night.
  • Before serving, toss shrimp with roasted red pepper.

This Spicy Confetti Shrimp is sauteed in butter and Old Bay seasoning. Assorted peppers, cabbage, onion and basil are finely chopped to resemble "confetti". Use a total of 1 1/2 cups diced peppers.

1 1/2 pound large shrimp (cleaned, deveined and peeled)
1/2 teaspoon cayenne pepper (or more)
2 teaspoons smoked paprika
4 cloves garlic (minced)
1 Tablespoon Old Bay seasoning
8 Tablespoons unsalted butter
2 Tablespoons Worcestershire sauce
1 1/2 cups Red, yellow and orange bell peppers (finely diced)
1/4 cup Purple cabbage (finely sliced)
1/4 cup Purple onion (finely diced)
1/4 cup Basil (cut chiffonade)

Steps:

  • Toss shrimp with cayenne, smoked paprika, garlic and Old Bay seasoning in a bowl. Let sit while you mince the veggies.
  • Heat butter over medium high heat and sauté the shrimp, 2 or 3 minute per side or until opaque and cooked through. Add Worcestershire sauce, stirring to coat shrimp.
  • Remove the shrimp from a pan with a slotted spoon. Add veggies and sauté another 2-3 minutes. Drizzle any remaining juices over the shrimp.
  • Sprinkle finely diced purple onion and bell pepper "confetti" and chiffonade of basil and cabbage over shrimp and rice.

This colorful casserole recipe is filled with vegetables, rice, shrimp, and a delicious sour cream and wine sauce.

1 Tbsp olive oil
1 medium onion, chopped
1 medium green pepper, chopped
1 medium red pepper, chopped
2 stalk(s) celery, cut into 1/2-inch pieces
2 green onions, sliced
1/2 lb mushrooms, sliced
1 clove garlic, finely chopped
1 1/2 c jasmine rice
1 can(s) chicken broth, low salt
1/4 can(s) white wine
2 c sour cream, fat-free
2 Tbsp lemon juice, fresh
1 1/2 tsp salt
1/8 tsp black pepper
1 lb shrimp, peeled and deveined
CHOPPED FRESH PARSLEY AND LEMON WEDGES, FOR GARNISH

Steps:

  • 1. 1. Heat oven to 350 degrees F. Grease 12 x 8 x 2-inch glass baking dish. 2. Heat oil in large nonstick skillet over medium-high heat. Add onion, green pepper, red pepper and celery; cook, stirring occasionally, about 12 minutes or until vegetables are softened. Add green onion, mushrooms and garlic; cook for 5 minutes. 3. Add rice; cook 1 minute. Add broth and wine. Bring to boiling. Reduce heat; simmer, uncovered, for 2 minutes. 4. Stir in sour cream, lemon juice, salt, pepper and shrimp; cook over medium heat until mixture just starts to lightly bubble. Turn into prepared casserole, spreading evenly. Cover with aluminum foil. 5. Bake in 350 degrees F oven for 50 minutes. Remove aluminum foil. Sprinkle top with parsley and serve with lemon wedges.

SWEET & SPICY SHRIMP (CHAMBORD SHRIMP)



Sweet & Spicy Shrimp (Chambord Shrimp) image

We really enjoyed this recipe. The Chambord really lends itself well to this dish and creates a nice fruity sweet that contrasts well with the heat of the jalapeno. The original recipe called for 5-6 ounces of olive oil, but we felt that 2 ounce was plenty. The sauce is really good so make sure you have some crusty bread to soak it up with. I served it on a bed of Hawaiian Rice (Recipe #179346) by Chabear01, but it would be equally good on plain white rice.

16 large shrimp, cleaned and raw
1 jalapeno, sliced into rounds with seeds intact
1 -2 tablespoon minced garlic
2 -3 ounces olive oil
2 1/2 ounces Chambord raspberry liquor or 2 1/2 ounces raspberry liqueur
baguette

Steps:

  • Butterfly shrimp, devein and set aside.
  • Heat oil in a sauté pan and stir in garlic. When garlic is golden add jalapeno slices and simmer. Lower heat and add shrimp upright to the mixture to cook, cover and simmer just long enough to give full even color. Remove shrimp and arrange on serving dish.
  • Add liqueur to oil mixture over heat, stir and reduce slightly. Pour reduced liquid, garlic and jalapeno evenly over shrimp.
  • Garnish with 2 half slices of baguettes.
