- Place all ingredients, except the toppings, in a medium-sized saucepan and cook over medium-low heat, constantly whisking, for 2 to 3 minutes, or until heated through.
- Pour into two coffee cups or glasses and top with whipped cream, marshmallows, mini chocolate chips, chocolate syrup and caramel syrup.
- Serve.

- In a medium pot, whisk together chocolate, cocoa, sugar and chile. Place pan over medium-low heat and whisk until chocolate begins to melt. Slowly whisk in milk, then cream. Drop in cinnamon stick. Bring to a simmer.
- Remove pot from heat. Cover pot tightly and steep 1 hour. Whisk in vanilla and taste for sweetness, adding more sugar if you like. Warm over low heat before straining and serving hot, with marshmallows or whipped cream if desired.

- In a small saucepan, whisk the milk, cocoa, coffee and sugar (or substitute) until combined.
- Heat on medium, whisking occasionally for about 5 minutes or until it just comes to a simmer.
- Remove pan from heat and stir in the Irish Cream or Coffee Liqueur.
- Pour into glass mugs.
- In a small saucepan, heat extra milk on low until warm.
- Using a stick blender, blend until frothy or use coffee machine attachment if you have one.
- Spoon froth over the drinks and serve.

- Bring the almond milk to a simmer in a large saucepan over medium-low heat (do not boil). Whisk in the chopped chocolate, cinnamon, vanilla, cayenne and salt; whisk until the chocolate has melted. - Combine the milk, chilies, and cinnamon sticks in a heavy large saucepan. Bring to a simmer over high heat. Remove from the heat. Cover and steep for 15 minutes. Whisk in the espresso, sugar, and 1 cup of cocoa powder. Bring the hot chocolate to a simmer, whisking often. Discard the chilies and cinnamon sticks.
- Meanwhile, whisk the powdered sugar and remaining 1/4 cup cocoa powder in a large bowl to blend. Add the cream and whisk until the mixture is thick.
