Spicy Chorizo Cheese Dip image

This incredibly easy Spicy Chorizo Cheese Dip only has five ingredients, no processed cheese, and is sure to be the star of your next party!

1/2 lb. Mexican chorizo ($2.00)
1 10oz. can diced tomatoes with green chiles (like Rotel) ($0.49)
1 12oz. can evaporated milk ($0.65)
12 oz. Monterey jack cheese*, shredded ($3.00)
3 green onions (garnish) ($0.25)

Steps:

  • Brown the chorizo in a skillet over medium heat until it is slightly crispy on the edges. If your chorizo is very fatty, drain some of it off before the next step (leave a couple of tablespoons of fat in the skillet).
  • Drain the diced tomatoes with green chiles, then add it to the skillet with the chorizo, and continue to stir and cook until most of the moisture from the canned tomatoes has evaporated away.
  • Pour the evaporated milk into the skillet. Stir and cook until heated through.
  • Turn the heat under the skillet down to low. Begin adding the cheese, one handful at a time, stirring until it is fully melted in before adding the next handful.
  • Once all the cheese has melted into the dip, turn the heat off. Garnish with sliced green onion and serve!

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 pkg. (8 oz.) KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
1/3 cup KRAFT Real Mayo
1 clove garlic, minced
1 cup sliced roasted poblano chiles (about 3 fresh)
1 cup sliced cooked mushrooms (about 1/2 lb. fresh)
1 cup cooked Mexican chorizo (about 1/2 lb. uncooked)

Steps:

  • Heat oven to 350°F.
  • Mix first 4 ingredients in medium bowl until blended.
  • Spoon into 9-inch pie plate or casserole dish.
  • Bake 10 min.; stir. Arrange chiles, mushrooms and chorizo over cheese mixture in 3 separate sections. Bake 10 min. Serve with warmed corn tortillas.

1/2 tablespoon extra-virgin olive oil, a drizzle
1/2 pound Spanish or Mexican chorizo, diced or casings removed and crumbled
1/2 pound mushroom caps, quartered
1 pound Mexican melting cheese or Monterey Jack or Pepper Jack cheese, diced
1 bag corn tortillas or blue corn tortillas, any variety
2 scallions, thinly sliced

Steps:

  • Preheat oven 375 degrees F
  • Heat extra-virgin olive oil in small skillet over medium-high heat. Add the chorizo and saute until the brown and the fat is rendered. Stir in the mushrooms and cook until just tender, 6 to 7 minutes. Transfer to small casserole or baking dish, top with cheese and bake until bubbly. Remove from the oven, garnish with scallions and serve with chips for dipping.

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the extra-virgin olive oil in small skillet over medium-high heat. Dice the Spanish chorizo and add to the pan to render the fat. If using fresh Mexican chorizo, remove the casing and crumble while it's browning. Add the mushrooms to the skillet and cook with the sausage until just tender, 6 to 7 minutes. Transfer the sausage mixture to a small casserole or baking dish and top with the cheese. Bake until bubbly. Remove from the oven and top with the scallions. Serve with chips for dipping.

1 small green pepper, chopped
1 small sweet red pepper, chopped
1 small onion, chopped
3 garlic cloves, minced
1 tablespoon vegetable oil
1/2 teaspoon cayenne pepper
2 cartons (12 ounces each) white Mexican dipping cheese
Tortilla chips

Steps:

  • Crumble chorizo into a large skillet; cook over medium heat for 6-8 minutes or until fully cooked. Drain. Remove and keep warm. In the same skillet, saute the peppers, onion and garlic in oil until tender. Stir in cayenne and chorizo; heat through., Heat cheese according to package directions; stir into meat mixture. Serve warm with tortilla chips. Refrigerate leftovers.

  • Cook and stir chorizo sausage in a skillet over medium heat until cooked completely, 5 to 7 minutes; drain and transfer to a slow cooker.
