This stir-fry is a good weekday dinner recipe. It can be made in about the time it takes to make a pot of rice to serve with it.

2 tablespoons vegetable oil
1 pound round steak, cut into thin strips on the diagonal
¼ cup orange peel, cut into slivers
1 clove garlic, minced
½ teaspoon ground ginger
2 tablespoons cornstarch
1 cup beef broth
¼ cup soy sauce
¼ cup sherry
¼ cup orange marmalade
½ teaspoon crushed red pepper flakes

Steps:

  • In a wok or skillet, heat oil over medium-high heat. Add beef strips 1/3 at a time. Stir-fry for 3 minutes or until browned, removing the done pieces to a plate lined with paper towels.
  • Return all the beef to the wok. Stir in orange peel, garlic, and ginger; stir-fry 1 minute.
  • In a medium bowl, combine cornstarch, broth, soy sauce, sherry, marmalade, and red pepper. Pour this mixture into the beef, stirring constantly. Bring to a boil over medium heat and cook for 1 minute. Serve hot.

These walnuts get tossed in a sweet and spicy glaze and are then perfectly roasted until golden brown. So easy and quick to make, these Maple Spiced Walnuts make a delicious treat and are sure to be a favourite!

¼ cup pure maple syrup
1 tablespoon light olive oil
½ teaspoon cinnamon
½ teaspoon ground ginger
¼ teaspoon nutmeg
¼ teaspoon salt
⅛ teaspoon cayenne pepper*
2 cups walnuts

Steps:

  • With a rack in the middle of your oven, preheat the oven to 325°F. Prepare a baking sheet by lining it with parchment paper.
  • In a medium bowl, combine the maple syrup, oil, cinnamon, ginger, nutmeg, salt and cayenne. Whisk together and add the walnuts, toss to coat walnuts well with the syrupy spice mixture.
  • Spread walnuts onto the baking sheet in one even single layer.
  • Bake in oven for 10 min, then stir and bake for approximately 10 minutes more until walnuts are golden brown. Remove from the oven and let cool completely on sheet.
  • Serve or store in an airtight container.

2 cups all-purpose flour
1 cup butter, softened
1/2 cup confectioners' sugar
2 teaspoons grated orange zest
1 teaspoon vanilla extract
1/4 teaspoon salt
4 ounces bittersweet chocolate, melted
1/4 teaspoon cayenne pepper

Steps:

  • Place first six ingredients in a food processor; process until dough comes together. Shape into a disk; wrap in plastic. Refrigerate 1 hour or until firm enough to roll., Preheat oven to 350°. On a floured surface, roll dough to 1/4-in. thickness. Cut with a floured 3-1/2-in. diamond-shaped cookie cutter. Place 1 in. apart on ungreased baking sheets. Refrigerate 15 minutes. , Bake 9-11 minutes or until until edges are light brown. Cool on pans 2 minutes. Remove to wire racks to cool completely., In a small bowl, mix chocolate and cayenne until smooth. Drizzle over cookies; refrigerate until set. Freeze option: Freeze undecorated cookies in freezer containers. To use, thaw in covered containers and decorate as desired.

1 quart ketchup (recommended: Heinz Tomato Ketchup)
2 1/4 cups orange marmalade
6 tablespoons Worcestershire sauce (recommended: Heinz Worcestershire Sauce)
6 tablespoons apple cider vinegar (recommended: Heinz Apple Cider Vinegar)
3 teaspoons ancho chili powder

Steps:

  • Combine all ingredients in a 3-quart or larger saucepan. Bring to a boil and then reduce the heat and simmer for 10 minutes, stirring occasionally. Use to baste ribs, chicken, or pork during the last 10 minutes of cooking. Serve as a dipping sauce with wings, fried shrimp, or chicken tenders. Store in an airtight container in the refrigerator and reheat before serving, if desired.

This recipe was graciously shared with me by a Jamaican friend, many years ago. It makes a delicious sauce, different from any other cranberry sauce I've ever tasted or made. It does not "gel" but you do want to cook it long enough to make a good, thick consistency. You can use 1 tablespoon of excellent quality ground cinnamon instead of the cinnamon stick, if you prefer. 2 pounds cranberries
2 tablespoons orange zest
3 cinnamon sticks
1 pint orange juice
2 cups packed brown sugar
2 cups water

Steps:

  • Place the cranberries, grated orange rind, cinnamon, orange juice, brown sugar and enough water to cover cranberries in a saucepan. Bring mixture to a boil over high heat. Immediately turn heat down and simmer for about 1 hour or until the sauce has thickened. Taste for sweetness and adjust with additional sugar if necessary. You can not overcook, so continue cooking until you have a good thick consistency. Let mixture cool a bit then refrigerate in a covered container.

1 cup packed brown sugar
2 eggs
2 tablespoons orange zest
3 tablespoons orange juice
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 cup raisins
1 cup chopped nuts
powdered sugar

Steps:

  • Cream together shortening,brown sugar and eggs.
  • Blend in grated orange peel and orange juice.
  • Stir together thoroughlythe flour,baking soda,spices and 1/2 tsp salt.
  • Add to creamed mixture and mix well.
  • Stir in rasins and nuts.
  • Spread in greased 15 1/2x10 1/2x1 inch baking pan.
  • Bake at 350 for 22-25 minutes.
  • Cool,cut into diamonds or bars.
  • Sprinkle with powdered sugar.

  • Then, add the corn starch mixture to the pot (you will need to mix very well the cornstarch mixture before transferring) and whisk well for about 30-60 seconds, still at medium-high heat, until the sauce thickens.
  • Let the sauce cool down in the fridge for about 20 minutes before eating, if possible. I find the flavors to be deeper after resting in the fridge for a little bit. The sauce will stay good in the fridge for 4 days. Serve with brown rice, roasted tofu and veggies.
