SPICY ORANGE BEEF
This stir-fry is a good weekday dinner recipe. It can be made in about the time it takes to make a pot of rice to serve with it.

- In a wok or skillet, heat oil over medium-high heat. Add beef strips 1/3 at a time. Stir-fry for 3 minutes or until browned, removing the done pieces to a plate lined with paper towels.
- Return all the beef to the wok. Stir in orange peel, garlic, and ginger; stir-fry 1 minute.
- In a medium bowl, combine cornstarch, broth, soy sauce, sherry, marmalade, and red pepper. Pour this mixture into the beef, stirring constantly. Bring to a boil over medium heat and cook for 1 minute. Serve hot.

- With a rack in the middle of your oven, preheat the oven to 325°F. Prepare a baking sheet by lining it with parchment paper.
- In a medium bowl, combine the maple syrup, oil, cinnamon, ginger, nutmeg, salt and cayenne. Whisk together and add the walnuts, toss to coat walnuts well with the syrupy spice mixture.
- Spread walnuts onto the baking sheet in one even single layer.
- Bake in oven for 10 min, then stir and bake for approximately 10 minutes more until walnuts are golden brown. Remove from the oven and let cool completely on sheet.
- Serve or store in an airtight container.

- Place first six ingredients in a food processor; process until dough comes together. Shape into a disk; wrap in plastic. Refrigerate 1 hour or until firm enough to roll., Preheat oven to 350°. On a floured surface, roll dough to 1/4-in. thickness. Cut with a floured 3-1/2-in. diamond-shaped cookie cutter. Place 1 in. apart on ungreased baking sheets. Refrigerate 15 minutes. , Bake 9-11 minutes or until until edges are light brown. Cool on pans 2 minutes. Remove to wire racks to cool completely., In a small bowl, mix chocolate and cayenne until smooth. Drizzle over cookies; refrigerate until set. SPICED ORANGE CRANBERRY SAUCE
This recipe was graciously shared with me by a Jamaican friend, many years ago. It makes a delicious sauce, different from any other cranberry sauce I've ever tasted or made. It does not "gel" but you do want to cook it long enough to make a good, thick consistency. You can use 1 tablespoon of excellent quality ground cinnamon instead of the cinnamon stick, if you prefer. - Place the cranberries, grated orange rind, cinnamon, orange juice, brown sugar and enough water to cover cranberries in a saucepan. Bring mixture to a boil over high heat. Immediately turn heat down and simmer for about 1 hour or until the sauce has thickened. Taste for sweetness and adjust with additional sugar if necessary. You can not overcook, so continue cooking until you have a good thick consistency. Let mixture cool a bit then refrigerate in a covered container.

- Blend in grated orange peel and orange juice.

- In a small sauce pan, add the rest of the ingredients and warm on medium-high heat whisking frequently until you reach a gentle boil (about 3 minutes).
- Then, add the corn starch mixture to the pot (you will need to mix very well the cornstarch mixture before transferring) and whisk well for about 30-60 seconds, still at medium-high heat, until the sauce thickens.
- Let the sauce cool down in the fridge for about 20 minutes before eating, if possible. I find the flavors to be deeper after resting in the fridge for a little bit. The sauce will stay good in the fridge for 4 days. Serve with brown rice, roasted tofu and veggies.

- Pat dry the duck breasts (thaw if frozen). With a sharp knife score the skin in a cross hatch pattern to get a diamond pattern of 1 inch sides.
