1 1/2 cups uncooked rotini pasta (4 ounces)
1 tablespoon vegetable oil
1 pound pork tenderloin, cut into 1/2-inch slices
1 medium onion, chopped (1/2 cup)
1 tablespoon finely chopped gingerroot
1 clove garlic, finely chopped
1/3 cup creamy peanut butter
1/4 cup chili sauce
1 teaspoon sesame oil
1/4 teaspoon salt
1/4 teaspoon ground red pepper (cayenne)
1 cup water
1/2 cup sliced green onions (5 medium)
4 roma (plum) tomatoes, chopped (1 1/2 cups)

Steps:

  • Cook and drain pasta as directed on package. Heat vegetable oil in 10-inch skillet over medium-high heat. Cook pork, onion, gingerroot and garlic in oil, stirring occasionally, until pork is no longer pink; reduce heat to low.
  • Stir in peanut butter, chili sauce, sesame oil, salt and red pepper. Gradually stir in water, stirring constantly, until peanut butter is melted. Heat to boiling; reduce heat to low. Simmer uncovered about 5 minutes, stirring frequently, until sauce is slightly thickened. Add pasta, green onions and tomatoes; toss until well coated.

Steps:

  • Cook pasta according to package directions.
  • Drizzle chicken with a little olive oil, season with salt & pepper and grill until done - set aside and keep warm.
  • While chicken and pasta are cooking - combine pb, soy, broth and chili paste in a small saucepan over medium heat
  • Cook until smooth and mix with pasta when ready
  • Place sliced chicken on top of pasta, and sprinkle with chopped nuts & cilantro.

2 boneless pork loin chops (about 5 ounces each), cut into 1-inch cubes
1/8 teaspoon salt
1/8 teaspoon pepper
2 teaspoons olive oil
4 ounces fresh snow peas
1/4 cup sliced sweet red pepper
2 green onions, sliced
3 garlic cloves, minced
1 to 2 teaspoons ground ginger
3/4 cup water
1/4 cup peanut butter
1 tablespoon sugar
1 tablespoon reduced-sodium soy sauce
1/8 teaspoon cayenne pepper
Hot cooked rice, optional

Steps:

  • Sprinkle pork with salt and pepper. In a skillet, cook pork in oil until juices run clear. Remove and keep warm. In the same skillet, saute the peas, red pepper, onions, garlic and ginger for 2 minutes. Return pork to the pan., In a small bowl, combine the water, peanut butter, sugar, soy sauce and cayenne until smooth. Pour over pork mixture; bring to a boil. Reduce heat; simmer, uncovered, for 1 minute. Serve over rice if desired.

1 tablespoon vegetable oil
4 teaspoons sugar
2 garlic cloves, minced
1 tablespoon minced peeled fresh gingerroot
4 tablespoons soy sauce
3 tablespoons fresh lemon juice
2 teaspoons Asian (toasted) sesame oil
2/3 cup smooth peanut butter
1 cup hot water
1 pound spaghetti or penne (quill-shaped pasta)
1 cup thinly sliced scallion greens

Steps:

  • In a heavy skillet cook the pork in the oil over moderate heat, stirring and breaking up the lumps, until it is no longer pink, add 2 teaspoons of the sugar, the garlic, the gingerroot, and 1 tablespoon of the soy sauce, and sauté the mixture over high heat until the pork is browned. In a blender blend together the remaining 3 tablespoons soy sauce, the lemon juice, the sesame oil, the remaining 2 teaspoons sugar, and the peanut butter and add enough of the hot water to thin the sauce to the desired consistency.

3 cloves garlic, thinly sliced
¼ teaspoon crushed red pepper flakes
½ cup soy sauce
½ cup chicken broth

2 tablespoons peanut oil for frying
1 onion, chopped
¾ cup cashew nuts
2 cups frozen mixed stir-fry vegetables

Steps:

  • In a large bowl, stir together the ginger, garlic, red pepper flakes, soy sauce, broth, and peanut butter. Stir in pork to coat. Set aside.
  • Heat oil in a wok or large skillet over medium-high heat. Stir in onions, and cook about 1 minute. Stir in cashews. Cook until unions are soft and translucent. Pour in pork and marinade. Cook until pork pieces are done, about 10 minutes. Stir in mixed vegetables, and cook 5 minutes more.

1/2 pound boneless pork chops, thinly sliced
1 pound penne or other tubular pasta, freshly cooked
1/2 hot house cucumber, halved lengthwise, thinly sliced
1/2 bell pepper, thinly sliced
3 green onions, thinly sliced
3 tablespoons chopped fresh cilantro
Spicy Peanut Sauce:
1/4 cup plus 2 tablespoons natural or old-fashioned peanut butter
1/4 cup fresh lime juice
3 tablespoons water
2 tablespoons soy sauce
2 teaspoons brown sugar
2 garlic cloves, pressed
1/4 teaspoon cayenne pepper

Steps:

  • To prepare the penne:
  • Heat oil in heavy medium skillet over high heat. Add pork to skillet and season with salt and pepper. Sauté until pork is cooked through, about 2 minutes. Cool completely.
  • Rinse pasta under cold water to cool. Drain well. Combine pasta, cucumber, bell pepper, green onions, cilantro and pork in large bowl. Add enough peanut sauce to season to taste. Serve pasta immediately.
  • To make the sauce:
  • Whisk ingredients to blend in bowl.
