PINEAPPLE DELIGHT
Light and refreshing, pineapple delight is a cool tropical dessert. Enjoy layers of cream cheese filling, pineapple, and whipped topping over a graham cracker crust.

Steps:
- Preheat the oven to 325°F.
- Lightly spray an 8x8-inch baking dish (metal or glass is fine).
- In a small bowl combine the 1¾ cups of crushed graham crackers, 8 tablespoons of melted butter, and 1 tablespoon of sugar.
- Press the graham cracker mixture in the bottom of the baking dish.
- Bake for 10 minutes. Allow the crust to completely cool.
- Using either a stand mixer or a handheld mixer, cream together the softened butter, cream cheese, and vanilla. Carefully add the powdered sugar a ½ cup at a time. Mix until the cream cheese mixture is smooth.
- Evenly spread the cream cheese filling over the completely cooled crust.
- Using the same bowl as the one used for the filling, gently fold the pineapple into the whipped topping.
- Gently spread the whipped topping over the cream cheese layer.
- Add the additional 1 tablespoon of crushed graham crackers to the top as garnish.
- Place the baking dish in the refrigerator for 4 hours to ensure the dessert is properly set.
- Keep refrigerated until serving.

ORANGE DELIGHT CAKE
Steps:
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease and flour two 8 inch cake pans.
- Sift together into a large bowl the cake flour, 1 1/3 cups sugar, baking powder, baking soda, and 3/4 teaspoons salt. Add grated orange rind, shortening, orange juice, and 1/3 cup water. Beat on medium speed for 2 minutes with an electric mixer, scraping bowl while beating. Add two whole eggs and beat batter for 2 more minutes. Beat in the lemon juice. Pour batter into prepared pans.
- Bake at 375 degrees F (190 degrees C) for 30 to 40 minutes. Remove cakes from pans and let cool. Frost with Double Boiler Icing or whipped cream. Sprinkle cake with grated orange rind and finely chopped nuts or coconut.
- To Make Double Boiler Icing: In the top of a double boiler put; the 2 egg whites, 1 1/2 cups of the sugar, 5 tablespoons water, 1/8 teaspoon salt, light corn syrup, and cream of tartar. Place over boiling water and beat until blended. Cook mixture beating constantly until mixture will stand in peaks. Remove from heat and add the vanilla. Continue beating until of spreading consistency, about 5 minutes. Spread onto cooled cake.

- Drain pineapple, reserving juice; set pineapple aside. Add enough water to reserved juice to equal 3/4 cup. In a saucepan, combine the pudding mix, milk powder, orange juice and juice mixture. Cook and stir until mixture comes to a full boil. Remove from the heat; stir in coconut extract. Cool for 5 minutes. Stir in marshmallows until melted. Fold in pineapple. Transfer to four individual serving dishes. Cover and refrigerate for 2 hours. Garnish with whipped topping and coconut.

I was just tickled with this recipe. Many years ago I had a similar recipe that used fresh strawberries and strawberry jello; it was very pretty and very tasty and I was sad when I lost my copy. But I like orange-pineapple even more than strawberries, so this recipe, found in a Jell-O cookbook, is a newfound treasure! Serve as a sweet salad, or a dessert. Perfect for a potluck or bbq.

Steps:
- Drain pineapple well, reserving juice.
- Place pineapple juice in a 2-cup measuring cup and add enough cold orange juice to make 1 1/2 cups liquid.
- Place orange jello in a large bowl and add boiling water; stir at least 2 minutes or until jello is completely dissolved.
- Stir pineapple/orange juice into jello.
- Reserve one cup of the jello mixture; leave this at room temperature.
- Stir half of the crushed pineapple into jello mixture in bowl; pour into a 6 cup mold that you've sprayed with nonstick cooking spray (like Pam).
- Refrigerate mold about two hours, or until set but not firm-- mixture should stick to your finger when touched, and should mound.
- Place cream cheese into mixing bowl and stir in reserved gelatin (what you've been keeping at room temp); whisk well until smooth.
- Stir in remaining crushed pineapple; spoon this mixture over gelatin layer in mold.
- Refrigerate for 4 hours or until firm; unmold and serve.
PINEAPPLE DELIGHT

- In a bowl, combine cracker crumbs and butter. Press into an ungreased 9-in. square dish. Refrigerate until firm. , In a bowl, combine gelatin and water; stir until dissolved. Cool to room temperature. In a blender, combine the cottage cheese and sugar substitute; cover and process until smooth. Slowly add gelatin mixture and blend until smooth. Pour into crust. Steps:
- Mix dry cake mix, eggs, oil and mandarin oranges with juice.
- Pour into a greased and floured 9x13 pan. Bake at 350 degrees for 30-40 minutes.
- Drain the pineapple. Pour 3/4 c juice from the crushed pineapple over the cake while still warm.
- Mix the drained pineapple with the pudding powder and whipped topping. Spread over cooled cake.
- Keep refrigerated.
