SPICY PINEAPPLE CHICKEN KABOBS
This is an easy grilling recipe for Spicy Pineapple Chicken Kabobs. The chicken is marinated in a sweet pineapple marinade and the kabobs are brushed with a spicy pineapple sauce during grilling.

- Start by draining the juice from a 20 ounce can of pineapple chunks into a glass bowl. The pineapple juice will be used for both the marinade and the grilling sauce.
- Mix together 1/4 cup of the pineapple juice, soy sauce, honey, vinegar, sesame oil, ginger, garlic powder and olive oil.
- Cut each chicken breast into pieces. Place all of the pieces in the marinade, cover and refrigerate for 30 minutes.
- In a small saucepan, mix together 1/2 cup of pineapple juice, honey, sriracha sauce, olive oil and soy sauce. Bring the mixture to a boil over medium high heat. Once it starts to boil, turn the heat down and simmer for 4-6 minutes. Remove from heat and set aside.
- Cut red, orange and yellow peppers into chunks. Slice an onion into chunks. Grab the drained pineapple chunks and the marinated chicken. Thread the ingredients onto 6 kabobs, alternating items, putting 6 pieces of chicken on each kabob. Don't forget that wooden skewers need to be soaked for 30 minutes before using.
- Heat the grill to medium-high heat. Brush the pineapple grilling sauce over the kabobs. Lightly oil the grill grates and then place the kabobs on the grill. Cook over medium-high heat, turning and brushing with pineapple grilling sauce often, for 12-15 minutes, until chicken is fully cooked.

SLAYER'S SWEET, TANGY, AND SPICY KABOBS
I acquired both my nickname and the idea for this recipe while working at an awful franchised restaurant in my college years. These are great for Summertime cookouts at tailgate partys or just for get-togethers. The sauce is fairly versatile and can be used for an array of different meats and applications (I originally used the sauce for chicken wings). For people such as myself who have acid reflux I have indicated some ingredients that can be left out in order to help curb the heartburn.

- Make the marinade by whisking the brown sugar, honey, lime juice, lemon juice, maraschino cherry juice, garlic powder, ginger, black pepper, cayenne pepper, pineapple juice, wine, hot pepper sauce, and soy sauce together in a large, non-metallic bowl. Toss the mushrooms, onion, bell pepper, tomatoes, and chicken in the marinade; cover and refrigerate at least 1 hour.
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- On each skewer, thread a piece of chicken, then three of the veggies followed by another piece of chicken then a pineapple slice and one maraschino cherry at the end. Mix and match the vegetables as you assemble the skewers. Cook on the preheated grill until the chicken is no longer pink in the center and the vegetables are tender, about 10 minutes.

SWEET AND SPICY PINEAPPLE KABOBS
A delicious dessert, great for summer grilling, from the grocery store. Be sure to soak your skewers if you use wood, about 30 minutes in water should do.

Steps:
- Start the grill.
- Combine brown sugar, rum or pineapple juice, vanilla extract, cinnamon, and chili pepper flakes.
- Stir until the sugar is fully dissolved into the mixture.
- Using two skewers per serving, thread the pineapple cubes onto them so that you get six kebabs. The use of two skewers for each one will make it easier to turn.
- Brush both sides of each kebab with the sugar mixture. Reserve the remaining mixture. Let sit for 10 minutes.
- Cook for 10 minutes on grill, or until golden brown, basting with remaining mixture and turning occasionally.
- Enjoy as-is, or serve with vanilla ice cream.

- To prepare the marinade: Whisk together the marinade ingredients. Pour into a large plastic storage bag. Add the chicken chinks and place into the fridge to marinate for at least 4 hours, preferably overnight.
- To prepare the kabobs: Remove the chicken from the marinade. Thread onto skewers alternating the peppers, chicken, pineapple and onion chunks onto the skewers. Season everything lightly with salt and pepper.
- To grill: Oil grill grates and preheat grill to medium-high heat. Cook the kabobs rotating as needed so they will cook evenly. About 2-3 minutes on all sides. The kabobs should char, but, not burn.
- In the last 2 minutes of grilling, reduce the grill temperature to medium and begin to baste the kabobs with the spicy pineapple glaze until lightly charred
