EASY RAISIN CAKE



Easy Raisin Cake image

A not too sweet cake packed with raisins. Perfect with coffee or tea and a wonderful departure from the typically sweet holiday goodies.

1 cup raisins
2 cups water
½ cup butter
1 teaspoon baking soda
½ teaspoon salt
1 cup white sugar
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 cup chopped walnuts
1 ¾ cups all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 10 x 10 inch baking pan.
  • In a large saucepan boil the raising with the water for 10 minutes. Add the butter or margarine and let cool.
  • In the same pan add the flour, soda, salt, sugar, cinnamon, nutmeg, and chopped nuts (optional), mix well and pour batter into a lightly greased 10x10 inch baking pan
  • Bake at 350 degrees F (175 degrees C) for 35 minutes. Serves 8 to 12.

4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground nutmeg
1 cup butter
2 cups white sugar
2 eggs
2 ½ cups applesauce
1 ½ cups chopped walnuts
2 cups raisins

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9x13 inch pan. Mix together the flour, baking soda, cinnamon, cloves and nutmeg. Set aside.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time. Beat in the flour mixture alternately with the applesauce. Fold in the walnuts and raisins. Pour batter into prepared pan.
  • Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

1 cup sour cream

Steps:

  • Grease angel food cake pan or 9x13 pan. I use the angel food pan.
  • Cream together butter and 1 cup sugar till fluffy.
  • Add eggs and vanilla and beat well.
  • Add sour cream and blend inches.
  • Combine flour, baking powder and soda and salt. Whisk to combine.
  • Add to creamed mixture and mix well.
  • Mix sugar, nuts and cinammon in small bowl.
  • Pour half of your mixture in the prepared pan.
  • Top with raisins and half the nut mixture.
  • Spoon on the rest of the batter and top with remaining nut mixture.
  • Bake at 350 degrees for 40 minutes or until toothpick come out clean.

2 tablespoons all-purpose flour (3 1/4 cup total)
1 tablespoon coarse salt
2 cups softened unsalted butter
2 cups sugar
1 teaspoon pure vanilla extract
9 large room temp eggs
2 cups raisins
2 tablespoons ground cinnamon
2 cups confectioners' sugar
4 -5 tablespoons milk

Steps:

  • Preheat oven to 325 degrees. Butter two 5-9 in loaf pans.
  • Combine 3 1/4 cups all purpose flour and salt in a bowl.
  • Cream butter and sugar with a mixer on high speed until pale and fluffy. Scrape down sides of bowl.
  • Reduce speed to med. and add vanilla extract.
  • Lightly beat eggs, and add to butter mixture a little at a time, mixing thoroughly and scraping down sides.
  • Reduce speed to low, and add flour mixture a little at a time, mixing until just blended. Toss raisins in remaining 2 tablespoons of flour; fold into finished batter.Divide batter in half with 2 bowls. In one bowl,fold cinnamon into the batter. I wanted to make a lighter version of the traditional coffee cake, and came up with this recipe. We loved it at home! We eat it as a snack or at breakfast. This is a delicious alternative to the traditionally butter- and sour cream-heavy coffee cake. The raisins add a lovely fruity bite, and applesauce, coconut oil, and nonfat yogurt give the cake a lighter, naturally sweetened taste. Wrap in aluminum foil to keep moist outside of the refrigerator for up to 4 days.

¼ cup white sugar
¼ cup brown sugar
Coffee Cake:
1 serving nonstick cooking spray
