RED CHUTNEY FOR CHAAT RECIPES
Spicy and hot red chutney for chaat snacks, made with just three ingredients - dry red chilies, garlic and salt. This chutney is versatile and can be added to chaat like sev puri, ragda patties, dahi sev batata puri, bhel puri and even to wraps, sandwiches or with pakoras (fritters). Just a little is enough to spice up the dish.

Steps:
- Break the red chilies. Deseed them if required.
- Soak the red chilies in hot water for about 30 mins. The water just needs to cover them.
- Peel and roughly chop the garlic.
- Drain the red chilies.
- Adding very little water grind both the red chilies and garlic in a chutney grinder or blender till smooth. The consistency of the chutney should be more towards thicker side or of medium consistency.
- Pour the red chutney in a small jar or bowl. Cover and refrigerate.
- When preparing chaat snacks, just add a small amount of red chili chutney while topping the chaat with other chutneys.

Spicy and sweet - ginger, garlic, chili powder, and curry paste are just a few of the flavors in this tomato chutney. Best made with tomatoes fresh from the garden.

Steps:
- Fill a saucepan with water, and bring to a boil. Place tomatoes in boiling water, and cook for 3 to 5 minutes, or until skins begin to crack and peel. Remove from water, cool, and peel.
- Puree tomatoes with ginger and garlic in a food processor or blender.
- Place tomato mixture, sugar, vinegar, onions, and golden raisins in a large saucepan. Season with mixed spice, chili powder, paprika, and curry paste. Simmer over medium heat until thick. Refrigerate until ready to use.

This spicy delicious red chutney is perfect with any Indian starters or just as a dip to spice up your meal

Steps:
- First wash and chop the tomato, onion and green chilli
- Then add all ingredients into a blender and blend until a thick ( but not tooo thick) paste. Only add a small amount of ketchup and mint sauce as you can add more afterwards.
- Taste to see if you would like to add anymore of any of the ingredients.
- Now chill in the fridge for at least 25mins.And enjoy!
