This Spicy Italian Sausage and Peppers Pasta recipe is simple, flavorful, satisfying, & QUICK! 10 simple ingredients + the best weeknight or date night dinner.

8 ounces rigatoni (or short pasta of choice)
2 tablespoons olive oil
1 pound bulk spicy Italian sausage (see Recipe Notes)
1 bell pepper (yellow, orange or red), diced
1 yellow onion, diced
3 cloves garlic, minced
1 teaspoon crushed red pepper flake
1/4 cup tomato paste
1/2 cup white wine (can sub chicken broth or vegetable broth)
1 14-ounce can crushed tomatoes
1/2 cup grated parmesan
Kosher salt
for serving, as desired: grated parmesan, crushed red pepper flakes, thinly sliced fresh basil, etc.

Steps:

  • Bring a large pot of salted water to a boil. Add the rigatoni, or pasta of choice, and cook to al dente according to package directions. Reserve 1 cup of starchy pasta water, then drain the pasta & set aside.
  • Add the olive oil to a large skillet over medium-high heat. Once hot, add in the sausage, bell pepper & onion, seasoning with 1 teaspoon Kosher salt. Use a wooden spoon to break the sausage into fine bite-sized crumbles as it cooks. The sausage should render & brown nicely & the peppers & onions should soften. If anything starts to brown too quickly, reduce the heat to medium or medium-low. Add in the garlic & crushed red pepper flake, cooking until just fragrant, about 30 seconds to 1 minute.
  • Stir the tomato paste into the skillet. As it heats, stir to coat the sausage & veggies. Cook for 1-2 minutes, until deeply red, then deglaze the skillet with the white wine. Increase the heat to medium-high. Once the wine simmers, add in the crused tomatoes & parmesan. Stir to combine, then reduce the heat to medium-low. Let the sauce simmer for 5 minutes to thicken slightly & build flavor.
  • Once the sausage & peppers have simmered in the sauce, add the pasta to the skillet. Toss to coat, adding some of the reserved pasta water as needed to loosen up the sauce so it coats the pasta nicely. Let the pasta simmer in the sauce for 1-2 minutes, just to bring everything together, then remove from the heat.
  • immediately, topped with extra grated parm, crushed red pepper & a sprinkling of thinly sliced basil, as desired. Enjoy!

I am so in love with this spicy, creamy, cheesy pasta for all of those reasons. It is just packed with so many incredible flavors. This came from Kevin & Amanda. When I made this recipe I made minor changes to the recipe. I used vegetable oil, mozzarella flavored sausages, half & half, and cheddar cheese. Next time I plan to not use Rotel as this was a bit to spicy for my families taste.

  • Remove skillet from heat and stir in 1/2 cup cheese. Top with remaining cheese and sprinkle with scallions. Broil until cheese is melted, spotty brown, and bubbly.

3 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
1/2 teaspoon crushed red pepper flakes
Two 28-ounce cans plum tomatoes, crushed by hand
1 cup chopped fresh basil, plus 4 large fresh basil sprigs
1 pound dried rigatoni
1 pound spicy Italian sausage, casings removed
1 1/2 cups shredded mozzarella
1 1/2 cups shredded provolone
1 cup grated Parmesan

Steps:

  • Preheat the oven to 450 degrees F.
  • Bring a large pot of salted water to a boil. Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of the tomatoes and 1 cup water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the basil sprigs and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. 2 teaspoons canola oil
8 hot Italian sausage links
1/2 pound sliced fresh mushrooms
1 small sweet onion, chopped
2 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes with mild green chiles, undrained
1/2 cup beef stock
1/2 cup dry white wine or additional stock
1 package (12 ounces) fettuccine or tagliatelle
Grated Parmesan cheese, optional

Steps:

  • In a large skillet, heat oil over medium heat; brown sausages on all sides. Transfer to a 3-qt. slow cooker, reserving drippings in pan., In same skillet, saute mushrooms and onion in drippings over medium heat until tender, 4-5 minutes. Stir in garlic; cook and stir 1 minute. Stir in tomatoes, stock and wine; pour over sausages. Cook, covered, on low 6-8 hours (a thermometer inserted in sausages should read at least 160°)., To serve, cook fettuccine according to package directions; drain. Steps:

  • Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the sausage and cook until browned, breaking up with a wooden spoon, about 8 minutes.

1 tbsp olive oil
packet of 8 pork sausages (the best your budget will allow), cut into chunky pieces
1 large onion, chopped
2 garlic cloves, crushed
1 tsp chilli powder
400g can chopped tomatoes
300g short pasta such as fusilli or farfalle (just over half a 500g bag)

Steps:

  • Put a large pan of water on to boil.
  • Heat 1 tbsp olive oil in a large frying pan and fry chunky pieces of 8 pork sausages on a fairly high heat until they are golden brown all over.
  • Now turn the heat down and add 1 large chopped onion and 2 crushed garlic cloves, cooking them until they have softened.
  • Stir in 1 tsp chilli powder and 400g chopped tomatoes with the sausages, bring the sauce to the boil then turn the heat down and let it bubble for about 10 minutes while you cook the pasta.
  • Drop 300g pasta into the pan of boiling water and cook according to the pack instructions.
  • Drain the pasta, then tip it into the frying pan with the sausage sauce, mixing well to coat. Dish up immediately with crusty bread.
