You've never tasted sausage quite like this before! The secret to this special recipe from South Africa lies in the spices, which include coriander, cloves, allspice and nutmeg. I've been cooking for a while, and this is one of my favorite recipes.

2-1/2 pounds ground beef
1/2 pound ground pork
2-1/4 teaspoons salt
1-1/2 teaspoons ground coriander
1 to 1-1/2 teaspoons ground allspice
3/4 teaspoon ground cloves
3/4 teaspoon pepper
1/2 teaspoon ground nutmeg
1/4 cup cider vinegar

Steps:

  • Crumble beef and pork into a large bowl. Combine the seasonings; sprinkle over meat. Add vinegar and mix well. Cover and refrigerate for 1 hour. , Shape meat mixture into 2-1/2-in. patties. In a large skillet, cook patties over medium heat for 4-5 minutes on each side or until a thermometer reads 160°.

1 teaspoon salt
1 teaspoon crushed red pepper
½ teaspoon ground marjoram

Steps:

  • Combine ground pork, sage, salt, crushed red pepper, marjoram, black pepper, onion powder, and thyme leaves in a large bowl; mix until evenly combined. Form mixture into 10 small patties.
  • Heat oil in a large skillet over medium-high heat. Working in batches, cook patties for 3 minutes. Flip and cook 3 minutes more or until juices run clear. An instant-read thermometer inserted into the center should read at least 160 degrees F (73 degrees C). Transfer patties to a paper towel-lined plate to absorb any excess grease.

Steps:

  • In large bowl, beat egg until foamy.
  • Add pork, breadcrumbs onion, garlic, chili powdeer, hot pepper sauce, salt and pepper, oregano, cinnamon, cumin and cloves.
  • Mix well.

  • Place on roasting rack.
  • Cover with paper towel and microwave on HIGH for 2 minutes.
  • Turn patties over.

2 pounds coarsely ground fresh pork butt, chilled
1/2 pound coarsely ground fresh pork fat (available at butcher shops), chilled
2 large garlic cloves, minced and mashed to a paste with 2 teaspoons salt
2 teaspoons black pepper
1 tablespoon dried sage, crumbled
3 tablespoons minced fresh thyme leaves or 1 tablespoon crumbled dried, plus, it desired, fresh thyme sprigs for garnish
1/2 teaspoon cayenne, or to taste
2 tablespoons vegetable oil

Steps:

  • In a bowl combine well the pork butt, the pork fat, the garlic paste, the pepper, the sage, the thyme leaves, and the cayenne and chill the mixture, covered, overnight. Divide the mixture into 16 balls and flatten each ball into a 1/3-inch-thick patty. In a large skillet heat the oil over moderate heat until it is hot but not smoking, in it fry the patties in batches for 4 minutes on each side, or until they are golden brown and no longer pink within, and drain them on paper towels. Transfer the patties to a serving plate and garnish them with the thyme sprigs.

I was making my annual Christmas Pasta for the holiday and my mom and I bought duplicate meats so we had lots of leftover hot and sweet sausage and ground beef. Well, the next day, this recipe was born.

2 tablespoons extra-virgin olive oil, plus some for drizzling
1 red bell pepper, finely chopped
1 large onion, chopped and divided
2 ribs celery, chopped
1 cup shredded carrots
Salt and pepper, for seasoning, plus coarse black pepper for finishing sauce
1/2 pound ground beef
3/4 pound bulk hot sausage
3/4 pound ground sweet sausage
1 egg
3/4 cup bread crumbs, 3 generous handfuls, Italian or plain
1/2 cup grated Parmigiano or Romano, a couple of handfuls
1/8 pound pancetta, 4 slices, chopped
3 cloves garlic, chopped
Splash red wine
1/2 cup beef stock
1 can petite diced tomatoes or stewed tomatoes
1 tablespoon Worcestershire sauce
2 teaspoons hot sauce
Serving suggestion: green salad

Steps:

  • Preheat oven to 425 degrees F.
  • Heat a small skillet over medium heat with 2 tablespoons extra-virgin olive oil. When the oil is hot, saute the red pepper, half the onions, celery and carrots together, 5 minutes, season with salt and pepper then remove to a plate to cool.
  • Mix ground beef and sausages with egg, bread crumbs, cheese, and cooled vegetables. Form 4 large oval shaped patties no more than 1 1/4 inches thick then drizzle with extra-virgin olive oil. Place in the oven on a cookie sheet and bake 17 to 18 minutes, until cooked through.
  • Heat a medium sauce pot over medium high heat. Add a drizzle of EVOO to the pan and the pancetta. Let the pancetta crisp up a bit and render fat, then add onions and garlic and cook until tender, 8 to 10 minutes. Add a splash of red wine to deglaze the pan. Stir in the beef stock and tomatoes and season sauce heavily with coarse black pepper. Add Worcestershire and hot sauce and reduce heat to warm.
  • Serve meatloaves with Italian barbecue sauce on top and green salad alongside.

Steps:

  • Mix together the pork, garlic, sage, thyme, fennel, nutmeg, salt, and pepper in a medium bowl. Add the egg white and combine thoroughly. Cover and chill for at least 15 minutes.
  • To easily form the sausage patties, rinse your hands in cold water. Divide the mixture into eighths and shape each portion into a 2 1/2-inch disk. Patties can be made to this point and refrigerated or frozen until ready to use.
  • Heat a skillet over high heat, and then swirl in the oil. Fry the sausages on both sides until completely cooked through and golden brown, about 4 minutes per side. Drain and serve immediately with pancakes, waffles or eggs. Sausage patties can be fully cooled, wrapped, and frozen for microwave reheating.

This delicious sausage can be stuffed into casings or formed into patties. I use a wide-mouth canning jar ring and lid to make the patties. Place the ring, top down on the counter. Lay a piece of plastic rap on top of it. With an ice cream scoop, place the sausage into the ring. Lay another piece of plastic wrap on top and smash down with the lid. Perfect size for muffin, egg, cheese and sausage sandwich.

Steps:

  • Skin sausages, place in a bowl with the spring onion and stir well. Divide the mixture into 8 and shape into round patties. On a plate, mix together 2tbsp flour with the herbs. Dip the patties in to coat each side.
  • Cook the potatoes in boiling water for 10 - 15 mins until tender. Meanwhile heat 3/4 oz of the butter and half the oil in a frying pan, then fry the onion for 10 mins until golden brown. Stir in the cranberry sauce and cook until it's dissolved. Stir in the remaining flour and cook until it turns golden. Remove from the heat and gradually stir in the stock. Return to the heat and cook until the gravy has thickened slightly. Season to taste.
  • Drain and mash the potatoes with the milk and butter and add the mustard, if liked. Keep warm.
  • Heat the remaining oil in a frying pan, then cook the patties until golden on each side. Reheat the gravy.
  • Place some mash in the centre of each plate, top with two of the patties and spoon over the gravy. Serve with mixed vegetables.
