I've used this yummy recipe several times with great success. It's become a popular item at parties and brunch in my home.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
- Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain and crumble. Spread into bottom of baking dish. Sprinkle with Cheddar cheese, Monterey Jack cheese, onion, chile peppers, and jalapeno pepper. In a medium bowl, mix eggs with chili powder, cumin, garlic powder, salt and pepper. Pour over contents of baking dish.
- Bake in preheated oven for 18 to 22 minutes, or until a knife inserted into the center comes out clean. Cool for 10 minutes, then cut into squares.

- Heat 1 Tbsp olive oil in a large skillet over high heat. Add shrimp to skillet and cook shrimp until just opaque in center, stirring often, about 5 minutes. Transfer shrimp to a plate.
- Add 1 Tbsp olive oil to skillet and saute onion until translucent. Add peppers and sausage, cover and cook for about 5 minutes, stirring occasionally. If necessary, add another Tbsp of olive oil if veggies are sticking to the skillet.
- Add zucchini and minced garlic to the skillet and stir. Add tomato paste and chicken broth, and stir everything. Season with salt, freshly ground pepper and spices (1/2 tsp basil, 1/2 tsp thyme, 1/2 tsp oregano, 1/4 tsp red pepper flakes). Cook for another 5 - 7 minutes until the sauce is thickened and vegetables are tender.
- Add shrimp and cook for another 3 minutes until the flavors are fully incorporated.

- Dice the onion and pepper. Heat a little olive oil in a skillet/frying pan and add the onion. Cook, stirring now and then, for around 5min until it is softening but not burning - add a little more oil if needed. Add the pepper and cook another couple minutes.
- Meanwhile remove the casing from the sausages. Add it to the pan, breaking it up as you go with a wooden spoon. Stir regularly so the sausage browns all over.
- Add the pasta, tomatoes and water. Cover and bring to a boil, reduce to a simmer then leave to cook until the pasta has cooked (around 8min, depending on your pasta).
- Once the pasta has cooked, stir in the yogurt and parmesan, mix in well then serve with a little more parmesan on top.
