STRIPED BASS WITH FRESH FIGS



Striped Bass with Fresh Figs image

This recipe is inspired by a dish served at a pinot noir dinner at Bar Boulud, one of the chef Daniel Boulud's restaurants. There, a whole wild striped bass was swaddled in fresh fig leaves and stuffed with fresh black figs in a red wine sauce. The brooding sauce bathed velvet figs, and its earthy depths made the already succulent fish a fine partner for some excellent bottles of red. My version, which uses fillets and omits fig leaves, is about as delicious as I remembered and much easier than I expected.

1 tablespoon extra virgin olive oil
2 large shallots, sliced thin
1 large clove garlic, slivered
16 ripe black figs, not too soft, stemmed and halved vertically
1/2 teaspoon ground cloves
3 tablespoons saba (Italian grape-must syrup); or pomegranate molasses
3/4 cup dry red wine
3 1/2 tablespoons soft unsalted butter, preferably high fat (84-86 percent)
Salt and ground black pepper
28- to 30-ounce fillet of wild striped bass, with skin, or halibut
1 tablespoon flour

Steps:

  • Place 1 tablespoon oil in a large skillet on medium heat. Add shallots and garlic and sauté until soft, about 5 minutes. Add figs and continue to sauté another minute or two, until they are warmed through and just start to soften. Sprinkle with cloves. Add saba and continue cooking until the syrup just coats the bottom of the pan. Stir in wine. Remove figs and as many shallots as you can from the pan, draining well.
  • Increase heat to medium-high and cook sauce until wine has reduced by half. Reduce heat to medium-low. Add 2 tablespoons of the butter bit by bit, swirling it in. Cook a minute or so more, until sauce starts to become syrupy. Season with salt and pepper to taste. Remove from heat.
  • Heat a broiler. Place rack about 4 inches from the source of heat. Dry fish. Dust skin side of bass or bottom side of halibut with flour. Flip fillet and season top surface well with salt and pepper. Heat remaining butter on medium-high in a large, heavy skillet, preferably cast iron. Place fish, floured side down, in skillet and sear 2 minutes. Brush top surface of fish with some of the sauce and place fish under the broiler. Broil about 7 minutes, until just cooked through. Remove from heat. Transfer fish to a warm platter.
  • Return figs and shallots to the sauce, heat on medium a minute or so, then spoon sauce with figs around the fish on the platter. Serve.

2 1/2 pounds new red potatoes
Kosher salt and freshly ground black pepper
3/4 cup mayonnaise, such as Hellmann's
2 tablespoons apple cider vinegar
1 tablespoon chipotle in adobo puree
1/2 tablespoon grainy Dijon mustard
5 green onions, sliced, green and pale green parts
1/2 bunch fresh cilantro, leaves chopped
Canola oil, for the pan
3 ears corn, shucked and kernels removed
Kosher salt and freshly ground black pepper
4 ounces jarred piquillo peppers, drained and sliced or diced
1 jalapeno, finely diced
2 tablespoons olive oil, plus more as needed
4 green onions, thinly sliced, green and pale green parts
1 lime, zested and juiced
1 cup packed spinach leaves
1 cup olive oil
1/4 cup packed fresh basil leaves
Kosher salt and freshly ground black pepper
1 whole striped bass, broken down into fillets
Canola oil, for the pan
Kosher salt and freshly ground black pepper
Finely grated zest of 1 lemon

Steps:

  • For the chipotle potato salad: Put the potatoes in a large pot, cover with cold water and add a generous amount of salt. Bring to a boil and cook until a skewer inserted in a potato meets with no resistance, about 25 minutes. Drain and transfer to a baking sheet. Let cool for 5 minutes, then slice into 1/4-inch-thick slices.
  • While the potatoes are cooking, whisk together the mayo, vinegar, chipotle, mustard and 1/2 teaspoon pepper in a large bowl; add salt to taste. Add the potatoes, green onions and cilantro and mix gently to combine. Season with more salt and pepper, if needed.
  • For the corn relish: Heat some canola oil in a saute pan over high heat. Add the corn, season with salt and pepper and cook until heated through, about 2 minutes. Add the piquillo peppers and jalapeno and cook for a few minutes longer.
  • Transfer the corn mixture to a bowl, add the olive oil, green onions and lime zest and juice. Let sit at room temperature for at least 15 minutes to allow the flavors to meld.
  • For the basil oil: Prepare an ice bath. Bring a small pot of water to a boil over high heat.
  • Add the spinach to the boiling water and blanch for 20 seconds. Remove with tongs and plunge immediately into the ice bath. Let sit 5 minutes, then drain and squeeze out any excess water. Set aside.
  • Combine the oil and basil leaves in a blender, add salt and pepper to taste and blend for a few minutes until the basil is completely pureed. Add some of the spinach (to make it greener). Strain through a fine-mesh strainer set over a bowl.
  • For the striped bass: Preheat the oven to 250 degrees F.
  • Brush a cazuela or small cast-iron pan with canola oil. Season the bass on both sides with salt and pepper. Put the bass fillets in the pan and roast until opaque in the center, about 30 minutes.
  • Drizzle the fish with the basil oil and sprinkle with lemon zest. Serve with the potato salad and corn relish.

1 bunch asparagus, snapped where it wants to naturally break
2 cups sugar snap peas, tips and strings removed
1 cup shelled fava beans
Extra-virgin olive oil
3 cloves garlic
1 cup morel mushrooms, cleaned and cut lengthwise in 1/2
1/2 cup chicken or vegetable stock
Four 6-ounce wild striped bass fillets, with skin

Steps:

  • Bring a large pot of well-salted water to a boil. Meanwhile, fill a large bowl with ice water and salt it well. Place the asparagus in the boiling water and cook until the water comes back to a rolling boil. Remove and place it immediately in the salted ice water. When the asparagus has cooled completely, remove it from the water and reserve. Repeat this process with the sugar snap peas and then the fava beans. You can use the same blanching water for all of the veggies, just be sure to always do the fava beans last. Fava beans have very high iron content and will turn the blanching water black. After the beans are blanched and cooled, remove the tough outer skin to reveal a lovely spring green fava bean.;
  • Coat a large saute pan with olive oil. Smash the three garlic cloves with the heel of your hand and add to the saute pan. Bring the pan to a medium high heat. When the garlic has become golden brown and very aromatic remove it from the pan and discard it. It has fulfilled its garlic destiny. Add the mushrooms and stock, season generously with salt, and saute for 1 minute. Add the prepared veggies, season with salt and saute until all the ingredients are coated with oil and hot and almost all the stock has evaporated. Serve immediately or later at room temperature.;
  • Take the fish out of the refrigerator about 10 to 15 minutes before using. Pat the skin dry with a paper towel and season the fish on both sides with salt. Heat a large saute pan coated generously with extra virgin olive oil over high heat. Coat the bottom of another slightly smaller saute pan with olive oil. Gently place the fish fillets skin side down in the saute pan and place the other saute pan directly on top of the fish. The purpose of this is to gently press the skin of the bass onto the bottom of the saute pan to create a lovely crispy fish skin. Be sure to oil the bottom of the top saute pan or the fish will stick to it. After a couple of minutes remove the top saute pan from the fish, this will allow the steam to escape and the skin to become very crispy. As fish cooks it turns from translucent to opaque. The idea is to cook the fish 2/3's of the way on the skin side and flip it over for the last 1/3 of the cooking time. The rule for fish is about 7 to 8 minutes per inch of thickness, a little less if you like your fish more on the rare side.
  • Serve the fish over the sauteed spring veggies and call your self a superstar!

STRIPED BASS POACHED IN SPICY SOY SAUCE



Striped Bass Poached In Spicy Soy Sauce image

Poaching fish in a mixture of soy sauce and water is a simple, fast method that adds gorgeous flavor to fillets, which emerge moist and succulent. It is also flexible and forgiving, with a cooking liquid that can accommodate a host of seasonings. Here those seasonings are sugar (to cut the saltiness of the soy sauce), scallions and an optional fresh or dried chile pepper (either minced or put in whole), but you could experiment with ginger, garlic, lime juice or other flavors. Combine all the ingredients, except the bass, in a skillet. Bring to a boil, add the fish flesh-side-down, and adjust the heat so that the mixture does not bubble too aggressively. The fish cooks in 8 to 10 minutes, until its flesh is mahogany-colored and doesn't resist when you slice in with a thin-bladed knife. Serve on top of rice, garnished with the cooking liquid and the scallions, which are now limp and tender. Other fish, like cod, halibut, monkfish and salmon, also work, but keep an eye on it as it poaches - you will likely need to adjust the cooking time slightly.

  • Add the fish, and adjust the heat so the mixture bubbles but not furiously. Cook 8 to 10 minutes, turning once or twice, until the fish is coated with a brown glaze and cooked through. Serve with white rice, spooning the sauce over all and garnishing with the scallions.

Steps:

  • Whisk flour and garlic powder together in a bowl. Toss bass in the flour mixture until coated.

1 pound striped bass fillets, skinned
2 tablespoons olive oil
4 teaspoons white vinegar

8 crispy corn taco shells, or 6-inch flour tortillas, warmed
1/2 cup chopped ripe avocado

  • 1-Combine 1 tablespoon lime juice, 2 teaspoons chili powder and garlic powder in a small bowl. 1 pound fresh wild striped bass fillet (the farm-raised, fresh-water striped bass will not do)
1 cup dry white wine
1/4 to 1/3 cup extra virgin olive oil
1/3 cup lemon juice or to taste
Salt and pepper to taste
1/2 cup cilantro leaves, chopped medium-fine
48 or so small black and green olives

Steps:

  • Trim the bass of the dark portion and any stray bones. Skin and cut into 1-inch cubes. In a 2-quart saucepan, heat the wine to boiling over high heat, add the bass and reduce heat to medium. Poach the bass until it is white and firm but still juicy, 3 to 4 minutes, turning pieces to cook evenly and watching carefully so the fish does not overcook. Timing is important.
  • Drain the bass in a colander and place in a bowl. Break the fish apart into lump-crab-meat size pieces with a fork. Add 1/4 cup oil and toss to coat, adding more oil if necessary. Add the lemon juice and toss; season with salt and pepper. Fold in the cilantro. Divide among 4 plates and garnish each with olives. Serve while still warm.
