SPICY SAUSAGE PENNE ALL'ARRABBIATA



Spicy Sausage Penne all'Arrabbiata image

This classic flavorful dish is slightly elevated with a nice smoky taste to it! Quick to prepare, you can enjoy this pasta dish in less than 45 minutes.

1 can(s) (28 oz.) whole peeled tomaotes, such as san marzano
1 lb dry penne pasta, cooked and drained
3 Tbsp olive oil
3 large cloves garlic, pressed
1/2 tsp red pepper flakes, or more to taste
1 c red onions, finely diced
1 c garlic sausage, cut into small pieces
1/2 tsp italian seasoning
1/4 tsp ground himalayan sea salt
1/2 Tbsp brown sugar such as demerara, or more to taste
freshly ground black pepper, to taste (i always use mixed peppercorns)
6 fresh basil leaves, chiffonade, plus more for garnish
grated grana padano cheese, for garnish

Steps:

  • 1. In a large pot, bring salty water to a boil; add pasta and cook according to the package instruction.
  • 2. In a large bowl, add whole tomatoes and crush with bare hands; set aside. In a large saucepan over medium, heat oil. When it starts to shimmer, add garlic and red pepper flakes; cook until fragrant, about 5 minutes.
  • 3. Add red onion and cook until softened, about 3 minutes. Add sausage and cook for 3 minutes. Add crushed tomatoes, Italian seasoning, salt, black pepper and sugar. Increase heat to medium-high and bring to a simmer. Cook for 8 minutes.
  • 4. Remove from heat and add chopped basil; stir to combine. Drain pasta and add it to the sauce. Stir and serve; garnish with cheese and more basil.

Sometimes we're gentle with our bowlfuls of pasta, but this time we're laying on the heat. Spicy sausage and a smattering of red pepper flakes inch this meal up the non-pepper Scoville scale (which doesn't exist). Those elements go amazingly well with fork-twirling pasta, hearty tomatoes, and sweet peas. The heat is on!

8 oz. Italian Pork Sausage Links
Info 4 fl. oz. Cream Sauce Base
Info 8 oz. Cooked Spaghetti
5 oz. Crushed Tomatoes
3 oz. Peas
Info 1 oz. Shredded Parmesan Cheese
½ fl. oz. Garlic Oil
¼ tsp. Red Pepper Flakes
1 tsp. Italian Seasoning Blend

Steps:

  • Before You Cook If using any fresh produce, thoroughly rinse and pat dry Ingredient(s) used more than once: red pepper flakes Cooking Guidelines To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures: Steak and Pork 145° F (rest cooked meat, 3 minutes) | Seafood 145° F | Chicken 165° F | Ground Beef 160° F | Ground Turkey 165° F | Ground Pork 160° F Customize It Instructions If using chicken breasts, pat dry and, on a separate cutting board, cut into 1" dice. Follow same instructions as sausage in Step 1, stirring occasionally until chicken reaches minimum internal temperature, 5-7 minutes. If using Impossible burger, follow same instructions as sausage in Step 1, breaking up burger until heated through, 4-6 minutes. If using flank steak, separate into a single layer and pat dry. Follow same instructions as sausage in Step 1, stirring occasionally until no pink remains and steak reaches minimum internal temperature, 4-6 minutes. Rest, 3 minutes. 1 Cook the Italian Sausage Remove Italian sausage from casing, if necessary.Heat a large non-stick pan over medium-high heat. Add 1 tsp. olive oil and Italian sausage to hot pan.Break into smaller pieces until no pink remains and sausage reaches a minimum internal temperature of 160 degrees, 4-6 minutes. 2 Make the Sauce Stir seasoning blend and a pinch of red pepper flakes (to taste; reserve remaining for garnish) into hot pan until combined.Add tomatoes, garlic oil, cream base, and 1/4 cup water. Stir constantly until thoroughly combined, 2-3 minutes. 3 Add the Pasta Add pasta and peas to hot pan. Bring to a simmer.Once simmering, stir occasionally until pasta is heated through, 3-5 minutes.Remove from burner. If too thick, add additional water, 1 Tbsp. at a time, until desired consistency is reached. 4 Finish the Dish Plate dish as pictured on front of card, topping pasta with Parmesan and remaining red pepper flakes (to taste).
