- In a large skillet or wok, stir-fry carrot and celery in oil for 5 minutes or until crisp-tender. Add rice; stir-fry for 3 minutes or until heated through., Make a well in the center of the rice mixture; add eggs. Stir-fry for 2-3 minutes or until eggs are completely set. Add the remaining ingredients; stir-fry until heated through.

Steps:
- Heat oil or bacon drippings in an 8 inch skillet.
- Add rice.
- Stir-fry until rice is hot and mixed with oil and drippings.
- Add soy sauce, mix well. If rice is dry, add 1 to 2 tablespoons water; cover and cook gently until water is absorbed.
- Stir in green onion.
- Push rice to side of skillet.
- Beat egg separately or break into skillet and quickly scramble with a fork. As egg sets, stir gently to let uncooked egg glow undereath.
- Stir cooked egg into rice, breking egg into small pieces.
- Stir in minced cooked meat.
- Heat through.

Steps:
- 1 tbsp oil in a skillet and stir fry onion until it is golden but not burnt. Put onions to the side of the skillet.
- Add eggs to skillet and fry until fluffy, remove eggs from skillet.
- Add the extra oil to skillet then add veggies and rice, tossing to get everything mixed.
- Add egg back to skillet then sprinkle the rice with soy sauce and enjoy.
- Note you may use less oil, my family loves the taste of it so I use more than most.

- Heat a wok or large skillet over high heat; add 1 teaspoon canola oil. Cook and stir eggs in the hot oil until scrambled and set, 3 to 4 minutes. Transfer eggs to a plate, clean the wok, and return to high heat.
- Mix 1 tablespoon canola oil, carrots, and salt in the hot wok; cook and stir for 2 minutes. Add garlic to carrots; cook and stir until garlic is fragrant and browned, about 2 minutes. Stir peas and scallions into carrot mixture; cook and stir until peas are warmed, 1 to 2 minutes. Lower heat to medium.
- Stir rice into carrot mixture; add scrambled eggs, soy sauce, salt, and pepper. Cook and stir rice mixture until heated through, 2 to 3 minutes.
