1 large red bell pepper, sliced

Steps:

  • Whisk peanut butter, 1/4 cup water, brown sugar, 1 tablespoon soy sauce and vinegar in a medium bowl until smooth. Set aside.
  • Heat oil in a wok or large skillet over medium heat. Add broccoli and cook, stirring frequently, until beginning to soften and brown in spots, about 6 minutes.
  • Add the remaining 1/4 cup water and 1 tablespoon soy sauce to the pan along with bell pepper and garlic. Cook, stirring frequently, until the pepper has softened and the liquid has evaporated, 2 to 4 minutes. Remove from the heat; stir in the reserved peanut sauce and season with crushed red pepper. This recipe can be made in a large nonstick skillet, but consider purchasing a wok: Carbon steel and cast-iron take on high heat well, and the concave shape makes stir-frying foods easy and fast.

1 large bunch broccoli (about1 1/2 pounds)
2 tablespoons soy sauce
1 tablespoon cornstarch
1 teaspoon sugar
2 tablespoons plus 1 teaspoon vegetable or peanut oil
1 scallion, chopped
2 to 3 cloves garlic, chopped (about 2 teaspoons)
1-inch piece ginger, peeled and chopped (about 2 teaspoons)
Pinch to 1/4 teaspoon crushed red pepper flakes
1/4 teaspoon toasted sesame oil
Cooked white or brown rice, for serving

Steps:

  • Trim the florets off the broccoli, and cut into 1- to 1 1/2-inch pieces. Peel the broccoli stalks with a vegetable peeler to remove the tough outer skin, and slice 1/4 inch thick on the diagonal. Set aside.
  • Whisk together 1/2 cup water, soy sauce, cornstarch and sugar in a small bowl. Set aside.
  • Heat a large wok over high heat. Add 2 tablespoons of the vegetable oil, and swirl to coat the wok. Once the oil begins to smoke, add the broccoli florets and stems. Cook, stirring constantly, until browned around the edges, about 2 minutes. Add 2 tablespoons of water to steam the broccoli, and cook, stirring constantly, until tender, about 2 minutes more. Push the broccoli to the edges of the pan, forming an empty well in the center. Add the remaining 1 teaspoon vegetable oil, then the scallions, garlic, ginger and pepper flakes, and stir until aromatic, 30 to 45 seconds. Add the soy mixture, and stir until the sauce has thickened and the broccoli is coated, about 30 seconds. Remove from the heat, add the sesame oil and stir to coat. Serve with rice.

2 tablespoons naturally brewed soy sauce
2 tablespoons freshly chopped basil leaves
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1 teaspoon finely grated lemon zest
1 pound firm tofu, rinsed, patted dry, and sliced 1/2 inch thick
2 pounds broccoli rabe, tough stalks trimmed
4 tablespoons extra-virgin olive oil
8 plump garlic cloves
1/2 teaspoon hot red pepper flakes
Coarse sea salt
Freshly milled black pepper
Lemon wedges, for garnish

Steps:

  • Preheat oven to 375 degrees F.
  • In a bowl, combine the lemon juice, soy sauce, basil, oil, vinegar, and lemon zest. Lay the tofu slices in a baking dish that can hold them in a single snug layer. Pour the marinade over the tofu. Bake for 30 minutes, or until the tofu is nearly dry and well browned.
  • To make the broccoli rabe, chop the tender stalks and greens into 2-inch pieces and soak them in a large basin of cold water.
  • In a heavy, wide saute pan over medium heat, warm the oil. Add the garlic and saute gently for 3 to 5 minutes, until golden. Add the red pepper flakes and tofu and saute for 1 minute. Scoop the greens from the water and add them to the pan. Raise the heat and turn the greens over in the oil with a pair of tongs. When the greens begin to simmer, reduce the heat to low and cover. Cook for 10 to 15 minutes, until the greens are tender.
  • Season with salt and pepper and serve drizzled with some of the liquor and garnished with the lemon wedges and garlic cloves.

1 bunch of broccoli (cut into florets)
3 cloves garlic (minced)
2 tablespoons rice wine vinegar
2 tablespoons water
1½ Tablespoons low sodium soy sauce or tamari
1 teaspoon sugar
1½ teaspoons avocado oil
1½ teaspoons sesame oil
1 teaspoon crushed red pepper flakes
¼ cup pine nuts (toasted)

Steps:

  • Cut the broccoli into florets and set aside.
  • Mix the rice wine vinegar and the water together in a small bowl and set aside.
  • Mix the soy sauce and sugar and stir until the sugar is dissolved. Set aside.
  • Heat a large nonstick skillet over medium-high heat and add the oils. Add the garlic and crushed red pepper flakes and and stir-fry until fragrant about 15 seconds.
  • Turn the heat to high and add the broccoli. Stir-fry. Add the rice wine vinegar and water mixture and combine. Cover and cook for about 2 minutes.
  • Add the soy sauce mixture and toss. Add the pine nuts and stir-fry for a few seconds to combine the ingredients.

  • Heat a 12-inch skillet (or wok) over high heat until very hot. Add 1 teaspoon canola oil coating pan. Add about half the beef. Cook, without stirring, 1 minute.
