The three ingredients that go into this appetizer will fill your kitchen with an irresistible aroma that draws friends and family from all corners of the house. Sweet dates and crunchy smoked almonds get wrapped in salty smoked bacon. Maybe you should make two recipes.

16 fresh or dried pitted dates, such as Medjool
16 smoked almonds
8 thick slices applewood-smoked bacon, halved crosswise
Reynolds Wrap® Aluminum Foil

Steps:

  • Preheat oven to 400 degrees F. Cut a slit in each date. Place almonds inside slits. Press together the dates to close slits. Wrap each date with a piece of bacon.
  • Line a shallow baking pan with Reynolds Wrap® Aluminum Foil. Add a roasting rack; place the dates on rack. Roast for 15 to 20 minutes or until bacon is crisp. Serve immediately with toothpicks. Dates will be hot inside.

I developed this recipe myself. It's a quirky one! There are a lot of contrasting textures and flavors, but if you like savory things you will like these.

1 (8 ounce) can Pillsbury Refrigerated Crescent Dinner Rolls
16 large dates, pitted (preferably Medjoul variety)
2 teaspoons Tabasco sauce or 2 teaspoons hot sauce
32 -48 roasted salted almonds
3 ounces goat cheese (or neufchatel cheese AKA light cream cheese)
1 beaten egg

Steps:

  • Preheat oven to 375°F.
  • Open dates so they split down the middle the long way but not cut all the way in half. Take one date and place four drops of Tabasco sauce (about 1/8 tsp) on the inside from end to end. Place two to three almonds (depending on the size) in the dates. The almonds should fit snugly inside the dates. Top with 1 heaping teaspoon of goat cheese. Stuff the rest of the dates the same way with hot sauce, almonds and cheese. Set aside.
  • Open can of crescent roll and unroll the dough. Cut each triangle in half so there are a total of 16 triangles. Place one stuffed date in the center of each triangle. Fold the short end of the triangle over the date. Fold the longer ends over all. Pinch to seal. Place on large ungreased cookie sheet. Repeat with the remaining dates. Brush all bundles with a small amount of beaten egg.
  • Bake the wrapped stuffed dates for 11 to 14 minutes until golden brown. Let cool. Serve warm or at room temperature.
  • NOTE.
  • This can be done with 32 smaller dates, the kind that are often found in the supermarket in boxes. Stuff as above, using about 1/2 tsp of cheese in each date, and wrap two stuffed dates in each crescent triangle.

  • Stuff 18 date halves with about ½ teaspoon of cream cheese and ½ teaspoon of apricot jam. Add 1 jalapeño slice to the top of each stuffed date. Tightly wrap each stuffed date with ½ slice of bacon and secure with a toothpick.
  • Place stuffed bacon wrapped dates on unbleached parchment paper lined stoneware baking sheet or baking sheet that does not contain harmful PFOA or PTFE like this safer baking sheet. Place baking sheet in oven, set timer for 15 minutes. At 15 minutes, check for doneness of the bacon - if you're using thinner bacon, these will crisp up quicker in about 20 minutes. If you're using thicker bacon like I do, these will take about 30-35 minutes to bake. Set timer for another 10-15 minutes. Check for doneness, bacon is done when it “looks” crispy and is golden to dark golden brown (not black). Watch the bacon closely because all ovens cook differently and you do not want the bacon to burn. PLEASE USE CAUTION when checking the bacon - the bacon grease is very hot so make sure to use an oven mitt to protect your hand/arm.
  • Serve warm or at room temperature. They are super HOT for several minutes after they come out of the oven, so be careful.

  • Slice each date horizontally on one side. Use your fingers to stuff each date liberally with goat cheese. Wrap tightly with one piece of bacon. Set the bacon wrapped dates seam side down on the wire cooling rack.
  • Bake at 350 degrees for 20-25 minutes until the bacon is crisp. Remove the baking sheet from the oven, and brush each bacon wrapped date generously with the red pepper jelly. Place the baking sheet back in the oven for 3 minutes.
  • Remove from the oven and allow to cool for 10 minutes before serving. Store leftovers in the fridge.
