SPICY TANGY PRAWNS KERALA STYLE

- Take a pan add whole red chilly, coriander seeds, peppercorn, fenugreek seeds, and dry roast the ingredients in a slow flame, add garlic, ginger, and put it in the blender make a fine paste. Heat oil in a pan add mustard seeds, chopped onions, salt, curry leaves, cooks these onions till brown colour. In this add made masala, turmeric powder, cook it for few minutes, then add tomatoes, put the lid and cook for 4 minutes. Add green chilly, kokum, then add prawns and add coconut milk mix it well and cook for 2 minutes, switch off the flame. Serve this hot with rice.

- In a small bowl, combine the first six ingredients; set aside. In a large nonstick skillet or wok, stir-fry shrimp and ginger in oil until shrimp turn pink. Add garlic; cook 1 minute longer., Add the ketchup mixture; cook and stir for 2-3 minutes or until heated through. Sprinkle with onions and sesame seeds. Serve with rice if desired.

- Rinse the prawns in cold water and pat dry. Toss them with the turmeric, chilli powder, lemon juice and grated ginger and set aside.
- Heat the oil in a pan and add the curry leaves, chilli, sliced ginger and onion. Cook until translucent, about 10 mins, then add the black pepper.
- Toss the prawns in with any marinade, and stir-fry until cooked, about 2 mins. Season if required and add a squeeze of lemon juice. Serve sprinkled with the coconut and coriander leaves.
